BUTTERY SWEET BREAD FOR BREAD MACHINE
This recipe is originally a fleishman's bread recipe. It was so good I thought I'd share it with others. It is very easy to make and keeps very well. It's a must try!

SWEET BREAD RECIPE
This sweet bread recipe makes a beautiful, soft, lightly sweetened and buttery bread loaf that's delicious as a toast with your morning coffee or tea.

- Check the yeast: (see footnotes if you'd like to make this dough in the breadmaker)Dissolve 2 tsp of yeast with 1/2 cup milk and 1 tsp of sugar from the overall amount and leave in a warm location until frothy, about 10-15 minutes. If the mixture does not froth up and rise, discard the yeast and start over when you have a fresh batch of dried yeast.
- Combine all ingredients:Into a bowl of a mixer sift 3 cups of flour. Then add 1/3 cup sugar, remaining 1/2 cup warm milk, 4 egg yolks, 2 tbsp sour cream, 1 tbsp vanilla extract, and the risen yeast mixture. By hand, using a spoon or the hook of the mixer quickly mix the ingredients until a rough, shaggy mixture forms.
- Knead: Then, attach the hook back to the mixer and knead on low speed (speed 2 to 3 on a Kitchenaid mixer) for about 20 minutes or until the dough stops sticking to the side of the bowl, feels elastic, and is tacky to touch. If the dough is properly kneaded a small piece can be stretched into a see through "window" without tearing.Pro tip: Do not overknead past a point where the dough is elastic and stretchy. If the gluten is overworked it will tear, leaving you with a chunky dough that doesn't have the strength to hold a good rise of the dough.
- Add 3 oz of butter and 1/4 tsp of the salt and knead it into the bread until no streaks of butter are seen, (~5-7 minutes). Sometimes tearing the dough into chunks helps to incorporate the butter easier/faster.
- 1st Rise: Oil the sides of the bowl and the dough. Cover the bowl with a kitchen towel and leave in a warm place to rise until doubled in size, about 1.5 hours. Boil a cup of water in a microwave for several minutes. Remove the cup with water. Place the bowl with the dough in the warm microwave for the dough to rise. This gives the dough a nice warm place without being too hot.
- Shape: This recipe makes one large braid. To make two smaller sweet yeast bread loaves divide the dough into two, then shape two separate braids instead of one like the recipe instructs.Once risen, divide the dough into 3 equal pieces. Weighing the dough is the best way to divide the dough evenly. Next, roll each piece into a tight ball, then into a 20-inch log. If the dough is hard to stretch or it springs back too much, cover with a tea towel leave for 10-15 minutes. This will relax the gluten and make it easy to roll.Pinch the ends of the 3 strands together at one end, then braid them into a braid pinching the ends together as well. Now, tuck both ends of the braid underneath itself slightly to give it a better shape.
- 2nd Rise: Transfer the sweet yeast braids to a 12"x18" baking sheet pan. Space them evenly. Cover with a clean tea towel. Transfer to a warm place once again until the braid doubles in size.
- Prep before baking: Once doubled in size preheat the oven to 350F with the baking rack centered. Brush the braid with a whisked egg yolk and water and sprinkle with sesame seeds or poppy seeds if you wish. Applying the egg yolk mixture several times will give you a darker glaze once baked.
- Bake the braid for about 30-35 minutes or until the top is golden brown. You can also check for doneness with a thermometer. The center of the thickest part should register 195°F. If the top starts to brown before the inside registers 195F, loosely tent the sweet yeast bread with foil.Once baked, remove from the oven to a cooling rack and cool completely before cutting or eating.

- Pour in ALL your ingredients by order into the bread machine.
- Close the lid, choose your settings. I do a 2 lb loaf, basic loaf, light or medium crust. And then click start.
- After the bread is all done, carefully remove the pan from the machine and leave on the counter for 10 minutes. To get the bread out, carefully shake it and place in a storage container or bag.
- Serve warm or cold, do as you wish. Just store it properly for freshness and so it doesn't go stale quickly. It last about 3-4 days stored in a cloth bag in a dark area of your kitchen or pantry.
SIMPLE, MULTI-PURPOSE, BREAD MACHINE SWEET BREAD
-This is my variation of a recipe that came with my bread machine. A family favorite. A simple, lightly sweetened, fluffy, white bread dough recipe for the bread machine. Can be used for clover leaf rolls, cinnamon rolls, sandwich bread, or a dinner loaf. Recipe makes 2 - 1 lb loaves. Could probably be easily converted to hand method, or for use with a stand mixer.

