We had this for Easter dinner at my sister-in-law's house and she was kind enough to share the recipe with me. I'm planning on making this a lot this summer for a light dinner, but it would be perfect for a brunch, shower, or luncheon too!

1 1/2 lbs shrimp, peeled, deveined, and cooked
3/4 cup celery, thinly sliced
grape tomatoes (to garnish)
1 tablespoon capers
2 green onions, thinly sliced
4 garlic cloves, minced
1/4 cup frozen chopped spinach, well drained
2 cups mayonnaise (can use light or no-fat)
1 tablespoon Worcestershire sauce
1 tablespoon creole mustard
2 tablespoons lemon juice
1 dash Tabasco sauce
1/3 ounce anchovy paste

Steps:

  • Place shrimp and celery in a large bowl.
  • Combine all sauce ingredients and blend well.
  • Pour over shrimp mixture and toss well.
  • Arrange a serving of mixed greens of your choice on a serving plate and mound shrimp salad on greens.
  • Garnish with tomatoes and serve.

FRIED GREEN TOMATOES WITH SHRIMP AND REMOULADE SAUCE

3 cups vegetable oil
2 eggs
1 cup milk
10 ounces hot sauce (recommended: Crystal)
2 green tomatoes, 1/4-inch slices
1 cup all-purpose flour
2 cups Italian breadcrumbs
4 cups water
2 tablespoons dry crab boil seasoning
1 onion, sliced
1 lemon, sliced
2 ounces hot sauce (recommended: Crystal)
8 large shrimp, shell on
1/2 cup mayonnaise
1 ounce Creole mustard
1/2 ounce horseradish
1/2 ounce lemon juice
1 teaspoon Worcestershire sauce
2 slashes hot sauce (recommended: Tabasco)
Shredded lettuce, for serving

Steps:

  • For the tomatoes: Heat the oil in a deep frying pan or cast iron skillet to 350 degrees F. Beat the eggs, milk, and hot sauce in a shallow dish. Put the flour and breadcrumbs in 2 separate shallow dishes. Dip the tomato slices in the flour, then the egg wash, and then the breadcrumbs. Transfer to the oil and fry until golden brown, 1 to 2 minutes. Drain on paper towels and keep warm until ready to serve.
  • For the shrimp: Bring the water to a boil and add the crab boil, onions, lemons, and hot sauce. Stir and add the shrimp. Boil until the shrimp turn pink. Peel.
  • For the sauce: Combine the mayonnaise, mustard, horseradish, lemon juice, Worcestershire sauce, and hot sauce.
  • To serve: Line a plate with shredded lettuce. Add 2 slices fried green tomatoes. Top each tomato with 1 boiled shrimp. Fill a squeeze bottle with the remoulade sauce and drizzle decoratively.

1/4 cup Creole mustard (or other spicy mustard)
2 tablespoons ketchup
1/2 teaspoon Worcestershire sauce
1 teaspoon minced garlic
1/2 teaspoon fresh lemon juice
2 teaspoons paprika
1/8 teaspoon white pepper
Pinch of cayenne pepper
1 teaspoon sugar
Kosher salt
1/4 cup extra-virgin olive oil
1/2 cup minced celery
1/2 teaspoon minced fresh parsley
1/2 tablespoon minced onion
1/2 tablespoon finely chopped scallion (green part only)
1 tablespoon mayonnaise
Hot sauce, to taste
Kosher salt
1 lemon, thinly sliced
4 teaspoons hot sauce
2 bay leaves
1 carrot, sliced
1 teaspoon Worcestershire sauce
1 1/2 pounds medium shrimp, peeled and deveined (tails intact)
1 cup fine cornmeal
Kosher salt and freshly ground black pepper
1 cup buttermilk
1/2 cup vegetable oil
8 thick slices green tomatoes (1/4 to 1/3 inch thick)

Steps:

  • Make the remoulade: Mix the mustard, ketchup, Worcestershire sauce, garlic, lemon juice, paprika, white pepper, cayenne and sugar in a large bowl; season with salt. Whisk in the olive oil in a slow stream until blended. Whisk in the celery, parsley, onion, scallion, mayonnaise and hot sauce. Cover and refrigerate until ready to serve.
  • Prepare the shrimp: Bring 2 quarts water to a boil in a large pot. Add 3 tablespoons salt, the lemon slices, hot sauce, bay leaves, carrot and Worcestershire sauce; boil 10 to 15 minutes. Add the shrimp and return to a boil, then reduce the heat and simmer until the shrimp are opaque and just firm, 5 to 7 minutes. Drain the shrimp and run under cold water to stop the cooking. Discard the carrot, lemon slices and bay leaves. Cover the shrimp and refrigerate until cold.
  • Fry the tomatoes: Mix the cornmeal, 1/4 teaspoon salt and teaspoon black pepper in a shallow dish. Put the buttermilk in another shallow dish. Heat the vegetable oil in a large deep skillet over medium-high heat. Dip the tomato slices in the buttermilk, then coat with the cornmeal, shaking off the excess. Fry until golden brown, 1 to 2 minutes per side.
  • Place 2 fried tomato slices on each plate. Top with the shrimp and drizzle with the remoulade.

