Silver White Cake image

A delicious light, white cake. Whip one up and get ready to rake in the prizes. This is great iced with French Silk Frosting.

2 ¼ cups cake flour
1 ½ cups white sugar
3 ½ teaspoons baking powder
1 teaspoon salt
½ cup shortening
1 cup milk
1 teaspoon vanilla extract
4 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour baking pan; 9x13 inch, or 2 round 9 inch pans.
  • In a large bowl, measure flour, sugar, baking powder, salt, shortening, milk and the vanilla into a large mixing bowl. Beat 2 minutes on high speed, scraping bowl occasionally.
  • In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  • Pour batter into pan(s), Bake 9x13 inch cake for 35 to 40 minutes. If using 9 inch rounds, bake 30 to 35 minutes. A toothpick inserted into the cake will come out clean.

2 1/4 cups Gold Medal™ all-purpose flour
1 2/3 cups sugar
1/3 cup shortening
1/3 cup unsweetened applesauce
1 1/4 cups fat-free (skim) milk
3 1/2 teaspoons baking powder
1 teaspoon salt
2 teaspoons vanilla or almond extract
5 egg whites
Chocolate Buttercream Frosting (lighter recipe)

Steps:

  • Heat oven to 350°F. Grease and flour bottom and sides of rectangular pan, 13x9x2 inches, 2 round pans, 9x1 1/2 inches, or 3 round pans, 8x1 1/2 inches.
  • Beat all ingredients except egg whites and Chocolate Buttercream Frosting in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally.
  • Beat in egg whites on high speed 2 minutes, scraping bowl occasionally. Pour into pan(s).
  • Bake rectangle 40 to 45 minutes, 9-inch rounds 30 to 35 minutes, 8-inch rounds 23 to 28 minutes or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center. Cool rectangle in pan on wire rack. Cool rounds 10 minutes; remove from pans to wire rack . Cool completely, about 1 hour.
  • Frost rectangle or fill and frost layers with Chocolate Buttercream Frosting.

This White Sheet Cake with Chocolate Frosting is easy to make, melts in your mouth, and is always a crowd pleaser!

1 cup butter
1 cup water
2 cups all-purpose flour
2 cups sugar
1 tsp salt
1 tsp baking soda
1/2 cup sour cream
2 eggs
1 tsp almond extract
1/2 tsp vanilla extract
1/2 cup butter
1/4 cup cocoa
dash salt
1/4 cup milk
3 1/2-4 cups powdered sugar
1 tsp vanilla extract

Steps:

  • Bring butter and water to a boil in a medium sized saucepan. While mixture is boiling, whisk together the flour, sugar, and salt in a large mixing bowl. Pour hot mixture over dry ingredients and beat well. Whisk together baking soda, sour cream, eggs, and flavorings in a small bowl. Add to mixing bowl and beat till smooth.
  • Pour into a well greased 10"x15" sheet pan with sides. Bake at 375° for about 20 minutes or until a toothpick comes out clean.
  • Bring butter, cocoa, salt, and milk to a boil in a small saucepan. It may appear curdled- that's fine. While mixture is boiling, measure 3½ cups of the powdered sugar into a mixing bowl. Pour boiling chocolate mixture over powdered sugar. Beat till smooth and add vanilla. Add more powdered sugar if needed. Pour over cake after it has cooled for about 5 minutes.

1/2 cup white rice flour
1/2 cup tapioca flour
1/4 cup garbanzo and fava flour
1/2 cup unsweetened baking cocoa
1 teaspoon xanthan gum
1 teaspoon guar gum
1 teaspoon gluten-free baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sunflower or canola oil
1 cup brewed coffee (room temperature)
3 eggs
1 1/2 cups granulated sugar
2 teaspoons apple cider vinegar
2 teaspoons pure vanilla
1 cup melted ghee or sunflower or canola oil
2 teaspoons pure vanilla
1/8 teaspoon salt
4 cups gluten-free powdered sugar
2 tablespoons almond milk, soymilk or regular milk

Steps:

  • Heat oven to 350°F. Spray 2 (8-inch) round cake pans with cooking spray (without flour); sprinkle with 1 tablespoon sorghum flour.
  • In medium bowl, mix 1/2 cup sorghum flour, the remaining flours, the cocoa, xanthan gum, guar gum, baking powder, baking soda and 1/2 teaspoon salt with whisk; set aside. In large bowl, beat oil, coffee, eggs, granulated sugar, vinegar and 2 teaspoons vanilla with electric mixer on low speed until frothy. Gradually add flour mixture, beating on medium speed until well blended. Divide batter evenly between pans.
  • Bake 40 to 42 minutes or until toothpick inserted in center comes out clean. Cool in pans on cooling racks 30 minutes. Remove cakes from pans to cooling racks; cool completely, about 30 minutes.
  • In medium bowl, beat ghee, vanilla and 1/8 teaspoon salt with electric mixer on medium speed. Gradually add powdered sugar and milk, beating until thickened. Beat 4 minutes longer or until frosting is fluffy. On serving plate, place 1 cake layer; spread with frosting. Top with second cake layer; spread frosting over top and side of cake.
