My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

One of my earliest and most vivid food memories was when my uncle Bill would make his famous dried Italian sausage every Christmas Eve. They'd be fried after Midnight Mass and served on bread with roasted red peppers. This fresh version was inspired by those. If you can manage not to eat them right away, letting them dry for a day or two really deepens the flavor, and firms up the texture as well, in true Uncle Billy fashion.

3 pounds pork shoulder
4 cloves garlic
1 ounce kosher salt, divided
2 tablespoons whole fennel seeds, toasted
1 teaspoon anise seed
2 teaspoons freshly ground black pepper
2 teaspoons red pepper flakes
1 teaspoon ground cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried marjoram
½ teaspoon ground coriander
½ teaspoon ground mustard
¼ teaspoon ground allspice berries
1 tablespoon white sugar
2 tablespoons cold water
sausage casing, soaked in water until soft

Steps:

  • Cut pork shoulder into cubes. Place in a bowl and refrigerate while preparing the other ingredients.
  • Grind garlic with a pinch of salt in a mortar to make a paste. Add fennel, anise, and black pepper. Bruise spices lightly with a pestle to release the flavors. Add red pepper flakes, cayenne pepper, oregano, marjoram, coriander, mustard, allspice, sugar, and a splash of water. Stir to combine.
  • Add the spice paste to the pork cubes. Mix thoroughly by hand. Add the remaining salt. Cover and refrigerate until flavors meld, 8 hours to overnight.
  • Process the cold pork through a meat grinder on the slowest speed.
  • Push a casing onto the stuffing tube of your meat grinder. Feed the sausage meat through the filling tray. Run the meat through the casing on the slowest speed until all the casing is used up. Tie casing at the end into a knot. Pinch and twist the meat to create links if desired.
  • Place sausage onto a wire rack set over a sheet pan. Refrigerate uncovered for 24 hours.
  • Preheat a charcoal grill for medium heat. Separate the links and grill them until browned, about 5 minutes per side.

Make this simple fennel-scented sausage to toss into pasta or onto pizza. Par-cook large crumbles to fold into Thanksgiving stuffing or a pot of soup. Or fry up patties and serve alongside crusty bread and a bowl of tender white beans doused generously in olive oil. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless sausage. Twenty percent by weight is a good ratio, though 25 doesn't hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon.

1 1/2 teaspoons coarsely ground fennel seed
1/2 to 1 tablespoon red-pepper flakes

1 teaspoon pounded or very finely grated garlic
1 teaspoon dry white wine or vermouth
Extra-virgin olive oil

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • In a large bowl, combine salt, fennel seed and red-pepper flakes. Add pork to the spice mixture along with the garlic, and wine. Using your hands, mix thoroughly for 1 full minute, until the pork begins to appear tacky and sticks to the palm of your hand.
  • Heat a cast-iron pan over medium heat. Use a heaping tablespoon of pork mixture to make a small, thin sausage patty. Add a teaspoon or so of olive oil, and cook the patty for 2 to 3 minutes on each side, or until cooked through. Taste, and if needed, add salt or any other seasonings to the uncooked sausage mixture and mix to combine.
  • Divide and form the remaining sausage into 8 2 1/2-inch patties, placing them on the prepared baking sheet as you go. Cover, and refrigerate for 30 minutes to allow the flavors to come together. (Patties can be made ahead and covered and refrigerated or frozen at this point until ready to use.)
  • To cook, wipe out cast-iron pan, and return to medium heat. Add 1 tablespoon olive oil. When it shimmers, add patties in a single layer, leaving space between them. Cook 3 to 4 minutes per side, or until browned on the surface and just cooked through.
  • Drain sausages on paper towels, and serve hot.

1 tbsp. salt
2 tsp. paprika
1 tbsp. freshly cracked black pepper
2 tsp. red pepper flakes (crushed)

3/4 tsp. ground fennel seed
1 tbsp. garlic powder
1/8 tsp. dried oregano
1 tbsp. onion powder
1/4 tsp. brown sugar
1 tbsp. dried basil
1/8 tsp. dried thyme

Steps:

  • Mix the red wine vinegar with the pork meat in a bowl.
  • Sprinkle it with all the remaining ingredients (seasoning, herbs and vegetables)
  • Knead it making sure that they are all spread evenly throughout the meat.
  • Split the sausage into three long parts, wrap each of them in plastic and put them in a freezer bag before letting them cool in the freezer. You want to use a freezer bag for them, to avoid freezer burn.
  • Let them cool in the freezer for 12 hours before taking them out.

