Fluffy and sweet, this apple treat is from the UK and goes great with ladyfingers and cream. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

Steps:
- In a large saucepan or Dutch oven, combine apples and water and cook, covered, over low heat, until frothy, 15 to 30 minutes. Remove from heat and stir in sugar, cinnamon, cloves and vanilla. Let cool.
- In a medium bowl, whip the egg white until stiff peaks form. Fold into the cooled apple mixture. Serve.

APPLE SNOW
I am posting this for the ZWT3 (Scandinavia). I got this recipe from a old cookbook, which my mother bought me for Christmas years ago, and I love this book. I have not tried it yet, but it looks very easy and interesting. Finnish apple snow is tradionally served in a glass bowl with a pinch of cinnamon sprinkled on the top.

Steps:
- Cook apples in a covered pan with little or no water, stirring frequently. When apples are cooked add a little sugar to taste, and whisk to a smooth puree. If it is too stiff add just a little boiling water. Allow to cool.
- Beat the egg whites with a pinch of salt in a large mixing bowl and gradually add the sugar, beating as fast as you can until whites form stiff peaks.
- Add lemon juice to the apple puree in another large bowl.
- Stir in a little of the beaten egg whites, and finally fold in the rest of the whites until well blended.
- Pour into a glass bowl to serve, and sprinkle with a pinch of cinnamon on top.

- Toast the almonds and oatmeal in a pan until slightly browned. Set aside.
- Whip the cream until smooth, but not stiff.
- Warm the honey VERY slightly, so that it will run easily.
- Fold the honey, whiskey, half of the toasted almonds & oatmeal, half the berries if using them & the lemon juice into the cream.
- Mix thoroughly but lightly, and spoon into tall individual glasses. (looks lovely in wine or champaign glasses).
- Sprinkle the remaining almonds/oatmeal and berries on top.
- Chill and Serve.

- Tear apart chicken into strips.
- Cook peas: place in pot, cover with water, bring to boil, and boil for 3 minutes. Drain.
- Combine dressing ingredients.
- Stir everything together. Refrigerate at least 2 hours before serving to allow salad to chill and for chicken to absorb dressing flavor.
VEAL WITH CREAM SAUCE
This recipe came from "Classic International Recipes". It states that it derives from Switzerland, although it is enjoyed throughout Western Europe. Typically this is served with Fried Potato Cake or Mashed Potatoes. This calls for veal round steak, but I can usually only find the more expensive veal scallopine here.

Steps:
- Partially freeze the veal; slice very thinly across the grain into bite-size strips. In a mixing bowl comgine the lemon juice or brandy, salt and pepper; add the veal strips and toss to coat evenly. Let stand 10 minutes.
- In a large skillet, cook the veal, half at a time in 2 tbsp hot butter or margarine for 2 minutes at medium heat. Transfer to a heated serving platter; keep warm. Repeat with the rest of the veal.
- For the sauce, in the same skillet cook shallots in the 1 tbsp hot butter until tender but not brown. Add the wine and bring to boiling, stirring constantly; cook for 3 minutes or until it is reduced to 1/4 cup mixture.
- Gradually add the whipping cream, stirring constantly. Stir in the veal strips; heat through but do not boil. Serve immediately with the Fried Potato Cake or mashed potatoes.
RASPBERRIES 'N SNOW
This has been our Chrstmas day dessert for many years. Loved by everyone. I have been asked for this recipe every year when someone new spends christmas day with us. Enjoy

Steps:
- Beat cream cheese until fluffy. Fold in whipped cream / cool whip.
- Sprinkle reserved raspberry juice over cake squares (you want them moistened, but not soggy).
- In a trifle bowl or glass bowl, place a layer of the moistened cake on the bottom, followed by 1/3 of the cream cheese mixture. Then a layer of 1/2 of the raspberries, pushing the raspberries against the sides of the bowl.
- Top with grated choclate.
- Then another layer of cake, followed by 1/3 of the cream cheese mixture and then the remaining raspberries, again pushing the berries against the side of the bowl.
- Placing the remaining 1/3 cream mixture on the top followed by grated chocolate.
- Chill for several hours.
- Enjoy.

MANSIKKALUMI - FINNISH STRAWBERRY "SNOW"

- Mash or blend strawberries into a purée. Whip together the strawberry purée and egg whites until light and frothy, gradually adding baker's sugar (note: the mixture will triple in volume).
