ROASTED SHRIMP AND PINEAPPLE WITH PEANUT SAUCE

Roasted Shrimp and Pineapple With Peanut Sauce image

This tangy version of Thai-style peanut sauce, bright with chile, lime, and ginger, is excellent with chicken and beef - and outstanding with shrimp. Here, the sauce is paired with sweet, juicy pineapple and succulent shrimp, which broil in minutes. It's a quick, satisfying dinner with the added bonus of leftover peanut sauce, which will keep well in the fridge for at least five days.

Provided by Melissa Clark

Categories     dinner, quick, main course

Time 30m

Yield 4 servings

Number Of Ingredients 14

1/2 cup smooth peanut butter, preferably natural
3 tablespoons unsweetened coconut milk
1 1/2 tablespoons lime juice, more as needed
2 teaspoons brown sugar
2 teaspoons soy sauce
2 teaspoons grated ginger
1 garlic clove, minced
1/2 teaspoon sriracha or other hot sauce
1/4 teaspoon plus a pinch kosher salt, more as needed
1 1/2 tablespoons peanut oil
1/8 teaspoon red-pepper flakes
1 pound cleaned large shrimp
2 cups pineapple chunks
Whole cilantro leaves and torn basil leaves, for garnish

Steps:

  • In a food processor or blender, combine peanut butter, coconut milk, 3 tablespoons hot water, lime juice, sugar, soy sauce, ginger, garlic, sriracha and a pinch of salt. Purée until smooth. Add more lime juice and or salt to taste. Scrape into a bowl.
  • Heat oven to 500 degrees. In a small bowl, whisk together peanut oil, remaining 1/4 teaspoon salt and red-pepper flakes. Thread shrimp on skewers; brush all over with half the peanut oil mixture. Thread pineapple on separate skewers; brush with remaining oil mixture. Arrange shrimp and pineapple skewers on a large rimmed baking sheet.
  • Roast skewers, turning them halfway through, until shrimp is opaque, about 5 minutes, and pineapple is lightly caramelized, about 10 minutes. (Use an oven mitt to remove shrimp skewers as they finish cooking but leave the pineapple in for longer). Sprinkle skewers with herbs and serve hot, with peanut sauce for dipping.

CRISPY HONEY PINEAPPLE ORANGE SHRIMP

Crispy Honey Pineapple Orange Shrimp image

Tired of the same ol' honey shrimp? Try a few CrAzY things to twist it up! Honey shrimp with a citrus and pineapple punch! I made due with what I had at home and they turned out GREAT!. The recipe was sparked/altered from the "Crispy Honey Shrimp" recipe on this site.

Provided by MrLowery

Categories     Chinese

Time 45m

Yield 2-4 serving(s)

Number Of Ingredients 16

1 lb shrimp, rinsed shelled, and de-veined
1/2 cup water
1/3 cup 1% low-fat milk
1/4 cup pineapple-orange juice
3 tablespoons minimum honey (I used 5-6)
2 tablespoons cornstarch (I don't own cornstarch) or 2 tablespoons sesame oil (I don't own cornstarch)
1 tablespoon toasted sesame oil (optional)
frying oil (skillet 1/2 inch full)
sesame oil (for second coating, 1/4 inch full skillet)
1 cup all-purpose flour
1 teaspoon cinnamon (optional)
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon sesame seeds
1 egg
1/2 lemon

Steps:

  • Sift the flour, salt, pepper, and cinnamon (optional) in a large bowl. Add water, milk, and egg and mix until a smooth batter. Set aside for 10-15 minutes.
  • Now is the time to prepare ahead and get any side items ready to be plated quickly. Once you begin battering and frying the shrimp it becomes difficult to keep up. ( I cooked egg noodles "8 minutes" added soy sauce and stir-fried fresh veggies during this time to make a complete meal).
  • Heat the frying oil skillet 1/2 inch full to med-med/high (can use more if you prefer).
  • Coat all shrimp in cornstarch or a sesame oil/toasted sesame oil mixture.
  • Add the coated shrimp to the large bowl of batter and coat well with batter.
  • Carefully drop battered shrimp into oil. (Make sure oil is not too hot, shrimp should turn a light to medium gold when done, turn every couple of minutes). Remove all shrimp onto tray covered with paper towels. Gently "dry" the shrimp. Keep warm.
  • Warm a skillet 1/4 inch full of sesame oil to medium.
  • Once oil is warm, add honey and pineapple orange juice while mixing constantly. Add the dried shrimp to mixture, squeeze lemon over shrimp, and sprinkle in sesame seeds. Mix & Toss well for a few minutes. Serve Immediately.
  • ***Don't want to waste the left over batter and oil? Try frying some of your veggies with your shrimp. I cooked mushrooms both fried and crispy honey pineapple orange style with the left over batter.

Yield 2 to 4 servings

Number Of Ingredients 11

1 cup orange juice
1 cup peeled prawns
1/4 cup sugar
3 slices cleaned pineapple, cut into pieces
1 vanilla bean, split lengthwise
6 tablespoons Sherry vinegar
1 teaspoon vanilla sugar
A few drops Worcestershire sauce

  • In a saute pan, add 1/4 cup of the sugar and the pineapple and cook over high heat for 30 seconds. Add the reserved orange juice and vanilla bean and cook for 3 minutes, until sugar is dissolved. Remove from the heat and let steep while you prepare the vinaigrette.
  • Whisk together the sherry vinegar, vanilla sugar, and Worcestershire sauce. Add in 2 tablespoons of the pineapple liquid. Slowly whisk in the olive oil. Season, to taste, with salt and pepper.
  • Place the greens on a platter. Remove the pineapple from the liquid and place on the greens. Top with the poached prawns. Drizzle with the vinaigrette.