2 teaspoons salt
1 1/2 teaspoons coarsely cracked black peppercorns ((toast in a dry skillet for a minute or two until fragrant for maximum flavor))

1 teaspoon onion powder
1/2 teaspoon red pepper flakes ((omit if you want a mild sausage))

Steps:

  • Place the ground meat in a bowl and add all remaining ingredients. Use your hands or a stand mixer paddle attachment to thoroughly combine the ingredients.   • To prepare casings: Let casings soak in cool water about five minutes to remove salt on outer surface (no longer, or they will become too tender to stuff) and flush salt from the inside by placing one end on faucet nozzle and turn on cold tap water (if you see holes or water leaking, cut and discard).
  • Remove casing from faucet and gently squeeze out water; cover rinsed casings and refrigerate until ready to use.
  • Mix all the ingredients and let stand for 1 hour.
  • Mix again and then stuff into casings.

26 g kosher salt (about 1.5 Tbsp)
4 g black pepper (about 2 tsp, coarsely ground)
4 g sugar (about 1 tsp)
6 g fennel seed (about 4 tsp, coarsely crushed in a mortar)
2 g caraway (about 1 tsp, coarsely crushed in a mortar)
2 g coriander (about 1 tsp, coarsely crushed in a mortar)
1 g fennel pollen (about 1/2 tsp; omit if you don't have it)
1 g oregano (about 1.5 tsp)
1.5 g basil (about 1 heaping tsp)
118 g dry white wine (1/2 cup; cold; or cold drinking water)

Steps:

  • Grind the meat through ⅜" (10 mm) plate.

1 Teaspoon Salt
1/2 Cup Fresh Grated Romano
1/2 Cup Fresh Grated Parmesan

Steps:

  • For Sauce, Combine all ingredients except Sausage Links in separate pot and bring to boil. Reduce to simmer for a minimum of 3 hours stirring frequently. For sausage links, place in a separate pot, fill with water to cover links. Bring to boil, then reduce to simmer for 20 minutes. After 20 minutes take each link, hold over the Sauce pot and slice link in half to allow juices to fall into Sauce pot. Place halved links into Sauce pot and continue simmering. Serve over favorite pasta and top with more fresh grated romano and parmesan cheese.

  • Preheat oven to 375 degrees F. Adjust the racks inside the oven to fit your roasting pan on the center rack.
  • First, take a large roasting pan and drizzle generously on the bottom with extra virgin olive oil, at least 2 tablespoons. Toss in your sliced onions and colorful sliced peppers. Add salt and garlic powder and set it aside.
  • Next, remove sausage links from the package and poke each one a few times with a fork. Then place them on your outside grill and grill on medium heat. While you grill them (about 5 minutes), squeeze fresh lemon juice over the links. This will help remove the excess fat along with getting rid of some of the gamy taste from the pork. Grill them just until they are golden brown. They will finish cooking in the oven. Or cook them on stove-top for a few minutes, until they brown.

  • Trim any large blood vessels, soft fat and glands from the pork shoulder. Cut pork and pork fat into chunks in a size that will fit in the neck of your meat grinder. Keep the meat very cold until ready to use. Freeze the grinder for 20 minutes to make grinder easier. Grind all the chucks in a clamp-on, hand crank grinder to a medium grind. Transfer to a large stainless steel bowl. An optional method is to ask your butcher to trim and grind the pork and pork fat for you.
  • Mix all the spices together and add to the pork. Put on latex gloves and using your hands completely mix the mixture together until strands form when a handful of meat is pulled apart, about 5-10 minutes. The consistency should be paste-like. Store the pork mixture in the refrigerator until ready to stuff.
  • Rinse the hog casings according to the directions on the package or per your butcher. Thread one end of a casing onto the stuffing tube. Place batches of pork mixture into the chute, and using the hand crank stuff the pork into the casings. Tie off the end at intervals to create a coil of approximately 5 - 6 sausages.
