HOT CRAB PINWHEELS

Steps:
- Beat cream cheese until smooth; stir in crab, red pepper, cheese, green onions, parsley and cayenne. Spread 1/3 cup filling over each tortilla; roll up tightly. Wrap in plastic, twisting ends to seal; refrigerate at least 2 hours. , To serve, preheat oven to 350°. Unwrap rolls; trim ends and cut each into 6 slices. Place on baking sheets coated with cooking spray. Bake until bubbly, about 10 minutes. Serve warm.

FESTIVE SHRIMP PINWHEELS

Steps:
- Heat oven to 350°F. Spray cookie sheet with cooking spray.
- If using crescent rolls: Unroll dough; separate dough into 4 rectangles. Firmly press perforations to seal. If using dough sheet: Unroll dough; cut into 4 rectangles.
- Spread cheese over each rectangle. Sprinkle each with shrimp and onions; press in lightly.
- Starting with one short side, roll up each rectangle; press edge to seal. With serrated knife, cut each roll into 8 slices; place cut side down on cookie sheet.
- Bake 15 to 20 minutes or until edges are golden brown. Immediately remove from cookie sheet. Serve warm.

TASTY CRAB N CREAM CHEESE PINWHEELS
These are a very tasty appetizer or anytime snack...I first made them for a New Years Eve party, and got rave reviews...I adapted this recipe from a ham type pinwheel my Aunt always made...my family has come to love this one even better... Enjoy!

Steps:
- 1. In a medium sized bowl; beat cream cheese until smooth. Fold in the parsley, red pepper, sauce, onion, cheese and crab. Sprinkle with desired chili powder.
- 2. Lay out your tortilla's Spread about 1/4 cup onto each tortilla.
- 3. Roll tightly. I cut the ends with kitchen shears.
- 4. Wrap tightly in plastic wrap and refrigerate for about 2 hours.
- 5. Preheat oven to 350 degree F. Slice each roll into 5 - 6 slices and place on a sprayed baking sheet.
- 6. Bake for 10 - 15 minutes or until bubbly. Sprinkle with paprika and enjoy!

- In a medium-size mixing bowl, combine cream cheese, ranch dressing mix, and green onions. Spread this mixture on each tortilla. Sprinkle red pepper, celery, black olives, and cheese (if you'd like) over the cream cheese mixture. Roll up the tortillas, then wrap them tightly in aluminum foil.
- Chill 2 hours or overnight. Cut off ends of the rolls, and slice the chilled rolls into 1 inch slices.

- Stir in catsup, horseradish, lemon peel, lemon juice, and chili powder.
- On one tortilla spread 1/4 cup of the avocado mixture, leaving 1-inch border around the edges. Top with a layer of spinach. Sprinkle with a scant 2 tablespoons almonds and about 1/4 cup shrimp.
- Roll up tightly. Secure with a party pick, if necessary, to prevent unrolling.
- Repeat with remaining tortillas, avocado mixture, spinach, almonds, and shrimp.
- Place rolled tortillas on a tray or platter. Cover and chill up to 4 hours before serving.
- To serve, cut each rolled tortilla into 1-inch slices, discarding ends. Secure with party picks, if necessary. Arrange slices on a serving platter.

QUICK AND EASY SEAFOOD PINWHEELS
My daughter and I loved seafood and wanted to take an easy serve snack to a friends. I came up with this.

- 1. Combine cream cheese, sour cream, and cocktail sauce. Stir until smooth. Add green onions if you like them. If you are using the shrimp it can be mixed in at this time. Spread the mixture on tortillas. If you are using the crab sticks they will be rolled into the center of each roll up. You will need 1 ½ to 2 per roll up depending on the size of your tortillas. Once you have them rolled up wrap each one in plastic wrap. It is best if they sit an hour before serving. These can be made a couple days in advance. Slice in 1/2 to 1 in. slices. You can serve it with a dot of cocktail sauce on top of each one.
- 2. Alternative Cracker spread: Mix cream cheese and sour cream. Spread on a plate. Spread cocktail sauce on top of that. Sprinkle 1 can of baby shrimp on top. Serve with your favorite crackers.
