GARLIC BREAD SOUP

Number Of Ingredients 8

1/4 cup extra-virgin olive oil, preferably Spanish
8 large garlic cloves, mashed to a paste with 1 teaspoon coarse salt
2 cups bite-size pieces stale crusty bread (4 ounces)
5 cups homemade or low-sodium store-bought chicken stock
1 bay leaf
Coarse salt and freshly ground pepper
3 large eggs, beaten
Flat-leaf parsley leaves, for garnish

Steps:

  • Heat oil in a large saucepan over medium-low heat until hot but not smoking. Add garlic paste; cook, stirring occasionally, until very fragrant but not browned, about 10 minutes.
  • Add bread, and stir to coat. Stir in stock and bay leaf; season with salt and pepper. Bring to a boil. Reduce heat; simmer 10 minutes.
  • Discard bay leaf. Stir in eggs. Cook, stirring occasionally to break up eggs, about 10 minutes. Serve soup garnished with parsley leaves.

2 tablespoons active dry yeast
3 cups warm water (110° to 115°)
2 tablespoons sugar
2 teaspoons salt
6-1/2 to 7-1/2 cups bread flour
Optional: Cornmeal and sesame seeds

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, salt, yeast mixture and 3 cups flour; beat on medium speed 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with a kitchen towel and let rise in a warm place until doubled, about 30 minutes., Preheat oven to 500°. Punch dough down. Divide and shape into 6 balls. Place 3 in. apart on 2 baking sheets that have been generously sprinkled with cornmeal or greased. Cover with a kitchen towel; let rise in a warm place until doubled, about 15 minutes. Spray loaves with water; if desired, generously sprinkle with sesame seeds. Using a sharp knife, score surface with shallow cuts in an "X" pattern. Bake 2 minutes. Reduce oven setting to 425°. Bake until golden brown and internal temperature reaches 190°-200°. Remove from pans to wire racks to cool completely., Cut a thin slice off the top of bread. Hollow out bottom portion of loaf, leaving a 1/2-in. shell. Discard removed bread or save for another use, such as croutons.

You can make great meals out of simple ingredients. Nothing better proves this concept than bread soup. The soup is a simple combination of water, egg and some leftover hard bread that most folks would throw away; the results are delicious.

2 tablespoons olive oil
2 large cloves garlic, thinly sliced
2 chicken bouillon cubes
2 tablespoons chopped fresh parsley
4 slices stale Italian bread, cut into 1-inch cubes (about 2 cups)
2 plum tomatoes, diced
2 mushrooms, sliced
2 large eggs, beaten
2 tablespoons grated or shaved Pecorino Romano cheese
Kosher salt and freshly ground black pepper

Steps:

  • In a Large Dutch oven or a heavy-bottomed pot, heat oil over medium-low heat; fry the garlic until lightly golden--about 1 minute. Be careful not to let the garlic burn as this will cause a bitter taste. Add 4 cups of water, the bouillon, parsley, bread, tomatoes and mushrooms.
  • Bring soup to a simmer and cook 5 minutes until the mushrooms are cooked through and the bread softens. While stirring the soup, pour the eggs into the hot soup to create ribbons of egg. (Alternatively, you can add unbeaten eggs to the soup whole and poach, about 3 minutes.)
  • Season the soup to taste. Ladle into soup bowls and sprinkle with cheese.

This simple tomato soup with olive oil, day-old bread, and fresh basil leaves is a perfect way to use up very ripe tomatoes.

1/4 cup extra-virgin olive oil, plus more for drizzling
1 large yellow onion, diced small (2 1/2 cups)
Coarse salt and ground pepper
2 garlic cloves, minced
Red-pepper flakes (optional)
3 pounds very ripe tomatoes, cored and coarsely chopped
6 ounces day-old crusty bread, thick crusts removed, torn into 1-inch pieces (4 cups)
1/4 cup fresh basil leaves, torn if large

Steps:

  • In a large saucepan or Dutch oven, heat oil over medium-high. Add onion, season with salt and pepper, and cook, stirring often, until soft, about 10 minutes. Add garlic and pinch of red-pepper flakes (if using) and cook until fragrant, 1 minute. Add tomatoes and cook, stirring often, until they begin to break down and release their liquid, 5 minutes.
  • Add 3 cups water and season with salt and pepper. Bring to a boil, then add bread and stir to combine. Reduce heat to low, cover, and simmer until bread is soft and soup thickens, about 15 minutes. Season to taste with salt and pepper.
  • To serve, divide soup among serving bowls, drizzle with a little oil, and top with basil leaves.

