A new Thanksgiving favorite. Dust with powdered sugar or if desired top with whipped cream.

6 cups cubed French bread
1 cup heavy cream
1 cup vanilla soy milk
3 eggs
1 (16 ounce) can pumpkin puree
1 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 pinch salt
½ cup raisins

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Toss the bread cubes with the cream and soy milk in a large bowl until the liquid has been absorbed; set aside.
  • Beat the eggs in a separate bowl; whisk in the pumpkin puree, brown sugar, cinnamon, vanilla, and salt. Pour the pumpkin mixture and raisins over the bread cubes. Toss gently until evenly combined. Refrigerate 30 to 60 minutes.
  • Divide the mixture between 8 6-ounce ramekins. Bake in the preheated oven until the pudding has firmed and the top has turned golden brown, about 1 hour. Remove from the oven and allow to stand 30 minutes before serving.

Butter, for the baking dish
3 tablespoons oil
2 pounds lunch meat, diced (I'm using a combination of ham and bacon)
1 cup diced onion (I'm using yellow)
2 cups whole milk
1 teaspoon paprika (I'm using smoked)
1/2 teaspoon chile flakes, optional
6 large eggs
Kosher salt and freshly ground black pepper
2 cups grated cheese (I'm using Cheddar)
10 slices day-old bread, torn up (I'm using sandwich bread)
Maple syrup, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil and set aside. Butter a large baking dish.
  • Heat a large saute pan over medium heat and add the oil. Add the bacon and cook until crisp, 3 to 4 minutes. Add the onion and cook until tender, another 4 to 5 minutes. Mix in the ham, then set aside to cool.
  • In a large bowl, whisk together the milk, paprika, chile flakes if using, eggs and some salt and pepper. Add the bacon, onion and ham mixture, stirring to combine. Fold in the Cheddar and bread, making sure the bread is soaked in the custard.
  • Transfer the mixture to the prepared baking dish and gently press down. Cover the dish with foil, transfer to the lined baking sheet and bake for 30 minutes. Uncover and bake until golden brown, about 30 minutes more. Let rest for 5 minutes before serving. Serve with maple syrup, if desired.

8 slices bread, cubed
2 cups whole milk
4 eggs
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
1/4 cup raisins
1 (14 ounce) can pumpkin pie filling
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup water
3/4 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • FOR THE PUDDING, place cubed bread in greased crockpot.
  • Beat together milk & eggs.
  • Stir in sugar, butter, raisins, pie filling, cinnamon & nutmeg.
  • Pour pumpkin mixture over bread & stir.
  • Cover & cook on high 1 hour, then reduce heat to low & cook 3-4 hours or until temperature reaches 160 degrees F.
  • FOR THE SAUCE, just before pudding is done, melt butter in saucepan.
  • Stir in flour until smooth, then gradually add water, sugar & vanilla.
  • Bring to boil, then cook, stirring constantly for 2 minutes or until thickened.
  • Pour sauce over hot bread pudding & serve.

Steps:

  • Preheat oven to 350 F. Butter a baking dish
  • In baking pan, place the brioche bread and the Lady Fingers. Set aside.
  • In a large bowl, beat granulated sugar and eggs with an electric mixer on medium speed for 1 to 2 minutes until has a fluffy consistency.
  • Add milk, coconut milk, whipping cream, pumpkin, cinnamon, cardamom, allspice, nutmeg, salt, and cloves; beat until combined.
  • Pour the pumpkin mixture over the bread mixture. Press down softly with your hands to help moisten every piece of bread.
  • Let stand about 10 minutes or until bread completely soaks up the liquid. Sprinkle the 1/4 cup butter pieces over top.
  • Bake about 30 minutes or until set and brown on edges.
  • Cool on a wire rack for 30 minutes.
  • Serve with warm Salted Butter Caramel Spread.

This delicious pumpkin bread pudding recipe is the perfect breakfast or dessert for the busy home cook : it's only a few ingredients, takes mere minutes to put together and you make it ahead of time!

11 cups bread cubes (one inch pieces (see note))
2 tablespoons melted salted butter
3 cups milk
one 300 millilitre can sweetened condensed milk
one 540 millilitre can pumpkin pie filling
2 teaspoons pumpkin pie spice
4 large eggs
1/2 cup raisins
1/2 cup chopped pecans

Steps:

  • Use the melted butter to grease the bottom and sides of a 9x13 baking dish.
  • Place the bread cubes into the 9x13 dish, pressing down lightly and moving the cubes around to get them into an even layer.
  • Whisk together the milks and pumpkin pie filling. Adjust the spices to your liking right now BEFORE YOU ADD THE EGGS, taste-testing to suit your level of pumpkin spice. I used 1 1/2 teaspoons extra spice for mine. Remember you are seasoning a large pan of plain bread cubes!
  • Once the pumpkin mixture is spiced to your liking, whisk in the eggs completely. Stir in the raisins.
  • Pour the mixture over the dry bread cubes in the pan. Cover tightly with plastic wrap and refrigerate for at least 5 hours, overnight is best.
  • Preheat your oven to 350 °. Remove the plastic wrap and sprinkle the pecans on top, pressing into the top slightly. Cover with aluminum foil.
  • Bake the bread pudding for 30 minutes, then remove the foil. Continue to bake until completely cooked and firm in the middle ( temperature has to reach at least 165 °F for egg safety), around 55-65 minutes.
  • Remove from the oven and cool slightly. Serve warm.

2 teaspoons vanilla

Steps:

  • Preheat the oven to 350 degrees.
  • Put the bread cubes and raisins in a buttered 3 quart oven dish.
  • Then in a large mixing bowl, start with the eggs, and beat them, then add the remaining ingredients.
  • Mix well and pour egg mixture evenly over bread.
  • Stir around a bit to make sure all the bread is coated.
  • Bake for 50 minutes or until the pudding is puffy and a knife inserted near the center comes out clean.
  • Cool slightly before serving.
  • (Yes, it will fall in the center. The eggs cause this to happen)
