SILVER DOLLAR FRENCH TOAST
Lots of little-bitty slices of thick, golden-brown egg-battered French toast - the perfect use for that neglected baguette you've got sitting on your kitchen counter.

Steps:
- Beat together the eggs and milk.
- Add the sugar, vanilla, salt, nutmeg.
- Dip the bread into the egg mixture. Let soak for just a couple of seconds on either side.
- Cook on a buttered nonstick skillet heated to about 350 degrees.
- Cook both sides until golden brown.
- Top with butter and/or syrup and/or fruit and/or whatever you want. And enjoy!
FRENCH TOAST
You can use white sandwich bread, but French toast also works well with other loaves, including brioche, challah, cinnamon-raisin, whole-wheat, French, even sourdough.

Steps:
- Whisk together eggs, milk, sugar, and salt (as well as the optional vanilla extract and cinnamon, if using) in a medium shallow bowl until the mixture is fluffy and light in color.
- Melt 1 tablespoon butter in a large skillet over medium-high heat. Working with one bread slice at a time, soak the bread in the egg mixture for 3 to 4 seconds per side. Don't let the slices sit too long; they will turn soggy and fall apart.
- Once butter is melted and bubbling, add 3 soaked bread slices to hot pan and cook until golden brown, or about 1 1/2 to 2 minutes. (There may be some spots that do not brown; that's normal.)
- Flip each slice, and cook until gold brown, or about 1 1/2 to 2 minutes. Repeat with remaining butter and egg-soaked bread. Serve hot with toppings of choice.
SILVER DOLLAR PANCAKES
These silver dollar pancakes have sour cream, but they are the most amazing you will ever taste! The sour cream makes them fluffy and irresistible! Dust with powdered sugar if desired and serve with hot syrup!

- Blend sour cream, flour, eggs, sugar, salt, and baking soda together with a whisk until smooth.
- Heat a skillet or griddle over medium-high heat. Lightly coat with butter. Drop batter 2 tablespoons at a time onto griddle, leaving plenty of space for spreading. - Trim the bread crusts and use a rolling pin to flatten each slice into a square.
- Spread about 1 tablespoon peanut butter, followed by 1/2 tablespoon hazelnut spread onto each bread square. Sprinkle about 1/2 teaspoon mini chocolate chips on each bread square, and roll up.
- Whisk eggs and milk together in a small bowl. Coat each roll with the egg mixture.
- Melt butter in a skillet over medium heat. Place roll ups seam side down into the skillet and cook until golden brown on all sides, 4 to 5 minutes. Add more butter to the skillet, if necessary.
- Sprinkle cinnamon sugar onto a plate, and as soon as roll ups come out of the skillet, roll them in the sugar, shaking off excess. Serve warm.

- Starting with the vegetable that takes the longest to cook (depending on whether you precook the potatoes or carrots), stir-fry everything in the hot oil in a preheated wok or large skillet. Park cooks use lard to make this stir-fry, but vegetable oil is used in the cooking classes. If you want traditional Silver Dollar City taste, stick with lard. In the park, the potatoes are thinly sliced and stir-fried raw, but the cooking class suggests precooking the potatoes and carrots in the microwave oven for faster stir-frying. Frozen vegetables should be thawed.
MURRAY'S FRENCH TOAST
This is my (Bird's) favorite French toast recipe. Growing up with 4 siblings, my dad would make sugar-butter when there was no syrup in the house (hence 'Murray's', named after my dad). Some folks like it on pancakes, but for me, it's on French toast all the way! I even have a 'pattern' to how I eat it. I haven't tried it using Splenda yet, so I guess I need to soon, but then, this is not a 'diet-conscience' recipe. When we were real broke, and there was no money even for dog food, my dad would leave some egg mixture in the bowl, break up some bread in it, and the dog (and cats) ate too (we were always bringing home strays). :) My dad was the master of inginuity, making sure we all had full bellies!

- SUGARBUTTER: Using the tines of a fork, mix butter and sugar in a small bowl. Do not beat (you should feel the granules of sugar in the butter). Set aside.
- Beat eggs and milk in a bowl large enough to fit a slice of bread. Heat a small pat of butter in a large pan or griddle over medium heat.
- When butter is melted in pan, dip 1 slice of bread into the egg mixture, flip over, then hold it over the bowl for a second or so to let excess egg drip off. Place into pan and sprinkle with a light dusting of cinnamon. Repeat with other slices (so as to fit on griddle or in pan, may need to do in batches).
- Cook for 3-5 minutes until golden brown. Flip toast and cook remaining side to golden (sprinkle with more cinnamon if desired).
- Place one toast each onto individual plates. Spread sugar-butter over one side (like buttering toast). Place another slice on top and repeat. Continue until you reach the desired stack amount and serve. I love to eat the crust off first, then dive into the center of soft french toast smothered in sugar-butter to divulge into at the end. A mouth-watering experience!
