1 tablespoon olive oil
1 small white onion (finely diced)
3 cloves garlic (minced)
3 cups chicken broth
1 teaspoon red pepper flakes
1 large smoked turkey leg (fully cooked)
32 oz. collard greens (thoroughly washed and cut into strips.)
salt & pepper
hot sauce

Steps:

  • In a large deep skillet or pot, heat olive oil on medium heat.
  • Add in onions and cook until tender.
  • Stir in garlic and cook until fragrant.
  • Add chicken broth, red pepper flakes and smoked turkey.
  • Bring to a boil and reduce heat.
  • Cover and boil lightly for about 20-30 minutes.
  • Remove turkey leg and let cool.
  • Remove meat from bone and cut into bite-size pieces.
  • Return meat and skin back to the pot.
  • Simmer for 10 minutes.
  • Add collard greens to pot, pushing them down if needed.
  • When greens begin to wilt down, cover and simmer for up to 60 minutes or until your desired texture is reached, stirring occasionally.
  • Add salt and pepper if desired.
  • Plate the greens and pour on a few drops of hot sauce.
  • Serve hot.

A lot of people are averse to trying dark leafy greens, believe me, I was too, as they were always described as "bitter". Now that I have had them though I love them, and only eat them like this (not fully cooked to sogginess or in soups). You get a lot of the flavor of the greens themselves and they make a great side dish to a "meat and potatoes" meal. You can substitute any mix of braising/dark leafy greens for the collards.

1 cup collard greens, chopped
1/2 garlic clove, minced (optional)
nonstick cooking spray or 1 teaspoon oil
salt and pepper

Steps:

  • Chop your greens into 1 inch strips that are no longer than 4 or 5 inches long (or you'll be getting a mouthful of stringy greens!). (I like to cut down the middle of the leaf and then put one half on top of the other and chop into strips).
  • Rinse your greens (This is an important step! The water that stays on helps these cook to perfection).
  • Heat your skillet to medium and spray or add oil, and garlic if wanted. Then just add your greens (these will shrink down a lot so you can do it in a small pan) and stir just until all greens have just turned bright green, usually not more than 3~ minutes.
  • Turn up to medium-hot and fry for 30 more seconds or until greens are just tender.
  • Toss with salt and pepper to taste (for this amount I usually use about 1/4 teaspoon salt and 1/8 teaspoon pepper). Serve with your favorite entree :)!

1 medium sweet onion, diced

48 ounces chicken broth
2 lbs. fresh collard greens, trimmed and washed
2 tablespoons apple cider vinegar
1 ½ teaspoons sugar
½ teaspoon kosher salt
¼ teaspoon ground black pepper
Optional garnish: crushed red pepper flakes or hot sauce

Steps:

  • Cook bacon in a large stockpot or Dutch oven over medium heat for 10-12 minutes, or until almost crisp. Add onion, and sauté until translucent, about 7-8 minutes.
  • Stir in garlic and sauté 1 more minute. Add broth, collard greens, vinegar, sugar, salt, and pepper. Use a wooden spoon to stir, scraping up any browned bits from the bottom of the pot.
  • Simmer (uncovered) over low heat for about 1 ½ hours, stirring occasionally (or until collards reach desired level of tenderness).
  • Taste and season with additional salt and pepper, if necessary. Garnish with crushed red pepper flakes or hot sauce.

These collard greens are quickly cooked in olive oil and finished with a squeeze of lemon juice. You're going to love these healthy, vegetarian collards! Recipe yields 2 side servings. 1 large bunch (about 10 ounces) collard greens
1 1/2 tablespoons extra-virgin olive oil
1/4 teaspoon fine sea salt
2 medium cloves garlic, pressed or minced
Pinch of red pepper flakes (optional, scale back or omit if sensitive to spice)
A couple lemon wedges, for serving

Steps:

  • To prepare the collards: Cut out the thick center rib out of each collard green. Stack the rib-less greens and roll them up into a cigar-like shape. Slice over the "cigar" as thinly as possible (⅛″ to ¼″) to make long strands. Shake up the greens and give them a few chops so the strands aren't so long.
  • Heat a large, heavy-bottomed skillet over medium-high heat, then add the olive oil. Once the oil is shimmering, add all of the collard greens and the salt.
  • Stir until all of the greens are lightly coated in oil, then let them cook for about 30 seconds before stirring again. Continue stirring in 30-second intervals until the greens are wilted, dark green, and some are starting to turn browns on the edges (this is delicious). This will take between 3 to 6 minutes.
  • Once the collards are just about done, add the garlic and red pepper flakes (if using). Stir to break up the garlic and cook until it's fragrant, about 30 seconds. Remove the pan from the heat.
  • Immediately divide the cooked collards onto plates, and serve with a lemon wedge each.

