CREAMY PARMESAN AND SPINACH SHRIMP
Protein rich shrimp are pan seared then tossed with a creamy spinach sauce that's perfectly flavored with fresh garlic and rich parmesan. Then finish it off with a bed of pasta and steamed or roasted asparagus or broccoli to complete the meal.

Steps:
- Sprinkle shrimp with basil, season lightly with salt and pepper and toss.
- Melt 1 Tbsp butter in a 12-inch non-stick skillet over medium-high heat.
- Add shrimp in a single layer and cook until bottom is pink, then flip and cook opposite side of shrimp until cooked through and pink, about 3 minutes total.
- Transfer shrimp to a plate then melt remaining 1 Tbsp butter in same skillet over medium heat.
- Add garlic and saute until just lightly golden brown, about 30 seconds then pour in chicken broth.
- Add spinach and stir and cook until it starts to wilt, about 1 minute.
- Stir in cream and cornstarch mixture and cook, stirring constantly, until mixture starts to simmer and thicken slightly, about 2 minutes.
- Stir in parmesan cheese and cook until cheese has melted, season lightly with salt if needed.
- Remove from heat and toss in shrimp. Serve over spaghetti or spaghetti squash if desired.

- Sprinkle shrimp with steak seasoning. On 4 metal or soaked wooden skewers, thread shrimp. - Preheat the oven to 375 degrees F.
- Squeeze all water from the spinach.
- Combine all ingredients, except bread crumbs and butter, in a bowl and stir carefully.
- In a casserole dish that has been sprayed with PAM, pour in the mix.
- Mix the bread crumbs with the melted butter and sprinkle them on top of the casserole.
- Bake for 45 minutes or until the casserole is firm.
- A substitution of 1 tablespoon of chopped fresh thyme for the dried thyme will make this dish slightly better.
SHRIMP WITH SPINACH, BACON AND BRIE
Steps:
- Bring pot of water large enough to cook pasta to a boil. In large saute pan, cook bacon over medium heat until crisp. Remove to paper towels to drain. Pour off bacon grease and wipe pan. Heat olive oil in pan and add spinach until wilted. Add shrimp and 1/2 of jar of pesto and return bacon to pan to heat through.Cook and drain pasta according to package directions. Put pasta in large bowl, toss with shrimp mixture and cubes of brie. Top with freshly grated parmesan and black pepper as desired.

- In a medium bowl, toss shrimp, garlic, rosemary, thyme, and oil. Set aside to marinate at room temperature for 30 minutes.
- Place bacon in a large skillet, and place over medium-high heat. Cook bacon, stirring occasionally, until almost all the fat is rendered, 6 to 7 minutes. Pour off and discard all but about 2 tablespoons of the bacon fat. - In a large skillet, on high heat, heat 2 tablespoons of olive oil until hot. Add shrimp and cook on one side on high heat for 1 minute. While it cooks, sprinkle the uncooked side of shrimp with salt, paprika and Italian seasoning. Flip the shrimp over, and cook on the other side for 1 minute on high heat. Reduce heat to medium, flip shrimp over again a couple of times, making sure all shrimp is covered in spices and until the shrimp turns pink in color, for a couple of minutes. Remove shrimp from the pan and keep shrimp warm.
- To the same pan (but without shrimp), add chopped tomatoes, garlic, half the bacon (already cooked and drained of fat), crushed red pepper flakes. Mix everything, and cook for about 1 minute, stirring everything on medium heat.
- Add half and half and bring to boil. Add another 1/4 teaspoon salt, stir. Only after half and half starts boiling, add Parmesan cheese (freshly shredded) and start stirring. Once the cheese start melting, immediately reduce heat to medium and stir, while simmering, until the cheese completely melts and the sauce becomes creamy, which should take 1 minute (at most 2 minutes). Then, reduce heat to low, add fresh spinach, cover with the lid and let the sauce sit, simmering on very low heat, for about 1 minute. Remove the lid, stir the sauce, the spinach should start to wilt, keep stirring on low heat, until the spinach wilts, for another minute.
