EASY HERB ROASTED POTATOES
Steps:
- Preheat the oven to 425 degrees F. Scrub the potatoes clean, then dry thoroughly. Cut into halves or quarters, depending on size. Mince the rosemary and thyme, and set aside.
- Combine the olive oil and garlic in a large mixing bowl. Toss with the potatoes until well coated, then place in an even layer on a nonstick or parchment paper lined sheet pan. Season generously with salt and pepper.
- Roast for 20-25 minutes, turning a few times (cooking tongs work best for this). You'll know the potatoes are ready when they turn golden brown with wrinkly skins, and can be pierced easily with a fork.
- Remove the potatoes from the oven and while still warm, toss with the fresh herbs. Season with more salt and pepper, if needed. Serve warm.

- Preheat oven to 180⁰C/350⁰F/Fan 160⁰C/Gas Mark 4.
- Put the potatoes into a large saucepan, cover with cold salted water and bring to the boil. Simmer for 5 minutes.
- Drain the potatoes and return to the pan.
- Put the lid on the pan and shake very well to roughen the surface of the potatoes.
- Pour the oil into the pan and shake again to coat them.
- Put the thyme, rosemary, oregano, pepper flakes, chilli powder and salt and pepper into a small bowl. Mix together well.
- Add the herb mix to the potatoes and shake again to thoroughly coat the potatoes.
- Tip the potatoes into a medium sized roasting tin. Add a little extra olive oil if necessary.
- Roast for about 1 hour or until the potatoes are golden brown and crispy. Serve immediately with fresh rosemary scattered over.

- Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
- Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
- Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
- Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
- Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