- * ALL ingredients must be at or slightly above room temperature*.
- Break the egg into a glass measuring cup, then add enough room temperature water to total 1 1/2 cups.
- Put egg mixture and other ingredients into the bread machine in the order listed, forming a shallow well in the center for the yeast. (egg/water mixture, margarine, sugar, salt, flour, yeast).
- Program your machine to Dough Cycle.
- *I DO NOT recommend baking this in your machine - the large amount of yeast will cause your pan to overflow and make a mess of your machine.
- Check it periodically during the first kneading/mixing; scrape the sides of your pan with a rubber spatula if needed. It should form a neat ball of dough in the pan. If the dough seems too dry, add a few table spoons water. If it seems too wet/sticky, add a few table spoons flour.
- Lift the lid on the machine about 20-30 minutes before the cycle completes so the rising dough will not stick to it.
- When the dough cycle is complete:.
- Clover Leaf Rolls (makes 16): Divide dough into 48 small round balls. In oiled muffin pans, place 3 balls in each cup in a clover pattern. Brush the tops with warm milk or butter. Cover and allow 30 minutes to rise. Bake at 350 for 20-25 minutes. Allow rolls to cool 20 min, turn out into bread basket and serve warm.
- Cinnamon Rolls: Roll dough into rough rectangle 1/4 inch thick. Sprinkle with Cinnamon, Sugar, Walnuts, Raisins, or Pumpkin Pie Filling (or whatever else your heart desires). Roll up jelly-roll style. Cut into 1/2 inch slices ( dough can be refrigerated to make it easier to slice). Arrange on oiled cookie sheets. Brush with warm milk or melted butter. Allow 30 minutes to rise (will take longer if dough was refrigerated). Bake at 350 for 20-25 minute Allow rolls to cool 20 min, remove from pans with a spatula onto a clean serving dish and serve warm.
- Sandwich Bread: Divide dough into two oiled 1 lb loaf pans. Brush with warm milk or melted butter. Allow 30 minutes to rise. Bake at 350 for 20-25 minutes. Allow loaves to cool 20 minutes, turn out onto cooling racks, and then cool completely before slicing.
- Dinner Loaf: Form a rough loaf on an oiled cookie sheet. Brush with warm milk or melted butter. Allow 30 minutes to rise. Bake at 350 for 20-25 minutes. Allow loaf to cool 30 minutes, remove to a cutting board, then slice and enjoy at the dinner table. Serve with your favorite spread.
- I have also made hot dog and hamburger buns from this recipe - but you get the idea. ENJOY!

GERMAN POTATO BREAD (KARTOFFELBROT)
Steps:
- Gather the ingredients.
- Peel potatoes and cut into 6 pieces each. Cook in unsalted water until tender. Drain, reserving the water. Place the potatoes back over low heat for several minutes, shaking the pan to steam dry, or ausdampfen . Cool and mash or rice the potatoes.
- Dissolve the yeast in 1/4 cup (60 milliliters) of lukewarm potato water and proof for 10 minutes in a warm spot, or until bubbles form.
- In the bowl of a stand mixer, combine mashed or riced potatoes , oil, and proofed yeast until smooth. Add the flour and salt and mix with the paddle attachment for 3 minutes on low. Switch to the dough hook and knead for 11 minutes. It will look like it is not going to become bread dough at first; just be patient.
- Knead for a minute on a floured work surface, until dough is smooth and just slightly tacky. Place in an oiled bowl, turning once to coat. Cover the bowl and let the dough rise in a warm place for 30 minutes.
- Heat oven to 450 F with a baking stone on the middle rack for 30 minutes to 1 hour before baking. Place an old baking pan on the bottom rack, ready for water to create steam.
- Shape dough into a boule, or round loaf, by flattening slightly, then pulling the edges together and pinching closed. Place the loaf, seam-side down, on a floured, cloth-lined bowl. Fold the edges of the cloth over the loaf and let rise for 20 to 30 more minutes.
- Unmold the bread onto a peel or the back of a cookie sheet dusted with cornmeal , seam-side up (seam-side down produces a smooth-topped loaf). Shove the loaf onto the baking stone in the oven and close the door, quickly.
- Bake for a total of 45 to 50 minutes, or until internal temperature is 190 F. Use steam in the first 5 minutes. Cool bread for 20 minutes or more before slicing.
