1 lb small shrimp (peeled uncooked)
3 tbs unsalted butter (divided)
10 oz condensed cream of mushroom soup
2 large button mushrooms (chopped)
1 clove garlic (finely minced)
1 cup heavy cream
Kosher salt and black pepper to taste
2 tbs grated Parmesan -OR- Romano cheese
cooked basmati rice

Steps:

  • Melt 2 tbs of the butter in a large skillet over medium-high heat. Add the shrimp and cook until it's pink and opaque on both sides; remove from pan and set aside.
  • Add the remaining tablespoon of butter to the pan. Turn the heat up to hight. Add the chopped mushrooms and garlic, cooking until the mushrooms begin to sear.
  • Mix the soup and cream in a small bowl, then pour into the pan. Add the cheese and heat until the soup mixture just begins to boil. Place the shrimp back in the skillet and heat through. Garnish with some chopped fresh parsley if desired.
  • Serve immediately over basmati rice.

3 Tbsp Olive Oil
3 medium tomatoes
5 cloves of garlic (pressed)
1 Lb Mushrooms
1 medium onion (finely diced)
1 tsp salt
1 Tbsp sweet chili sauce
½ cup sour cream (not low fat)
1 Lb large shrimp (peeled and deveined (I left the tail on for effect))
1 1/2 cups reduced sodium chicken broth
1 tsp sea salt

Steps:

  • In a large heavy bottom skillet or a WOK, combine your diced tomatoes and pressed garlic with 3 Tbsp olive oil and simmer uncovered over medium heat until tomatoes are soft and release their juices (10-12 min). Remove your tomatoes and set aside.
  • In the same skillet over med/high heat, caramelize your diced onions and sliced mushrooms then add the tomato mixture back into the same pan.
  • Add 1 tsp salt, 1/2 cup sour cream and 1 Tbsp chili sauce. Stir to combine. Add in 1 1/2 cups chicken broth and stir to combine.
  • Bring your sauce to a simmer over med/high heat and add in the shrimp. Turn the shrimp a couple times in the sauce while cooking and simmer until shrimp is cooked through. Don't overcook or your shrimp will turn rubbery.
  • Let the sauce cool down a little bit (it will thicken a little as it cools) then serve over your favorite plain rice, pasta or mashed potatoes.

1 pound uncooked medium shrimp, peeled and deveined
3 cloves garlic, finely chopped
1 pinch salt to taste
1 pinch dried basil, or to taste
1 pinch paprika, or to taste
1 (8 ounce) package sliced fresh mushrooms
1 cup half-and-half
¾ cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ (16 ounce) package dry fettuccine pasta
1 pinch red pepper flakes, or to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Immediately add shrimp and garlic; cook until shrimp is pink, 3 to 4 minutes. Sprinkle salt, basil, and paprika over shrimp. Cook and stir for 1 minute more, leaving shrimp slightly undercooked to finish cooking in the sauce.
  • Remove shrimp mixture from the skillet. Add mushrooms to the same skillet. Cook and stir, seasoning with salt, until juicy, about 5 minutes. Add the shrimp; immediately pour in half-and-half, mozzarella cheese, and Parmesan cheese. Bring to a boil. Reduce heat and simmer, constantly stirring, until cheese melts, 5 to 8 minutes. Cover with a lid and remove from heat.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. If cream sauce is too thick, add some pasta water in small amounts. Drain pasta and rinse with cold water. Add to the cream sauce.

1 shallot (chopped)
1/2 cup dry white wine
2 tablespoons lemon juice
1 tablespoon heavy cream
12 tablespoons butter (cold)
1/16 teaspoon white pepper
5 tablespoons butter
3/4 pound medium shrimp (rinsed and deveined)
1/2 teaspoon salt
2 tablespoons Cognac

Steps:

  • Gather the ingredients.
  • Simmer shallots, white wine, and lemon juice in a small saucepan over low-medium heat for 5 to 10 minutes, until mixture is reduced to about 2 tablespoons.
  • Add cream and bring to just under a simmer.
  • When first few bubbles rise, turn heat down very slightly and add 12 tablespoons of butter, 1 tablespoon at a time, whisking constantly. Be sure to allow 1 pat of butter to melt completely before adding the next.
  • Once butter is fully incorporated, season beurre blanc sauce with white pepper and set aside.
  • In a skillet over high heat, melt 5 tablespoons of butter, and then sauté shrimp, turning a few times until cooked through-about 3 to 4 minutes.
  • Reduce heat to low and season shrimp with salt. Carefully add Cognac (it may flame) and stir thoroughly.

