FRESH FIGS WITH MASCARPONE AND WARM SPICED HONEY
This healthy dessert utilizes fresh figs -- a nutrient-rich fruit popular in Europe and brought to California in the late 18th Century by Spanish Franciscan missionaries.

Steps:
- Arrange the figs cut-side up among four plates. Use the back of a teaspoon to gently press into the center of the flesh and create a small indentation.
- Add a dollop of mascarpone to the center of each fig half and set plates aside.
- Place honey and spices in a small heat-proof bowl and set over a pan with simmering water. Cook over medium heat, whisking to blend, until the honey is liquefied and warm, 1 to 2 minutes. Drizzle honey over each fig, garnish plates with mint sprigs, and serve immediately.

GLAZED FIGS WITH MASCARPONE CREAM
Steps:
- For the cream: In an electric mixer whip the mascarpone until smooth. Continue whipping and slowly add the cream in a steady stream. Add the sugar and whip for 3 minutes.
- For the figs: In a small pot combine the orange juice, balsamic vinegar, sugar, and zest.
- Boil over high heat, stirring to dissolve the sugar. Reduce the heat to medium and simmer for 5 minutes.
- Preheat the broiler.
- Toss the figs with the glaze and spread, cut side up, in a single layer on a baking sheet.
- Cook under the broiler for 6 to 8 minutes, until lightly caramelized. Serve the warm figs with the mascarpone cream and toasted walnuts.
SIMPLE FIG & MASCARPONE DESSERT (OR TAPAS)
I overheard someone in a grocery store saying that figs and mascarpone cheese were made for one another, so I went home and whipped this up. That was 3 years ago and we have been enjoying it every summer when figs are available in the Midwestern grocery stores. It is sweet, creamy and savory too. Just something different to try!

- Spread approx 1/2 t cheese on each fig half and arrange figs on a plate.
- Drizzle agave syrup/sweetener (or honey) over and around the figs.

FIG MASCARPONE TART
Here sweet figs nestle in creamy mascarpone cheese speckled with flecks of aromatic vanilla bean and are lovingly wrapped in buttery pastry to make a luscious and beautiful tart.

Steps:
- To make the pastry dough combine the flour, sugar and pinch of salt in a food processor. Pulse to combine.
- Chop the cold butter into small pieces. Add the butter to the processor and process until a crumbly sandy texture is achieved.
- Mix the yolks with the whipping cream to combine.
- With the motor running add the whip cream and egg mixture through the feed tube. Process until the dough comes together in a ball.
- Note: due to variables in flour moisture, you may have to add a little extra whip cream to the mixture to get the dough to come together. If necessary add a teaspoon (5ml) of whip cream.
- Remove the dough from the processor and wrap in plastic wrap. Refrigerate 30 minutes before rolling.
- In a medium bowl blend the mascarpone cheese, cream cheese, sugar and the scraped vanilla bean. Mix just to combine.
- Preheat oven to 400F (204C)
- Line a baking tray with parchment.
- To make the egg wash; in a small bowl whisk the egg and add 1 tablespoon (15ml) water to combine.
- Slice the figs into a little over inch (.63cm) slices crosswise.
- Roll out the pastry on a lightly floured board to less than 1/8 inch (.31cm) thickness and 9 inch (22 cm) diameter circle.
- Move pastry on to the parchment lined baking tray.
- Using an off-set spatula smear the mascarpone in the center of the dough leaving a 2 inch (5 cm) border.
- Starting from the outside working in, lay the figs in a circular overlapping ring, form concentric circles to cover the cheese. Making almost 2 full layers when complete.
- Fold the excess dough up and over the filling leaving about a 3 inches (7.5cm) uncovered to show off the beautiful figs. Pinch edges if necessary to make sure the pastry is sealed.
- Brush all the edges with egg wash. Sprinkle tart with sugar.
- Place in oven and bake for 5 minutes at 400F (204C). Turn the oven down to 350F (176C). Bake for 20 minutes or until the crust is fully cooked and golden brown.
- Remove from the oven and allow to sit for 5 minutes.
- Cut into 6-8 slices and serve with freshly whipped cream.
- This tart is best served straight out of the oven warm and crispy!
SPICED BAKED FIGS WITH GINGER MASCARPONE

- Heat oven to 200C/180C fan/gas 6. Lay the figs in an ovenproof roasting dish, dot over the butter and drizzle with honey. Sprinkle over the sugar and cinnamon, then pour over the orange juice and mix lightly. Nestle the star anise amongst the figs and roast for 15-20 minutes.
- When ready to serve, mix the ginger and syrup through the mascarpone. Place 4 fig halves, drizzled with syrup, on a plate with a dollop of mascarpone and some shortbread fingers.