1 bunch fresh oregano, leaves only, chopped, or 1/2 tablespoon dried
1/2 bunch fresh thyme, leaves only, chopped, or 1/2 tablespoon dried
Small sprig of fresh rosemary, leaves only, chopped, or 1/4 teaspoon dried
1 1/2 cups canned tomatoes, diced, with the juices
6 ounces baguette (about 1/3 loaf), cut into 1/2-inch chunks (with crust)
6 cups chicken stock or vegetable stock
2 limes, cut into quarters, for garnish
1/4 cup olive oil or 4 tablespoons unsalted butter
1 onion, diced
2 1/2 teaspoons salt
2 ripe plantains or bananas, peeled and cut into 1/4-inch slices on the diagonal

Steps:

  • Heat the olive oil or butter in a large saucepan over medium-low heat. Cook the onions with the salt until they start to caramelize, 10 to 15 minutes. Add the plantains or bananas and cook 10 minutes longer. Stir in the garlic, oregano, thyme, and rosemary and cook just until aromatic, about 3 minutes longer.
  • Add the tomatoes, bread chunks and chicken or vegetable stock. Bring to a boil, reduce to a simmer and cook, stirring frequently, until the bread has softened and the flavors are well blended, about 45 minutes. Ladle the soup into bowls, then squeeze a wedge of lime into each and toss in the wedge. Serve hot.

This simple and tasty soup is filling and so quick to make. My friend's Italian grandmother used to make this for anyone with a bit of tummy trouble. Whether it was the flu or a bit too much to drink the night before, this soup always settled the stomach, and it was always a hit with both young and old. I have it for lunch all of the time when I only have a few minutes to spare. Great on a chilly day.

2 -3 tablespoons of grated parmesan cheese
1 can chicken broth
Italian seasoned breadcrumbs

Steps:

  • Bring chicken broth to a slow boil in a sauce pan.
  • In a small bowl, beat egg and add the parmesean cheese.
  • the mixture should still be runny, yet thickened.
  • Add breadcrumbs and mix.
  • the mixture should form a soft ball, but it should still be moist.
  • Drop the mixture into the boiling broth, break up the ball with a fork and leave to boil for another 3-4 minutes.
  • The breadcrumbs should begin floating to the top and binding together.
  • Serve hot.

1 onion, chopped
¼ cup olive oil
2 carrots, diced
2 stalks celery, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 bay leaf
1 teaspoon dried basil
1 (14.5 ounce) can crushed tomatoes
2 cups dry lentils
8 cups water
½ cup spinach, rinsed and thinly sliced
2 tablespoons vinegar
salt to taste
ground black pepper to taste

Steps:

  • In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
  • Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat, and simmer for at least 1 hour. When ready to serve stir in spinach, and cook until it wilts. Stir in vinegar, and season to taste with salt and pepper, and more vinegar if desired.

Steps:

  • Bring the chicken stock to a strong boil and add the salt and pepper. Meanwhile, break the toast into pieces and place the equivalent of 1 slice in each of four soup bowls. Divide the cheese among the bowls, sprinkle with the ground pepper and pour the boiling stock on top. Serve immediately.

10 3/4-inch-thick slices white peasant bread
6 cups water
8 large kale leaves, cut into 2-inch pieces
2 large carrots, peeled and coarsely chopped
2 large stalks celery, coarsely chopped
1 medium onion, coarsely chopped
2 large cloves garlic, minced
2 medium potatoes, peeled and diced
1 19-ounce can cannellini beans, with liquid
Salt and black pepper to taste
1/2 cup extra-virgin olive oil
Grated Parmesan cheese

Steps:

  • Toast the bread lightly on both sides. Cut each slice into 4 pieces and set aside.
  • Put the water in a stockpot, add the kale, carrots, celery and onion and bring to a boil. Reduce the heat and simmer for 20 minutes. Add the garlic, potatoes and beans (with liquid) and simmer for 20 minutes more. Season to taste with salt and black pepper.
  • Preheat the oven to 350 degrees. Ladle a third of the soup, about 4 cups, into a 5-quart ovenproof casserole. Cover the soup with half of the toast squares in a single layer and drizzle with half of the olive oil. Ladle in half of the remaining soup and add the rest of the toast squares, drizzling them with the remaining olive oil. Add the rest of the soup, pressing down the toast squares to be sure they have been moistened.
  • Cover the casserole and bake for 50 minutes. Serve with grated Parmesan cheese.
