1 pound peeled and deveined shrimp, tails on
2 cups cherry tomatoes
2 cloves garlic, thinly sliced
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1/2 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the shrimp, cherry tomatoes and garlic on a baking sheet, then drizzle with olive oil and toss. Season with salt and pepper.
  • Roast until the shrimp are opaque and the tomatoes begin to burst, 10 to 12 minutes. Finish with a squeeze of the lemon half.

1 pound large shrimp, peeled and deveined
½ teaspoon kosher salt, divided
½ teaspoon ground black pepper, divided
1 pint cherry tomatoes
4 garlic cloves, minced
⅛ teaspoon red pepper flakes
¾ cup dry white wine
3 tablespoons fresh thyme, minced
1 (8.8 ounce) package UNCLE BEN'S® READY RICE® Whole Grain Brown
1 tablespoon unsalted butter

Steps:

  • Heat oil in a large heavy skillet over medium-high heat. Season shrimp with 1/4 teaspoon salt and 1/4 teaspoon pepper. Add shrimp to pan and cook 2 to 3 minutes or until pink, turning halfway through. Using a slotted spoon, transfer shrimp to a plate and set aside.
  • Add tomatoes, garlic, and red pepper flakes to skillet; cook 30 seconds or until fragrant. Add wine and thyme; cook 3 minutes or until wine is slightly reduced, stirring occasionally. Stir in rice, butter, remaining 1/4 teaspoon salt and 1/4 teaspoon pepper; bring to a simmer. Cook about 2 to 3 minutes or until rice is heated through. Return shrimp to pan. Serve immediately.

1/2 cup zucchini slices, cut in half
1/2 cup matchlike red pepper sticks (1 inch long)
1/4 cup KRAFT Greek Vinaigrette Dressing
1/4 cup ATHENOS Traditional Crumbled Feta Cheese
1 Tbsp. chopped fresh parsley
8 toasted French bread slices

Steps:

  • Heat oven to 400ºF.
  • Combine shrimp, zucchini and peppers in medium bowl. Add dressing; mix lightly.
  • Cover rimmed baking sheet with parchment. Spoon shrimp mixture onto half the parchment-covered sheet. Fold parchment in half; crimp edges to seal
  • Bake 18 to 20 min. or until shrimp turn pink. Carefully open parchment packet. Top shrimp mixture with cheese and parsley.
  • Serve with the bread.

3 tablespoons olive oil
1/4 teaspoon dried basil
1 cup cherry tomatoes, halved
2 teaspoons lemon juice
2 cloves garlic, minced
1/4 teaspoon dried oregano, crushed
2 tablespoons grated parmesan cheese
1 tablespoon parsley

Steps:

  • Heat olive oil in a 10 inch skillet over medium high heat.
  • Add shrimp, garlic, oregano& basil.
  • Cook 3 minutes until shrimp turn pink, stirring frequently with wooden spoon.
  • Add tomatoes and lemon juice.
  • Cook and stir about 30 seconds or until heated through.
  • Sprinkle with cheese and parsley.

I'm doing a clean-up in all my magazines and I'm posting some recipes for safe-keeping. This one is from Coup de Pouce.

4 teaspoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cups cherry tomatoes, halved
1/3 cup black olives, roughly chopped (kalamata)
4 garlic cloves, finely chopped
2 teaspoons lemon zest, grated
1 lb shrimp, peeled, tail on
1/4 cup Italian parsley, chopped

Steps:

  • Set the barbecue to medium-high heat. Cut 4 pieces of foil paper of 32 inch x 12 inch. Fold each piece in 2 in a way to obtain 4 rectangles of 16 inch x 12 inch. Generously, put oil on the foil or spray with Pam.
  • In a large bowl, mix half oil, salt and pepper. Add cherry tomatoes and olives and stir. Distribute this mixture on the rectangles of foil paper, leaving each half of rectangle empty. In the same bowl, mix garlic, lemon zest and remaining oil, salt and pepper. Add shrimps and stir to coat well. Distributes the shrimps on the tomatoes. Fold the foil paper on the shrimps in a way to form a papillotte and seal hermeticaly.
  • Put the papillottes on the grill of the barbecue and cook 12 to 15 minutes or until shrimps are pink. Slowly open the papillottes and pour in plates. Sprinkle each serving with parsley.
