A shrimp stir fry recipe flavored with orange and ginger for a magnificent healthy dinner.

2 Tbsp coconut oil, or avocado oil
1/2 yellow onion, diced
2 large carrots, peeled and chopped
1/2 red bell pepper, cut into match sticks
1/2 yellow bell pepper, cut into match sticks
1 large crown broccoli, chopped into florets
4 cloves garlic, minced
2 tsp fresh ginger, peeled and grated
1 1/2 pounds raw shrimp, deveined
5 Tbsp coconut aminos, + more to taste
2 oranges, zested
2 Tbsp orange juice
1 Tbsp honey
1 Tbsp red chili sauce, such as sriracha
2 tsp tapioca flour
1/2 tsp red pepper flakes, optional
1 Tbsp sesame seeds
4 cups white rice, steamed
1 bunch green onion, chopped

Steps:

  • Heat the oil in a large skillet or wok over medium-high heat. Add the onion and carrots and sauté, stirring frequently, until vegetables begin to soften, about 3 minutes. Add the remaining vegetables and cook another 3 to 5 minutes, until they begin to soften.
  • Add the remaining ingredients in the order in which they appear on the ingredients list. Cook, stirring frequently, until the shrimp has cooked through and the sauce is thick, about 10 to 12 minutes. Taste for flavor and add more sea salt or coconut aminos to taste.
  • Serve shrimp stir fry over cooked white rice or brown rice or choice of zucchini noodles, cauliflower rice or vegetable rice of choice.

2 tablespoons green onions, minced
1 tablespoon fresh ginger, peeled and minced
1 tablespoon fresh cilantro, minced
2 tablespoons rice vinegar
2 tablespoons low sodium soy sauce
1 tablespoon vegetable oil
2 teaspoons orange rind, grated
1 red chili pepper, minced (optional)
1 lb large shrimp, peeled and deveined
2 oranges, peeled and quartered
cooking spray

Steps:

  • Combine first 9 ingredients in a bowl. Add shrimp; toss to coat. Cover and marinate in refrigerator for 15 minutes.
  • Remove shrimp from dish, reserving marinade. Thread shrimp and orange quarters alternately onto each of 8 skewers (8 inches in length).
  • Heat large grill pan, coated with cooking spray, over medium-high heat. Cook skewers 4 minutes on each side or until done, basting with reserved marinade.

The inspiration for this recipe is a dish called orange chicken that the family loves from their favorite take-out restaurant in Tulsa. Here the chicken has been substituted with shrimp, a perfect vehicle for citrus flavors.

1/2 cup orange juice
1 tablespoon grated ginger
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon cornstarch
1/2 teaspoon crushed red pepper
Splash of rice vinegar
Splash of sesame oil
Pinch kosher salt
1 clove garlic, grated
Vegetable oil, for frying
1/2 cup all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 large eggs
1 1/2 cups panko breadcrumbs
1 pound peeled and deveined jumbo shrimp, butterflied and tails removed
Rice, for serving
2 scallions, sliced thin, for garnish

Steps:

  • For the sauce: Put the orange juice, ginger, honey, soy sauce, cornstarch, crushed red pepper, vinegar, sesame oil, salt and garlic in a small nonstick skillet over medium heat and whisk thoroughly to incorporate the cornstarch into the liquid. If you have a few lumps remaining, that is fine. Heat until bubbling and starting to thicken, about 5 minutes. Remove from the heat and set aside.
  • For the crispy shrimp: Heat about 1/2 inch of vegetable oil in a nonstick skillet over medium heat to 350 degrees F.
  • Add the flour, salt and pepper to a shallow dish. Crack the eggs into a second shallow dish and beat well. Place the panko in a third dish. Bread the shrimp by dipping them first in the flour mixture and shaking off any excess, then in the egg and finally in the breadcrumbs, pressing to make sure each shrimp has an even coating.
  • Fry the shrimp in 2 batches, flipping halfway through, until golden, 1 to 2 minutes per side. Drain on a paper towel-lined plate.
  • Before serving, add the sauce to the bottom of a bowl. Add the shrimp and toss gently to coat. Serve over rice and garnish with the sliced scallions.

