Sour-Cream Coffee Cake image

Here is a classic coffee cake with a tender crumb and a crunchy streusel topping that comes together in about an hour. It's quite rich, so your serving sizes don't need to be large.

1/2 cup/113 grams unsalted butter at room temperature
1 1/4 cups/260 grams sugar
2 large eggs
1 1/2 cups flour/188 grams
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups/300 grams sour cream
1 teaspoon vanilla
1/2 cup/104 grams sugar
2 teaspoons all-purpose flour
1 tablespoon cinnamon
1/3 cup/70 grams chopped pecans or walnuts

Steps:

  • Preheat oven to 350 degrees and generously butter a 9-by-13-inch baking pan. Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition.
  • In a separate bowl, sift flour with baking powder, baking soda and salt. With the mixer on low speed, add the flour mixture to the butter mixture alternately with sour cream and vanilla until just combined. Do not overmix. Pour batter into prepared baking pan.
  • Make the topping: Combine sugar, cinnamon, flour and nuts in a small bowl and mix well.
  • Sprinkle the topping evenly over the cake and bake 30 to 35 minutes, or until a cake tester comes out clean. Cool, cut into pieces and serve.

Number Of Ingredients 10

16 Tbsp sweet butter (2 sticks)
2 3/4 cups granulated sugar
2 eggs, beaten
2 cups unbleached all purpose flour
1 Tbsp baking powder
1/4 tsp salt
2 cups sour cream
1 Tbsp vanilla
2 cups shelled pecans, chopped
1 Tbsp ground cinnamon

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 10 inch bundt pan and lightly dust the inside with flour. 2. Cream together the butter and 2 cups of the sugar. Add eggs, blending well, then the sour cream and vanilla. 3. Sift together the flour, baking powder and salt. 4. Fold the dry ingredients into the creamed mixture, and beat until just blended. Do not overbeat. 5. In a separate bowl, mix remaining 3/4 cup sugar with pecans and cinnamon. 6. Pour half of the batter into the bundt pan. Sprinkle with half of the pecan and sugar mixture. Add remaining batter and top with the rest of the pecan mixture. 7. Set on the middle rack of the oven and bake for about 60 minutes, or until a cake tester inserted in the center comes out clean. Serve warm.
