1 tablespoon vegetable oil
2 pounds chicken wings, separated into drumettes and flats
1 tablespoon baking powder
1/2 cup light brown sugar
2 tablespoons kosher salt
1 tablespoon butcher's grind cracked black pepper
2 tablespoons granulated sugar
1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Pinch of celery seeds

Steps:

  • For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
  • Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
  • For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
  • Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.

900 g (2lb) Chicken wings
1 medium Onion (chopped)
1 tablespoon Thyme
1 teaspoon Black pepper
1 Bay leaf
Salt

Steps:

  • Cut the wings into flats and drummettes or leave them whole.Clean and pat the chicken dry then add into a pot.
  • Add onion, black pepper, thyme, salt, bay leaf and water.Make the water atleast 1 inch above the chicken in the pot.
  • Cover the pot and cook the chicken wings on medium heat for 15 minutes or till it's tender and juicy.
  • Remove the chicken from the broth and save the broth to make gravy or use in other recipes that requires chicken broth.
  • Serve the chicken wings or you bake or broil for a crispy, golden skin finish. You can also brush with sauces like bbq sauce, teriyaki, or buffalo sauce.

3 tablespoons olive oil
3 cloves garlic, pressed
2 teaspoons chili powder
1 teaspoon garlic powder
salt and ground black pepper to taste
10 chicken wings

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine the olive oil, garlic, chili powder, garlic powder, salt, and pepper in a large, resealable bag; seal and shake to combine. Add the chicken wings; reseal and shake to coat. Arrange the chicken wings on a baking sheet.
  • Cook the wings in the preheated oven 1 hour, or until crisp and cooked through.

This is more of a method than a recipe, but this is how I always make wings now. I find boiling them first helps get rid of more of the fat, and they get crispier in the oven.

1 lb chicken wings
1/2 cup barbecue sauce

Steps:

  • Boil wings in a large pot of water for about 15 minutes.
  • Broil wings in oven for about 5-10 minutes per side depending on how your oven works) until nicely browned and crisp.
  • I put the bbq sauce in the bottom of a big metal bowl and keep it on the stove near the oven vent so that is warms up a bit.
  • Remove the wings from the oven and pat with paper towels to remove more grease if necessary (I bake mine on parchment paper, so that absorbs some of the grease for me).
  • Toss wings in bowl with bbq sauce (or any sauce you want) until well covered.

  • In a large pot, bring 4 quarts of water and 1 tablespoon of salt to a rapid boil. Add the chicken wings, return to a boil, and boil them for 7 minutes. Drain the wings thoroughly in a colander.
  • Place the wings on a 13 x 18-inch baking sheet. Using a wad of paper towels, blot the wings as dry as possible (wipe off any moisture from the baking sheet, too). Drizzle the oil over the wings and sprinkle with 1 teaspoon salt, the chili powder, cumin, and smoked paprika. Toss with a rubber spatula until the wings are evenly coated. Bake for 15 minutes, then remove the pan from the oven and, using tongs, flip the wings over. Return to the oven and bake for about 10 minutes more, or until the wings are crispy all over. Transfer the wings to a serving platter and serve with the Buffalo sauce on the side, if desired.
  • In a small bowl, whisk together the butter and hot sauce. The sauce will solidify as it cools; reheat if necessary.