I bought a bottle of Trader Joe's Black Pepper Sauce and needed a way to use it! The bottle says: Trader Joe's Black Pepper Sauce is an authentic Thai stir-fry sauce. Add to a stir-fry with chicken, shrimp, or tofu, or use as a delicious marinade for chicken, beef, or pork. Trader Joe's Black Pepper Sauce ingredients: water, sugar, black pepper, garlic, soy sauce, rice bran oil, salt, modified tapioca starch, citric acid. ---- If you don't have a Trader Joe's nearby, you might substitute Lee Kum Kee Black Pepper Sauce!

16 ounces large raw shrimp (thawed, if frozen)
2 tablespoons trader joe's black pepper sauce (or substitute Lee Kum Kee Black Pepper Sauce)
1 inch fresh gingerroot (sliced very thin, then minced ~ or grate the ginger)
1 large navel orange (zest peel, then slice orange into segments)
1 tablespoon butter
1 tablespoon olive oil
1 teaspoon minced garlic
2 tablespoons soy sauce
1/4 cup dry sherry (ginger infused dry sherry even better!)

Steps:

  • In a bowl, combine the shrimp, black pepper sauce, grated ginger, orange zest, orange segments, and orange juice ~ marinate for 1/2 hour.
  • In a hot skillet or wok, melt the butter and olive oil, garlic, soy sauce, and sherry ~ saute for 2-3 minutes.
  • Add the marinated shrimp mixture.
  • Saute for about 3-4 minutes until shrimp turns pink.
  • NOTE: Sauce will be thin ~ you MIGHT be able to thicken it with a little cornstarch mixed with cold water, then add the cornstarch mixture to the hot sauce and simmer for 2-3 minutes while stirring, although I read that cornstarch doesn't react well to acidic ingredients so I have not tried to thicken this sauce with it. Perhaps I will buy some arrowroot and try that for this sauce!
  • Serve over cooked jasmine rice, with steamed broccoli, or green beans.

1 tablespoon minced fresh ginger
3 garlic cloves, minced
1/3 cup chopped green onion

Steps:

  • Place shrimp in medium bowl, sprinkle with cornstarch, toss well to coat and set aside.
  • Combine juice, soy sauce, honey, vinegar, and sambal, stirring until well mixed; set aside.
  • Heat canola oil in large nonstick skillet over med-hi heat. Add minced ginger and garlic, stir fry for 15 seconds or until fragrant. Add shrimp mixture, stir-fry for 3 minutes. Add juice mixture and onions, cook 2 minutes or until sauce thickens and shrimp are done, stirring frequently.
  • Serve immediately.

12 jumbo shrimp, shelled and deveined (tails intact.)
1/4 cup butter
1 cup freshly squeezed orange juice
2 tablespoons sherry wine
1 teaspoon orange zest
2 scallions, tops and white, minced
1 teaspoon gingerroot, freshly grated

Steps:

  • Soak 12 long wooded skewers in water for 30 minutes.
  • Push skewers through shrimp lengthwise from top to tail, 1 shrimp per skewer.
  • Combine all other ingredients in saucepan and cook over low to medium heat, stirring, until butter is completely melted.
  • Dip skewered shrimp in orange sauce and position on oiled grill rack about 4 inches above the coals.
  • Baste liberally with sauce and grill for 2 minutes.
  • Turn shrimp over and baste again, cooking for another 2 minutes.
  • Smaller shrimp will be done at this point, but continue basting and turning larger shrimp until they are pink and cooked through.
  • Remove from heat immediately when done, as they will get tough if overcooked.
  • Use any remaining sauce for a dip for shrimp.
