TERRIFIC TOFFEE BARS
These shortbread bars are really easy and have a great toffee taste!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Beat butter, brown sugar, vanilla extract, and egg yolk in a large bowl; stir in flour and salt. Press dough into prepared baking dish.
- Bake in preheated oven until crust is light brown, 25 to 30 minutes.
- Immediately sprinkle chocolate chips over hot crust. Let stand until soft, about 5 minutes, and spread evenly; sprinkle with nuts. Cool pan on wire rack for 30 minutes.

- Butter a 15x10x1-in. pan with 1 tablespoon butter; set aside. In a heavy 3-qt. saucepan, melt the remaining butter. Add sugar and corn syrup; cook and stir over medium heat until a candy thermometer reads 295° (soft-crack stage). Remove from the heat; stir in pecans and salt. , Quickly pour into prepared pan. Let stand for 5 minutes. Using a sharp knife, score into lines. Let stand at room temperature until cool., Separate into squares, using a sharp knife if necessary. In a microwave, melt candy coating, stirring often. Dip squares, one at a time, in coating. Place on waxed paper until set.

EASY ENGLISH BUTTER TOFFEE BARS
These easy to make butter toffee bars are delicious, made with easy ingredients, and are nice for those Christmas cookie/bar exchanges!

Steps:
- Preheat oven to 375°.
- Butter a 13x9 baking pan.
- Arrange saltines right side up in a single layer in pan.
- Melt butter and sugar over medium heat.
- Bring to boil, boil 3 minutes stirring occasionally.
- Remove from heat.
- Stir in vanilla.
- Pour over crackers, spread evenly with spatula.
- Bake for 5 minutes, if crackers move, rearrange with a fork.
- Cool for about 10 minutes.
- Sprinkle chocolate morsels over top.
- Let stand about 5 minutes the evenly spread over top.
- Cool completely, then cut in 2x1 inch bars.
- Place a pecan half over each piece.
- Store in refrigerator.

- In a bowl with a mixer, beat butter with sugar until smoothly blended.
- Beat in egg yolk.
- Add flour to butter mixture.
- Beat until well mixed.
- Evenly press dough into buttered and floured 10- by 15-inch pan.
- In a bowl with a fork, beat egg white to blend.
- Spread over dough with pastry brush.
- Sprinkle chopped nuts over dough, then press them in.
- Bake in a 275° F oven until golden brown, about 45 minutes.
- Cut while hot into 1 1/2-inch squares.
- Use a small spatula to lift from pan.
- Let cool.
- Serve or store airtight up to 4 days, or freeze to store longer.

SIMPLE FLEXIBLE BAR COOKIES (ENGLISH TOFFEE)
These are from my childhood. My mom made them and called them English Toffee. Because the chocolate chips and nuts are sprinkled on the top, you can make multiple kinds of cookies in a flash. She would split the pan in half and do 1/2 chocolate chip and 1/2 butterscotch chip. Then she would split it the other direction and do 1/2 with nuts and 1/2 without. How they are topped is only limited by your imagination. They really don't have any baking powder or soda in them.

Steps:
- In a medium mixing bowl, cream sugar and margarine.
- Add egg and vanilla and beat to combine.
- Add flour and mix well.
- Spread the mixture in a 9x13 baking pan with sides. You don't have to be too neat about the spreading job, the cookies will flatten/spread/rise during cooking. (note: originally called for jelly roll pan. this did NOT work well, the dough didn't quite cover the bottom and rose up over the sides. sorry!).
- Sprinkle the chocolate chips and nuts on the top.
- Bake at 350 for 15 minutes. Allow to cool before cutting into bars or squares.