1 teaspoon ketchup
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic
2 hard-boiled eggs
1 teaspoon paprika
1/2 teaspoon bay leaf powder
1 celery, diced
2 tablespoons chopped parsley
2 tablespoons chopped green onions
1 tablespoon creole mustard
1 teaspoon yellow mustard
1 tablespoon chopped onion
1 teaspoon lemon juice
1 teaspoon salt
1 cup olive oil
12 large shrimp, peeled and deveined
1 tablespoon olive oil
1 tablespoon spice essence
2 tablespoons white wine
1/2 lb angel hair pasta, cooked al dente
1/2 cup fresh grated parmigiano-reggiano cheese
salt and pepper
2 tablespoons chopped chives
2 tablespoons bell red peppers
2 tablespoons bell yellow peppers

Steps:

  • For the remoulade:.
  • In a food processor, puree all ingredients except for the oil until smooth.
  • With the machine running, slowly drizzle the oil in until the sauce is thickened.
  • Season the shrimp with Essence.
  • In a saute pan, heat the olive oil.
  • When pan is hot saute the shrimp for 2 minutes on each side.
  • Deglaze the pan with white wine.
  • Add the remoulade and simmer for 2 minutes.
  • In a pot of boiling salted water, cook the pasta for 2 minutes. Remove and drain.
  • Turn the pasta into a mixing bowl and season with cheese, salt and pepper.
  • Place a nest of the pasta in the center of the plate.
  • Place shrimp around the pasta.
  • Spoon the sauce over the pasta and shrimp.
  • Garnish with chives, cheese and peppers.

This recipe is from the blog Deep South Dish. Also, it is in my Southern Living Cookbook. This remoulade is maybe the best one I've had. A long list of ingredients, but most you'll have on hand. Plus, it comes together in the food processor.

2 lbs shrimp, peeled and deveined
2 -3 tablespoons , vegetable or 2 -3 tablespoons canola oil
3 -4 cups of shredded lettuce
1/2-1 cup remoulade sauce, made in advance
1 tablespoon of chopped parsley, for garnish
1/2 cup of chopped green onion
1/2 cup of finely minced celery
1 garlic clove, finely minced
2 tablespoons ketchup
1/8 cup of spicy creole mustard
1 tablespoon horseradish
1 cup mayonnaise
2 yolks from hard-boiled eggs, chopped
1/8-1/2 cup , white or 1/8-1/2 cup apple cider vinegar
1 tablespoon paprika
1 teaspoon cajun seasoning (like Slap Ya Mama) or 1 teaspoon cayenne pepper
couple dashes Worcestershire sauce
couple dashes hot pepper sauce
1 pinch thyme
1 pinch tarragon
couple pinches of chopped parsley
kosher salt and fresh cracked black pepper, to taste
1/4 cup extra virgin olive oil

Steps:

  • Pat shrimp until well dry. Heat 1 tablespoon of the canola oil in a cast iron skillet over medium high heat. Add the shrimp, cooking in batches and adding oil as needed for each batch. Lightly brown the shrimp on both sides, remove and set aside to cool, reserving a few of them to chop for garnish.
  • Transfer the shrimp to a small bowl and spoon the remoulade sauce over them; gently toss. Shred lettuce and place onto individual serving plates and remove the shrimp one at a time, allowing excess sauce to drip off. Arrange the shrimp on the shredded lettuce, top with a few of the reserved chopped shrimp and a sprinkle of parsley. Serve in martini glasses for a very nice presentation. Also great over fried green tomatoes, on a sandwich roll, or slid in between slices of fluffy French bread.
  • REMOULADE:.
  • Combine all of the ingredients except for the olive oil. Drizzle in the olive oil, a little at a time, while whisking briskly until mixture is well blended and reaches a nice creamy consistency. Can also process in a food processor for a smoother consistency, if desired. Taste, adjust seasonings, and refrigerate for several hours or overnight to thoroughly chill.
