Steps:
- Combine black beans, tomatoes, coconut milk, vegetable broth, green onions, ginger, cumin, turmeric, and garlic in a large saucepan; bring to a boil. Reduce heat and simmer until desired consistency is reached, 30 to 45 minutes. Season with salt.

COCONUT BEAN SOUP
This is a lovely spicy Soup with African overtones.Its one of my Favourites!A Bonus being its so quuick and easy to make.

Steps:
- Sauté onion, pepper ,chilli and garlic in the melted butter until soft but not brown.
- Add tomatoes, coconut milk and water or stock and simmer on a gentle heat for about 10 minutes.
- Add cooked chicken and rice and simmer until heated through about 2 minutes.
- Season to taste and serve garnished with the coconut and some freshly chopped coriander.
COCONUT MILK BEAN SOUP
This recipe comes from Tanzania. A friend from Togo brought me this recipe he found on the internet, because he knew I was looking for African recipes to post for ZWT4. Cooking time doesn't include the time to cook the 1/2 cup rice. Thanks Sylvanus!

Steps:
- In a large saucepan, heat the oil and sauté the onions until softened (maybe about 5 minutes).
- Add green peppers, curry powder, salt, pepper, butter or margarine, and tomato, and simmer for 2 minutes.
- Add the kidney beans with their liquid, the coconut milk, and water.
- Simmer gently for 10 minutes, Stir in the cooked rice and heat for about 2 minutes.
- Ladle into bowls. Top each serving with 1 Tablespoon of shredded coconut, and serve.

- Take a deep bottomed pan, keep it on medium flame and add beans along with water in it. Boil the beans until they tenderize, then remove from flame and drain out water. Meanwhile, in another pan, add rice along with water. Boil rice and remove from flame once done. Keep it aside after draining the water. Chop green bell pepper, onions and tomatoes on a chopping board.
- Take a deep bottomed pan, keep it on medium flame and heat margarine in it. Add chopped onions and saute them until light brown in color. Then add chopped capsicum and curry powder followed by salt and pepper. Allow the mixture to be cooked for a minute or two.
- Stir in chopped tomatoes in the mixture and simmer for at least 8 to 10 minutes. Pour in the cooked kidney beans, coconut milk and water to this mixture and allow the soup to be cooked until you get a desired consistency.
- Then finally add rice in the soup mixture. Once done cook for another 4 to 5 minutes or until you achieve the soup like texture and consistency. Serve!
