Steps:
- Rinse and dry the green beans completely. Break or cut off the ends of each bean.
- Heat 1 tbsp of olive oil in a large skillet over medium high heat. Once heated add the green beans and cook for 6-7 minutes for thin green beans, or 8-9 minutes for thick green beans, stirring regularly until they begin to soften and brown slightly on the outside.
- Use a garlic press to press in the garlic. Then stir in the salt and pepper to taste and cook and additional 2 minutes. Remove from the heat.
- Garnish as desired and serve.

- Finely grate the lemon zest into a large bowl.
- Cut the lemon in half and squeeze in the juice from one half.
- Add 1 tablespoon of extra virgin olive oil and season with sea salt and freshly ground black pepper. Mix well.
- Put a pan of salted water on to boil. Meanwhile, trim the the beans.
- Once the water is boiling, steam or boil the beans until tender. Drain well, then tip the cooked beans into the bowl with your dressing and toss everything together, making sure all the beans get coated.
- Have a taste and squeeze over the remaining lemon juice if you think it needs it, then serve.

- Prepare green beans by snapping them or cutting them to approx 1 inch in length and rinsing them.
- Over a pot of boiling water, steam beans for 15-20 minutes (until just tender with a little"bite" to them; Also, to steam I use a covered colander over a Dutch oven filled 1/4th full with water) Remove steamed beans and turn into a serving bowl.

- Steam or boil green beans until just underdone to your liking (I make mine crisp-tender).
- In a medium skillet, heat bacon fat over medium high heat.
- You only want the fat to coat the bottom of the pan, the beans should not be swimming in it.
- Add beans and saute, stirring to coat with bacon fat, about 2 minutes, until beans start to sizzle.
- Sprinkle with sugar and stir to coat, about 1 minute.
- Lower heat and add mustard and worcestershire sauce, stirring well, and saute for another 2 minutes or so.
- Serve hot.

To accomplish this step, you have three options: 1/ Add the green beans to a steamer pot/basket (I have a pot like this, or use a steamer basket). 2/Fill a pot with about 2 cups of water, bring the water to a boil, add the green beans, and then cover the pot with a lid. The green beans will not be submerged in the water, so the steam will do the work. 3/ Fill the bottom of a pot with water, and bring the water to a boil. Place a large colander over the water, then place the green beans inside, and cover the pot with a lid.
- Once the green beans are soft, melt the butter in a skillet over medium heat. Once melted, add the minced garlic and transfer the beans to the hot skillet. The garlic will become fragrant thanks to the heat and can easily burn, so work quickly. I use tongs to do this. I also gently shake off any excess water before adding the beans to the skillet. Sauté the green beans in the butter and garlic for about 2 minutes, then add the fresh herbs and salt and pepper to taste.
