Steps:
- Quarter, core, peel, and roughly chop the pears.
- Put the chopped pears, 1/2 cup of the pear nectar, and the sugar in a medium saucepan. Cook, stirring occasionally until the mixture comes to a boil.
- Reduce heat to maintain a steady simmer and cook, still stirring when you think of it until the pears are tender and the liquid has thickened a bit, about 10 minutes.
- Whirl the mixture in a blender until very smooth.
- Transfer the mixture to a mixing bowl and let it come to room temperature.
- Cover and put in the fridge until chilled, usually a few hours (you can speed up this process by putting the pears in a metal mixing bowl, nesting that bowl inside a large bowl filled with ice water, and stirring the mixture until it's chilled).
- Stir in the remaining 1 cup of pear nectar and the fresh lemon juice and freeze in an ice cream maker according to manufacturer's directions. If you don't have an ice-cream maker, transfer to a large metal pan or metal mixing bowl and put in the freezer. Stir the mixture every 30 minutes or so, paying special attention to scraping the frozen bits along the side, until it's all frozen. Once it's all frozen, whip it with electric beaters to lighten the texture, if you like, and then refreeze it before serving.

- Peel and core pears. Chop into small pieces and combine with two tablespoons of sugar and pumpkin pie spice. Cook pears in a saucepan over medium heat for six to seven minutes, or until pears are soft. Puree pears and set aside.
- In a separate mixing bowl, combine egg yolks and remaining cup of sugar and mix until smooth. Set aside.
- In a saucepan, heat whipping cream and milk until very warm, but make sure that mixture does not come to a boil. Once heated, add cream mixture to egg mixture, a tablespoon at a time and whisk. Do not add too much of the cream mixture at once or else the eggs will cook. Once the cream mixture and egg mixture have been incorporated, return to heat and cook over medium heat for approximately 8 minutes, whisking constantly. The mixture will thicken slightly. Remove from heat and place saucepan in an ice bath for approximately 10 minutes to cool.
- Combine pureed pears with cream mixture in a large bowl and place in freezer. Mix well after 45 minutes, and continue mixing every 30 minutes for two hours until mixture is smooth. Store in freezer in an airtight container.

- Place the chopped pears into a large nonstick saucepan on medium-high heat and cook the peas for30-45 minutes until they cook down into a thick jam-like sauce. Let the pears cool slightly, then add them to a blender and puree them into a smooth sauce.
- Place the half and half, heavy cream, cinnamon stick, and rosemary sprig into a saucepot and cook the cream mixture on medium-low for 5-6 minutes until small bubbles appear around the perimeter of the pot (this is called scalding milk). Cover the cream mixture with a lid and allow it to steep for a few minutes.
- Meanwhile, add the egg yolks and sugar into a bowl and beat well with a whish until it is a pale yellow color. Remove the cinnamon and rosemary from the cream and whisk 1 cup of the hot cream mixture into the egg mixture. Pour the tempered eggs and cream mixture back into the pot with the remaining cream and simmer on low for 5-7minutes, frequently stirring with a wooden spoon until the rosemary-infused custard thickens and coats the spoon.
- Stir the pear puree, vanilla extract, and almond extract into the custard base, cover the ice cream base with plastic wrap, pressing it directly onto the surface of the custard, and chill it in the refrigerator overnight. Churn the pear ice cream in an icebcream machine according to the manufacturer's directions, then transfer the pear ice cream to an airtight container and freeze for 4-6 hours until the icebcream is set.