We prefer our collards drier and served on a plate. If you prefer a wetter, more stew-like dish to serve in a bowl double the chicken stock.

2 lbs kielbasa
1 bunch collard greens
2 -3 onions, coarsely chopped
4 carrots, peeled and cut in chunks
2 cups chicken stock
fresh ground black pepper

Steps:

  • Cut kielbasa in 2 inch pieces.
  • Clean, trim, and chop collards.
  • Put half the collards into a large pot. Add half the onions, half the carrots, and half the kielbasa with black pepper to taste. Repeat.
  • Pour the chicken stock over the greens. Cover and bring to a simmer over medium to medium-high heat. It will not look like enough chicken stock, but the collards will cook down and the other ingredients will cook in the steam.
  • Continue to simmer, stirring several times, about 45 minutes until collards are tender and carrots are cooked through.
  • Serve accompanied by potatoes, slabs of crusty rye or sourdough bread, or squares of cornbread (try Recipe #277295).

2 pounds collard greens
6 to 8 thick slices bacon or hog jowl (diced)
6 cups water
1/2 to 1 cup chopped onion
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 teaspoon Cajun seasoning or seasoned salt blend, optional

Steps:

  • Wash collard greens in about 3 to 4 changes of water, until no sandy sediment can be felt at the bottom of the sink or bowl.
  • Lay each leaf out and cut out the thick center stalk and any very thick veins. Layer several leaves and roll them; Cut the rolled leaves into 1/2-inch strips (chiffonade style). You may also chop the leaves.
  • In a large skillet over medium heat cook the diced bacon or jowl to render some of the fat. Discard the drippings or save and refrigerate for another use.
  • In a large stockpot or Dutch oven bring the 6 cups of water to a boil. Add the cooked bacon or hog jowl, the chopped onions, salt, red and black peppers, and seasoned salt or Cajun seasoning, if using. Add the greens to boiling water. You might have to add the collard greens in batches.
  • Cover and simmer over medium-low heat for about 1 hour, or until greens are tender.
  • Serve the collard greens with freshly baked cornbread and pass the hot pepper vinegar or pepper sauce at the table. Serves 4 to 6. Tips and Variations

1/2 cup white distilled vinegar
3 tablespoons salt
2 bunches fresh collard greens ( (see note))
1 tablespoon extra virgin olive oil
½ cup finely diced onions
1 tablespoon minced garlic
½ teaspoon red pepper flakes
4-5 cups chicken broth ((can replace 1 cup with water if desired))
1 fully-cooked smoked turkey leg or wing ((about 13 oz))
1 tablespoon white distilled vinegar
Applewood smoked salt & black pepper, to season

Steps:

  • Prepare the collard greens bath by filling your kitchen sink with cool water and adding vinegar and salt.
  • Remove the collard greens from the steams by folding them in half lengthwise and pulling the leaf away from the stem. (discard the stem or see note below on how to cook them)
  • Place the collard greens into the prepared water bath and swish them around several times, scrubbing them to help loosen up any dirt.
  • Let the collard greens soak for 15-20 minutes, giving them a scrub midway. Drain the water and refill with plain water and allow the greens to soak again if needed. Repeat as many times as needed until the water is free from any dirt or grit. After the final soak, drain the water. Next, rinse and scrub each leaf front and back with cool water to ensure they are squeaky clean.
  • Tear the greens into bite-sized pieces and set them aside.
  • In a large pot, heat olive oil. Add onions and saute until tender.
  • Add garlic and red pepper flakes and cook until garlic is fragrant.
  • Pour in the broth and add the turkey leg. Bring to a boil.
  • Add collard greens and reduce heat to a simmer.
  • Cover and cook collard for 1 hour (or longer depending on your desired tenderness), stirring regularly.
  • Once done, stir and then taste the broth and the greens. (add a little water if the broth is too bold for your liking)
  • Stir in vinegar and smoked salt, and black pepper if desired.
  • Serve collard greens with pieces of the smoked turkey leg and hot sauce if desired.

Steps:

  • Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.

  • Finally, add the collard greens, followed by the cooked turkey leg.
  • Press down to sink the greens as much as you can into the liquid broth.
