Hard-boiled eggs are easy to make, but they're also easy to mess up! This method makes perfect hard-boiled eggs (without the green ring) every time.

Steps:

  • Place the eggs in a saucepan in a single layer, and fill the pan with enough cold water so that it covers the eggs by about an inch.
  • Bring to a rolling boil over high heat, then remove the pan from the heat, cover, and let stand for 10 minutes.
  • Carefully pour out the hot water; place the pan in the sink and run cold water over the eggs until the pan is lukewarm, 1 to 2 minutes. Drain and refill with cold water; let stand until the eggs are room temperature, about 10 minutes. Gently crack the eggs all over and peel under running water.
  • Make Ahead: Eggs can be cooked and peeled 3 days ahead. If you keep the eggs in their shell, they can last for up to a week. Store in an airtight container in the refrigerator.
  • Tip: When peeling an egg, start at the wider end -- there's usually a small air pocket in there, which makes the egg shell easier to remove.

I was recently sent a very sweet "We miss you" card from friends that I appreciated very much. The well-wishings were on a card with a lovely country fireside photo of Shumway Mansion's "Yummy Eggs" and included the quote: "Love and eggs are best when fresh." (A Russian proverb.) :) "One of the Northwest's most outstanding 'inner city' bed and breakfasts is the award winning Shumway Mansion. Entirely furnished in period antiques, the 23 room home was built in 1909, winning the 1986 award from the Washington Trust for Historic Preservation. Overlooking Juanita Bay and only minutes from nature trails and jogging paths, the Shumway's breakfasts are as legendary as the special dinners and wedding receptions set in the beautiful rose garden." Included on the back of the card was this recipe. Editor's Note: We received an update on the Shumway Mansion. "My family closed the Shumway Mansion Bed and Breakfast Inn and Wedding Reception Center a couple of years ago and we are now converting Shumway Mansion into an Adult Family Home in Kirkland, Washington. Our new website is shumwaymansion.net We're looking forward to using many of my old B&B recipes for our new residents.

1 lb bacon, cooked and crumbled
1 1/2 cups shredded swiss cheese
6 eggs, beaten slightly
2 cups milk
2 7/8 ounces French-fried onions (Durkee French Fried Onions)
sour cream, for garnish
chopped chives, for garnish

Steps:

  • Preheat oven to 350 degrees F; butter a 9-inch deep dish pie plate.
  • Sprinkle the cooked and crumbled bacon in the bottom of the pie plate, then sprinkle over the cheese.
  • In a bowl mix together the eggs and milk, then pour the mixture over the bacon and cheese in the plate.
  • Sprinkle the onions on top.
  • Bake in 350 degree F oven for 35 to 45 minutes or until set in center and a knife inserted in the middle comes out clean.
  • Cut into wedges, garnish with sour cream and chives, and serve.

EGG SAMMIES FOR A CROWD

One sheet tray and you have a classic B.E.C. (bacon egg and cheese) for everyone.

Yield 24 sandwiches

Number Of Ingredients 7

1 pound bacon
1 cup milk
1 dozen large eggs
Kosher salt and freshly ground black pepper
One 24-count package Hawaiian sweet rolls
8 slices American cheese
Ketchup, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Weave the bacon into an approximately 10-inch square on a cooling rack. Put the cooling rack with the bacon on a baking sheet. Bake until partially cooked, 15 to 20 minutes
  • Meanwhile, whisk together the milk, eggs, 1 1/2 teaspoons salt and several grinds of pepper in a large bowl.
  • Remove the cooling rack with the bacon and set aside. Spread the rendered fat on the baking sheet with a pastry brush. Pour the whisked eggs onto the baking sheet and bake for 5 minutes. Remove from the oven and stir until fluffy. Bake until set but not dry, another 5 minutes.
  • Using a serrated knife, slice the entire package of sweet rolls in half, keeping them attached to each other. Top the bottom halves with the cheese. Spoon the scrambled eggs onto the cheese. Transfer the bacon lattice on top of the eggs and top with the other half of the rolls. Cut into individual servings and serve with ketchup.

I was recently web searching for a recipe and came across this one which I plan on making for the upcoming holiday.

1/8 teaspoon salt
1 teaspoon vanilla
1 teaspoon vinegar
3 egg whites
1 cup sugar

Steps:

  • Beat all ingredients together well. Then beat in slowly 1 cup sugar, 1/3 cup at a time.
  • Beat until mixture forms very stiff peaks.
  • Line cookie sheet with waxed paper.
  • Divide meringue into 8 circles on waxed paper. Slightly hollow out centers and make a stand-up ridge around outside of meringue shells.
  • Bake at 300 degrees for 45 minutes.
  • Let cool on pan.
  • To serve, fill shells with vanilla ice cream and top with sweetened sliced strawberries.
