SIMPLE SALSA
There are tons of salsas out there, but I haven't found one exactly like mine. (I don't like the taste of lime or lemon juice. It's similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can't beat the taste. :) Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!

Steps:
- Wash and dice tomatoes, peel and cut onion, peel and mince garlic or do what I do and use the already minced garlic (1 tsp.)!
- In a small bowl combine garlic, onion and tomatoes with cilantro, salt, and pepper (or garlic pepper salt). Stir with a spoon and mash a little, this will make it juicy, and as it sits it'll get juicer.
- Enjoy with chips or add to entrees for flavor/side dip!

Steps:
- Heat a small ungreased cast-iron skillet over high heat. With a small sharp knife, pierce jalapenos; add to hot skillet. Cook for 15-20 minutes or until peppers are blistered and blackened, turning occasionally., Immediately place jalapenos in a small bowl; cover and let stand for 20 minutes. Peel off and discard charred skins. Remove stems and seeds., Place onion and garlic in a food processor; cover and pulse 4 times. Add the tomatoes, cilantro, salt and jalapenos. Cover and process until salsa reaches desired consistency. Chill until serving. Serve with chips.

EASY BLENDER SALSA
My family begs me to make this during football season, with or without company coming over. It's so easy to make, that I don't mind. Use caution with the jalapeno pepper, however. I recommend using kitchen or disposable gloves. These amounts are the flavor my family likes, but you can use less or more jalapeno pepper depending on your tastes.

- Pour 1 can of tomatoes into a blender, and add the jalapeno pepper, onion, cilantro leaves, lemon juice, and salt. Blend until fairly smooth. Pour in the second can of tomatoes and blend briefly. Adjust seasonings to taste by adding more lemon juice and salt. Let the salsa rest for 1/2 hour before serving to allow the flavors to blend.

- Chop up the tomatoes to your preferred size.
- Dice the onion (if it is a large onion you may only want to use half).
- Chop up the cilantro and the pepper.
- Put it all into a bowl and squeeze all of the juice from the lime on top.
- Add a bit of salt.
- stir it up.

- Place roma (plum) tomatoes and serrano peppers in a medium saucepan over medium high heat with enough water to cover. Bring to a boil. Boil 15 minutes. Remove from heat and drain.
- Place roma tomatoes, serrano peppers, onion, cilantro and garlic in a blender or food processor. Puree about 30 seconds, or to desired consistency. Transfer to a medium serving bowl, and salt to taste.

BLENDER MEXICAN SALSA RECIPE
Steps:
- Place the tomatoes, cilantro, onion, jalapeño, garlic, chipotle, lime juice, cumin, sugar, and salt into a blender or food processor. Blend until smooth or to your desired chunkiness. Taste and adjust seasoning if needed.
- Place into an airtight container and place in the fridge for at least 30 minutes to let the flavors combine.

- Add all of the ingredients into a food processor and process until you reach your desired consistency. My favorite restaurant salsas tend to be less chunky so I pulse a few times to break things up, then process for 10-15 seconds until there aren't any large chunks but stopping before turning everything into a soup.
- Taste the salsa and adjust as necessary. You may prefer more lime juice or a bit more salt (different brands of tomatoes have different salt content so depending on which brand you are using, you might even need to add another 1/2 teaspoon of salt, which might seem like a lot - that's why it's important to taste and adjust and I always start on the lower end and work my way up).
- If you want more heat, add in some of the seeds from your jalapenos (I always start with one jalapeno and then add in the second jalapeno, then some of the seeds if needed to get the heat where I like it since most of the spiciness in the jalapenos is in the seeds themselves).
- Chill in the fridge for at least 1 hour before serving so the flavors have a chance to really combine. Serve with fresh tortilla chips! Can be stored in the fridge for up to 1 week.
