  • Put the mint, parsley and capers in the small bowl of a food processor and blitz until finely chopped.
  • Add the oil, sugar, vinegar and lemon zest and blitz again until smooth. Season to taste and serve.

1 large bunch fresh mint (leaves)
1 1/2 tablespoons sugar
5 tablespoons boiling water
3 tablespoons white wine vinegar

Steps:

  • Gather the ingredients.
  • Pull the leaves from the stalk of the mint. Roughly chop the leaves.
  • Place the chopped mint leaves into a heatproof jug, sprinkle over the sugar, then pour over the boiling water. Stir gently, cover, and place to one side, and leave to cool.
  • Once cool, stir in the vinegar and taste the sauce. If it is too strong, just add a little more water. Too weak, add more mint. Cover again and leave to one side for at least an hour, longer if you have the time. The mint flavor will seep into the sugar-vinegar as it sits. Use the mint sauce or store in the fridge for up to two weeks.

2 - 3 leaves bunches of fresh mint, and stalks if they are tender
1 - 2 Tablespoons of White Wine Vinegar
4 - 6 Teaspoons of Brown or White Regular Sugar. ., Brown is better if you have it handy

Steps:

  • Wash the mint well and discard any stalks which are thick and tough. Then chop finely.
  • Place the mint in a bowl and add 1 Tablespoon of the vinegar. Give it a stir and it should be a thick consistency, like in the photo. If you need a little more vinegar, add a little at a time until you are happy with the thickness. You should be able to have a blob of mint sauce on a teaspoon without it being watery.
  • Next, add a few teaspoons of sugar and stir well. Taste the mixture, and add a little more sugar until it is as sweet or sharp to your liking. Some people like mint sauce very sweet, others like it sharp, so you must judge for yourself and taste as you add.
  • Once you are happy with the balance of taste, place in the fridge (minimum 30 minutes) until you are ready to use. It will keep in an airtight container or covered with plastic wrap for a few days.

1 large bunch of fresh mint ((about 30g/1oz or a packed cup or leaves) )
1 cup (240ml) boiling water
2 tsp sugar ((caster/superfine is best))
2 tbsp malt vinegar
1 pinch of salt

Steps:

  • Finely chop the mint leaves, discarding the stalks.
  • Place in a bowl and cover with the boiling water. Leave to steep for a few minutes, then drain over a sieve.
  • Give the leaves a rinse with cold water whilst still in the sieve (to stop the cooking process) and place in a small serving bowl with the sugar, vinegar and salt.
  • Stir together and leave for 20-30 minutes - to allow the flavour to develop. Then serve.

I grew up with this in the UK, and this is how everyone made it. I would be surprised if any pub had additional ingredients. Mint has a sweetness of its own, but a little sugar would be okay, if the diner had a desire for extra sweetness - no more that 1/2 teaspoon. Cider or malt vinegar can be used for the vinegar if you prefer. This sauce is traditionally served with lamb.
