Steps:
- Season the shrimp with salt and cayenne pepper.
- Heat up a cast-iron skillet, add the olive oil, garlic and lightly saute before adding the shrimp. Stir and cook until the shrimp is half cooked. Add the cilantro, butter, stir to combine well with the shrimp. Add the lime juice and continue to cook the shrimp. Turn off the heat when the lime juice dries up and the shrimp is nicely cooked and slightly charred on the surface. Serve immediately with some fresh lime wedges.

GARLIC BUTTER SHRIMP WITH CILANTRO AND LIME
Garlic shrimp cooked in a creamy cilantro lime butter sauce. Serve this as an appetizer, with pasta, over rice or in tortillas for tacos. The recipe is easy to adapt. Swap lime for lemon and try other tender herbs like parsley, dill, basil or tarragon in place of cilantro.

- Pat the shrimp dry then season with 1/4 teaspoon of salt and fresh ground black pepper.
- Use a microplane to zest the lime and set aside. Cut the zested lime in half ready for the sauce later in the recipe.
- Add one tablespoon of the butter to a wide skillet. Save the remaining two tablespoons for later.
- Place the skillet with butter over medium heat then add the garlic and coriander. Stir the garlic around the pan until the butter melts and is bubbling; about 1 minute.
- Add the shrimp, nestling them into the pan so that they are in one layer. A few shrimp stacked on top of each other is okay. Cook until the shrimp start to turn pink, about 1 minute.
- Stir in the scallions and lime zest. Continue to cook, stirring, until the shrimp are firm and opaque throughout; another 1 to 2 minutes. Slide the skillet off of the heat.
- With the skillet off of the heat, add the cilantro, juice from the lime and the remaining two tablespoons of butter. Stir the butter around the pan so that it melts into the lime juice making the creamy butter sauce.
- Taste then season as needed with salt and pepper. Serve with extra lime wedges on the side.

- Heat olive oil in a skillet over medium heat; saute onion until translucent, 1 to 2 minutes. Add garlic and saute until browned, 1 to 2 minutes.
- Stir salsa, red bell pepper, white wine, red chile pepper puree, lemon juice, and lime juice into onion mixture; bring to a boil. Reduce heat and simmer, 2 to 3 minutes. - Heat oil and garlic in a small saucepan over medium-low heat until fragrant and starting to bubble, 3 to 5 minutes. Let cool completely. Strain oil through a fine mesh strainer into an airtight container, and discard the solids.
- If you buy unwashed quinoa, rinse it under cool running tap water in as fine mesh sieve. Then spread it out on a clean dish towel to dry for 15 minutes. Once the quinoa is washed and dried, or if you have prewashed quinoa proceed with toasting the grain.
- Pat shrimp dry with paper towels, then toss with chile powder, pepper, and ½ teaspoon salt in a bowl. Heat 1 tablespoon garlic oil in 12-inch nonstick skillet over medium-high heat until just smoking. Add half of the shrimp in a single layer and cook, without stirring, until spotty brown and edges turn pink on bottom side, about 1 minute. Flip shrimp and continue to cook until all but the center is opaque, about 30 seconds. Transfer shrimp to a large plate. Repeat with remaining 1 tablespoon garlic oil and remaining shrimp; transfer to plate, and set aside.
- Return now empty skillet to medium high heat. Add tomatoes. Remaining 1 tablespoon lime juice, remaining 1/8 teaspoon salt, and remaining cilantro. Cook until tomatoes are just softened, about 1 minute. Stir in shrimp and cook until shrimp are opaque throughout, about 1 minute. Season with salt and pepper to taste. Transfer shrimp and tomatoes to individual plates and top with avocado. Serve with cilantro lime quinoa and lime wedges.
