MOM'S LEMON CUSTARD PIE
My mother often made this lemon pie back when we were growing up. You might say it's stood the test of time because today it's still my 75-year-old brother's favorite! The beaten egg whites give it a delicate texture and make this custard pie quite unique! It's a great way to finish off any meal. -Jeannie Fritson, Kearney, Nebraska

Steps:
- Preheat the oven to 325°F. Line 8×8-inch baking dish with parchment paper leaving overhang the sides, lightly grease with cooking spray, then set aside.
- Whip the egg whites until STIFF peaks form, set aside.
- Beat the egg yolks and sugar until pale yellow.
- Add melted butter and vanilla and mix until evenly combined.
- Mix in flour until evenly incorporated.
- Add lemon juice and lemon zest and mix until combined.
- Slowly beat in the milk until well combined.
- Add egg whites and whisk by hand. You don't need to fold it in completely. Leave small egg whites lumps. When you pour it into the pan, lumps will float on the surface and create the top layer during the baking. NOTES: The batter is very, very thin!!!
- Pour the batter into the pan and bake for 40-60 minutes (until the cake is barely jiggly in the center, but the top is firm to touch). Baking time might vary depending on your oven or pan you use but start checking after 35 minutes. If the top browns quickly, you can cover the cake with aluminum foil. Do not overbake it, or the cake will turn out rubbery not custardy in the center.
- Cool the cake completely before dusting it with powdered sugar.
- Store leftovers in the fridge

- Whisk together 1/4 cup milk, egg yolks and cornstarch in a large bowl. Heat remaining milk in a heavy saucepan until steaming. Gradually whisk milk into the egg mixture. Return to the saucepan; cook over medium heat, whisking constantly, until the custard boils and thickens, 1 to 2 minutes. Remove from the heat, stir in vanilla and about 3 drops yellow food coloring, if using. Transfer to a clean bowl and place a piece of wax paper or plastic wrap directly on the surface of the custard to prevent a skin from forming. Set aside to cool slightly.
- Meanwhile, bring about 1 inch of water to a simmer in a saucepan. Combine egg whites, sugar, cream of tartar and water in a heatproof mixing bowl large enough to fit over the saucepan. Set the bowl over the barely simmering water and beat with an electric mixer at low speed, moving the beaters around the bowl constantly, until an instant-read thermometer registers 140 degrees F. (This will take 3 to 5 minutes.) Increase the mixer speed to high and continue beating over the heat for a full 3 1/2 minutes. Remove the bowl from the heat and beat the meringue until cool, about 4 minutes.
- Whisk one-fourth of the meringue into the custard. Add the remaining whites and use a whisk to incorporate them with a folding motion.
