2 large heads broccoli with long stems
2 tablespoons olive oil, divided
salt and ground black pepper to taste
2 cloves garlic, minced
1 pound raw shrimp, peeled and deveined
2 tablespoons dry white wine
2 tablespoons lemon juice

1 tablespoon minced fresh basil
1 tablespoon chopped fresh chives
½ teaspoon crushed red pepper

Steps:

  • Cut off broccoli florets and save for another use. Cut woody ends off the stems. Shave large knots off the stems using a vegetable peeler so that they are as uniform as possible. Cut into noodles using the smallest blade on a spiralizer.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add broccoli noodles, salt, and pepper; toss for 3 minutes. Remove from heat and set aside.
  • Heat remaining olive oil and garlic in a separate skillet over medium heat. Cook for 1 minute. Add shrimp and cook until opaque, about 3 minutes per side. Transfer shrimp to a bowl.
  • Add wine, lemon juice, butter, basil, chives, and red pepper to the skillet. Whisk over medium heat for 3 minutes. Return shrimp to the skillet and toss to coat.
  • Spoon broccoli noodles into 4 serving bowls. Top with shrimp mixture.

1 lb large shrimp (de-veined and peeled, leaving tails attached)
1 Tbsp peanut (or plan cooking oil for stir-frying)
1/2 Tbsp light soy sauce
1/2 Tbsp dark soy sauce
1/4 tsp finely ground Szechuan (Sichuan peppercorns)
1/2 tsp Shaoxing wine (or sherry)
1 Tbsp corn starch
¼ cup peanut oil (you may also use canola oil)
2 Tbsp dried red pepper flakes
1 Tbsp peanut (or plan cooking oil for stir-frying)
1 Tbsp ginger (minced)
2 cloves of garlic (minced)
2 small shallots (thinly sliced)
1/2 each red (yellow and green bell peppers, cut into 1-inch pieces)
2 cups broccoli florets
3 green onions (scallions, cut into ½" pieces on the diagonal)
1 tsp finely ground Szechuan (Sichuan peppercorns)
1/2 Tbsp Shaoxing wine (or sherry)
1 Tbsp low sodium soy sauce
1/2 tsp sea or kosher salt
1/2 Tbsp honey
1 Tbsp sesame oil
1/2 Tbsp corn starch

Steps:

  • Combine shrimp marinade ingredients in a large bowl, add the shrimp, mix well and set aside.
  • Prepare hot chili oil by heating the oil in a sauce pan until it just starts to smoke, then pour the hot oil over dry chili flakes in a small glass or metal container. Let cool down then strain into a separate container. The hot chili oil can be prepared hours, even days in advance. If making ahead, let the chili flakes soak in oil for hours before straining - this will give you more flavor and heat.
  • Heat one tablespoon of peanut oil in a wok. Add the shrimp with the marinade and stir-fry, stirring frequently, until she shrimp just starts to turn pink, about 2-3 minutes. Do not overcook. Transfer the shrimp into a bowl and set aside.
  • In the same wok, heat another tablespoon of peanut oil. Add the ginger, garlic, shallots and one teaspoon (or more, see note) of hot chili oil. Saute for about 30 seconds, then add the broccoli, bell peppers and the stir fry sauce. Stir fry for about 3-5 minutes, until broccoli is cooked. Add the scallions, sesame oil and the shrimp and saute for another minute, mixing all the ingredients well.
  • Serve hot, as is or with a bowl of jasmine rice.

12 sized 16 to 20 count shrimp ((or 12 ounces / 340 grams of whatever shrimp you have on hand; peeled, deveined, and butterflied))
10 ounces broccoli florets ((285g))
1/2 cup low sodium chicken stock ((120 ml, warmed))
1/4 teaspoon granulated sugar ((or brown sugar))
1 1/2 tablespoons soy sauce
1/2 teaspoon dark soy sauce
1 tablespoon oyster sauce
1/2 teaspoon sesame oil
1/8 teaspoon white pepper
2 tablespoons canola oil
2 cloves garlic ((chopped))
1 tablespoon Shaoxing wine
1 1/2 tablespoons cornstarch ((mixed with 2 tablespoons water into a cornstarch slurry))

Steps:

  • First, prepare the shrimp and broccoli. Next, in a medium pot, set 4 cups of water to a boil. While that's happening, mix the chicken stock, sugar, soy sauces, oyster sauce, sesame oil and white pepper and set aside.
  • Blanch the broccoli for 30 seconds. Remove and drain. Let the water return to a boil, and blanch the shrimp for 15 seconds. Remove and drain. The shrimp will be about 60-70% cooked.
  • Heat the wok over high heat. Pour 2 tablespoons of canola oil around the perimeter of the wok, stir in the garlic, and add the Shaoxing wine. Next, add the chicken stock mixture. Bring the sauce up to a boil, and add the shrimp and broccoli back to the wok.
  • Once everything comes to a boil, drizzle in the cornstarch slurry until the sauce thickens and starts to cling to the shrimp and broccoli. There should not be any standing sauce, although you can adjust this depending on your personal preference. Serve with steamed white rice!

Shrimp- one pound uncookend and prepared as indicated above (cleaned etc. Medium or large shrimp work well in this recipe.)
Ground Ginger- 2 teaspoons.
Soy Sauce- 1 tablespoon. Feel free to use low sodium soy sauce .
Chicken Broth- 1 cup. Feel free to use a reduced-sodium chicken brothor vegan broth such a one of these instead.
Cornstarch- 1 teaspoon. Additional as needed.
Garlic- 4 cloves minced. That is about four teaspoons. If you really enjoy your garlic (feel free to add additional as desired.)
Oil- 1 1/2 tablespoons. Peanut oil or olive oil are good choices.
Broccoli- 1 bag (12 ounce florets. That is about four cups of broccoli. Your broccoli should be at room temperature (not frozen).)

Steps:

  • Clean and drain the shrimp as directed above. Set the shrimp aside on a clean plate or similar holding area.
  • Next, in a small mixing bowl or medium mixing bowl, whisk together the ground ginger, soy sauce, broth, and cornstarch. Set this bowl aside.
  • Heat the oil in a large skillet or wok on medium-high heat. Add the garlic and cook until it is fragrant (should not be browning). This is about 45 seconds to one minute.
  • Reduce the heat to low and add the liquid mixture (broth etc) from the second step bowl. Once this begins to bubble you can add the shrimp. Cook this shrimp, stirring, until it has turned pink (about four to five minutes).
  • Stir in the broccoli and cook, stirring until thickened. This should take three to four minutes. If you feel as if your mixture needs more thickening, feel free to stir in an additional teaspoon (or as needed) of cornstarch until you reach your desired consistency.
  • Serve immediately.

  • In a bowl, combine shrimps, corn starch and Chinese cooking wine. Massage shrimps to fully coat and marinate for about 8 to 10 minutes. Drain shrimps well, squeezing any excess liquid.
  • In a sauce pot over medium heat, bring about 1 quart of salted water to a boil. Add broccoli and carrots and cook for about 1 to 2 minutes or until tender yet crisp. With a slotted spoon, remove from pot and plunge into a bowl of ice water until completely cold. In a colander, drain well.
  • In a wide, heavy-bottomed pan over high heat, heat 1 tablespoon of the oil. Add shrimps and cook, turning as needed, just until color changes. Remove from pan and drain on paper towels.
  • Wipe down the surface of the pan if needed. Increase heat to high and add the remaining 1 tablespoon of oil. Add onions and garlic and cook, stirring regularly, for about 30 seconds or until softened.
