SALAMI, BACON AND SPINACH HASH



Salami, Bacon and Spinach Hash image

Number Of Ingredients 12

8 ounces apple-smoked bacon (5 to 6 slices), cut into 1/2-inch pieces
2 medium russet potatoes (about 1 1/2 pounds), peeled and chopped into 1-inch cubes
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
1 red bell pepper, cored, seeded and cut into 1/2-inch pieces
3 cups baby spinach leaves
5 ounces dry salami, peeled and cut into 1/2-inch cubes
1/2 teaspoon ground nutmeg
Zest of 1/2 medium orange
4 large eggs, at room temperature

Steps:

  • Cook the bacon over medium-high heat in a 12-inch nonstick skillet, stirring occasionally, until crisp, 10 to 12 minutes. Remove the bacon using a slotted spoon and drain on paper towels.
  • Add the potatoes, 1 teaspoon salt and 1/4 teaspoon pepper to the pan juices. Cook, stirring frequently, until brown and crisp, about 25 minutes. Remove the potatoes using a slotted spoon and drain on paper towels. Add the oil, onion, bell pepper, 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes.
  • Add the spinach, salami, nutmeg, orange zest, the remaining 1/4 teaspoon of salt and pepper. Cook until the spinach is wilted, about 4 minutes. Stir in the bacon and potatoes.
  • Make 4 indentations in the hash and break an egg into each. Cook until the eggs are cooked through, 5 to 6 minutes.

1 head cauliflower, cored and broken into small florets
1/2 cup extra virgin olive oil
2 anchovy fillets, mashed to a paste with the side of a large knife
coarse salt
1/4 cup raisins
1/4 cup pine nuts, toasted
1/2 lemon, zest of
1/2 cup panko breadcrumbs (Japanese bread crumbs)
fresh ground black pepper
1 lb spaghetti
1/2 bunch fresh flat-leaf parsley, chopped
freshly grated parmigiano-reggiano cheese, for serving

Steps:

  • Preheat oven to 350°.
  • Bring a large pot of water to a boil.
  • Place cauliflower, 1/4 cup oil, and anchovy fillets in a large sauté pan over medium heat.
  • Cook until the anchovy fillets begin to sizzle; add 1/4 cup water and season with salt.
  • Bring to a simmer, cover, and cook until the cauliflower is just tender, about 5 minutes.
  • Uncover, and cook until the water has evaporated and the cauliflower is golden brown, 5 to 7 minutes.
  • Stir in raisins and pine nuts, and cook until just heated through.
  • Remove from heat and cover; set aside.
  • Place panko on a rimmed baking sheet. Drizzle with 2 tablespoons oil, and season with salt and pepper.
  • Toss to coat crumbs with oil, and spread into an even layer.
  • Bake until lightly browned and crunchy, about 10 minutes.
  • Set aside.
  • Add salt and return to boil; add spaghetti and cook according to package directions.
  • Drain, and add to a large bowl.
  • Drizzle with remaining 2 tablespoons oil; toss to coat.
  • Top with cauliflower mixture, parsley, and lemon juice.
  • Gently toss to combine.
  • Sprinkle with panko and cheese; serve immediately.

This is a simple, yet different quick tasty dish to make for a weeknight dinner. Great as is served just as made, even better topped with the optional ingredients. To increase servings for each 1/4 pound meat add 1 1/2 c. hashbrowns

12 ounces bulk Italian sausage
5 cups frozen hash browns (shredded)
1 small onion, diced
2 garlic cloves, crushed
salt and pepper
3/4 cup freshly shredded parmesan cheese (optional)
1 cup marinara sauce, warmed (optional)

Steps:

  • Cook sausage, onion, garlic in a large skillet until almost brown.
  • Add hashbrowns, garlic and salt and pepper.
  • Cook until as crispy as you like,flipping mixture as needed.
  • Make sure to check that you won't need additional oil to prevent sticking (depends on sausages grease content). This takes approximately 10-15 minutes.
  • If using optional ingredients: once crispiness has been achieved. Top hash with Parmesan cheese. Cover and let set until cheese is melted (approximately 3 minutes).
  • Serve with marinara sauce drizzled over all.

4 cups plum tomatoes, seeded and chopped

1 lb penne (or other like pasta)

Steps:

  • Saute onion and garlic in olive oil until transparent.
  • Add tomatoes, eggplant and basil. Cook approximately 30 minutes.
  • Meanwhile cook pasta according to package directions; drain well.
  • Add tomato/eggplant mixture to pasta; add mozzarella cheese and stir well.
  • Serve immediately.

- BEAU MONDE INGREDIENTS
1/2 cup(s) lowfat milk
1 teaspoon(s) oregano
1/4 teaspoon(s) pepper
1.5 teaspoon(s) beau monde seasoning
8 ounce(s) shredded mozzarella cheese, divided
2 - thinly sliced tomatoes, divided
1 small thinly sliced onion, divided
1 teaspoon(s) celery seed

Steps:

  • Prepare Beau Monde seasoning: In a small mixing bowl, mix together all ingredients. Pour into a tightly closed jar and store in a cool, dry place.
  • Prepare a shallow 6 cup casserole with a little margarine or spray oil.
  • Layering in order listed, place first 7 ingredients in casserole; use half the amounts for the first 4 ingredients (those marked \"divided\").
  • Then layer the remaining amounts of the first 4.
  • Pour milk over top.
  • Cover with foil, but loosely, so steam can escape.
  • Bake 425 degrees for 25 minutes.
  • Remove foil.
  • Bake 5 more minutes.
  • Remove and let stand a minute or two before cutting.