LOL I was so excited to make this dish cause I love all these items and my new found love of cookin' with cognac and pancetta just put it over the top with flavor. I didn't have anyone to share this with...

1 lb large shrimp
8 oz pancetta
1/4 c onions, diced
6-8 large leaves of kale, chopped or torn (i use the whole leaf but if you want chop off stems)
1/3 c cognac
1/4 c butter
1 Tbsp garlic, minced
1/2 - 1 c fire roasted tomatoes, diced
3 to 4 Tbsp heavy cream (approx.)
1/4 c sour cream (approx.)
2 1/2 Tbsp tomato paste
8 - 12 oz baby bellas, sliced
1/2 box thin spaghetti or angel hair pasta (8 oz)

Steps:

  • 1. Saute your onions, pancetta for 5 or so minutes in butter and then add your chopped kale, garlic, baby bellas, and tomatoes. Add some of your cognac and cook for about 15 minutes with a lid on. Stirring occasionally & then add your tomato paste & remaining cognac. (If you need to you add a little water if necessary). Next, add your shrimp to cook through and your cream and sour cream to the sauce. It should be about 5 -7 minutes depending on the size of shrimp. Add your salt and pepper to taste as well. When you add your shrimp is when you will add your pasta to it's boiling water as it takes only about 6 minutes for al dente. Serve this on top of the pasta.

2 tablespoons butter
2 large shallots, minced
1 clove garlic, minced
2 tablespoons cognac
1/2 cup brown stock
1/2 cup heavy cream
1 cup sliced mushrooms
salt & freshly ground black pepper

Steps:

  • Melt the butter in a heavy medium-size saucepan over medium heat.
  • Add the shallots and garlic and saute until transparent, about 3 to 4 minutes.
  • Then add the cognac and flame.
  • To do this, remove the saucepan from the heat and touch a lighted match to the edge of the pan; the fumes of the cognac will ignite.
  • Holding the pan away from you, allow the flames to die down naturally.
  • Add the stock and cream and simmer over low heat until thickened, about 15 to 20 minutes.
  • Add the mushrooms and continue to simmer 3 to 5 minutes more.
  • Season with salt and pepper and serve immediately.

  • Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add onion; sauté until translucent, about 4 minutes. Add mushrooms; sauté until beginning to brown, about 3 minutes. Remove skillet from heat; add brandy. Carefully ignite; when flames subside, return to heat. Simmer until brandy is almost evaporated, about 1 minute. Add beef stock and chicken stock; boil 5 minutes. Add cream; boil until sauce coats spoon, about 14 minutes. Pour sauce into bowl; clean skillet.
  • Place flour in shallow dish. Sprinkle veal cutlets with salt and pepper; coat with flour. Melt 2 tablespoons butter in same heavy large skillet over high heat. Add 3 veal cutlets to skillet and sauté until brown and cooked through, about 2 minutes per side. Transfer veal to plate. Repeat with remaining veal cutlets. Cover veal to keep warm.
  • Melt remaining butter in same skillet. Add shrimp; sauté until just opaque in center, about 3 minutes. Pour sauce into skillet; stir until heated through, scraping up any browned bits. Divide veal among plates. Top with shrimp and sauce.

  • In a small skillet melt the butter and add sliced mushrooms with a pinch of salt, brown over medium heat to get some colour on them. (If mushrooms release too much liquid and are steaming instead of browning, turn up the heat.)

  • Prep work: Sprinkle ¼ tsp. salt and pepper on both sides of two 8 oz., 1-inch thick steaks. Allow the steaks to sit at room temperature for 15 minutes.   • Remove the skillet from heat and add ¼ cup Cognac to the pan. Return to the heat once added - be careful as it may flare up. Saute for 1-2 minutes to allow the alcohol to cook down, then add 1 Tbsp. Dijon mustard, 1 Tbsp. Worcestershire sauce, and ½ cup beef broth. Stir.
  • Add ¼ cup heavy whipping cream to the skillet. Stir and allow to cook for 5 minutes until the sauce thickens. Then, return the steaks along with any juices on the plate to the pan and cook for another 2 minutes or so.
