1 cup butter, margarine
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1/4 cups brown sugar (packed)
1/2 cup granulated sugar
2 eggs or 1/2 cup liquid egg substitute
2 teaspoons vanilla
2 cups of uncooked silver palate thick and rough oatmeal
1 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, beat the butter/margarine/Smart Balance on medium to high speed for 30 seconds.
  • In a smaller bowl, stir together 1 cup of flour, baking soda, salt and cinnamon. Add mixture to the buttery mix.
  • Add brown sugar, white sugar, eggs, and vanilla to mix. Blend 1--2 minutes, or until all ingredients are thoroughly mixed.
  • Stir in Silver Palate Thick and Rough Oatmeal and the remaining flour. Fold in the raisins.
  • Drop by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake at 350 degrees F for 10--12 minutes or until the edges are lightly browned. Cool on rack.

1 teaspoon vanilla extract
1 cup raisins
1 cup shortening
1 cup brown sugar, packed
1 cup granulated sugar
2 1/2 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 cups rolled oats
1 cup pecans, chopped (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, stir together all ingredients.
  • Shape dough into 1 inch balls.
  • Place on ungreased baking sheets; flatten with fingers.
  • Bake at 350 degrees for 10-11 minutes.
  • Do not overbake.
  • Remove to a wire rack to cool.

1/4 cup applesauce
1 egg white
3/4 cup flour
3/4 cup oatmeal

1/4 teaspoon salt
1/4 cup raisins
1 teaspoon vanilla
cooking spray

Steps:

  • Preheat oven to 350°F Grease cookie sheets with cooking spray.
  • Beat sugar and butter together until blended.
  • Add applesauce and egg; beat well.
  • Combine flour, oats, soda, cinnamon and salt in small bowl.
  • Add flour mixture to sugar/butter mixture; beat until blended.
  • Stir in raisins and vanilla.
  • Using 3 level tablespoon, drop dough 2- inches apart on prepared cookie sheets.
  • Flatten slightly.
  • Bake at 350°F for 10-15 minutes.
  • Remove from pan; cool.
