We just love our zucchini pasta at home. I go every Sunday to our farmers market and stock up! Today I even had some leftover fresh spinach from the week and decided to add it in as well. You can omit, but if you have spinach or any other leftover veggies, go ahead and add them in! Enjoy.

½ pound large shrimp, peeled and deveined
salt and freshly ground black pepper to taste
2 ½ tablespoons olive oil, or to taste, divided
2 zucchini
1 clove garlic, minced
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
1 lemon, zested, or to taste
½ cup fresh spinach
¼ cup chicken broth
1 tablespoon capers, drained

Steps:

  • Season shrimp lightly with salt and pepper.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp; cook until opaque, 2 to 3 minutes per side. Transfer to a bowl.
  • Cut zucchini into noodles using a spiralizer fitted with the large shredding blade. Chop up into slightly shorter pieces.
  • Heat 1 tablespoon olive oil in the same skillet over medium heat. Add zucchini noodles, garlic, 1/2 teaspoon sea salt, and 1/4 teaspoon pepper. Cook and stir until slightly softened, 2 to 3 minutes. Add lemon zest, spinach, and chicken broth. Cook until liquid reduces by 1/4, about 5 minutes. Stir in the shrimp and capers. Cook until shrimp is warmed through, about 1 minute more. Drizzle the remaining olive oil on top.

16 jumbo shrimp, unpeeled, legs removed (about 1 3/4 pounds)
1/2 cup extra-virgin olive oil
1 tablespoon grated peeled ginger
1 teaspoon hot paprika
Sea or kosher salt and freshly ground pepper
1 lemon, thinly sliced
1 medium zucchini, cut into 2 1/2-by-1/2-inch sticks
1/4 cup finely chopped fresh parsley
Toasted sourdough bread, for serving

Steps:

  • Preheat the broiler. Use a sharp knife to make a slit through the shell along the back of each shrimp. Remove the vein, leaving the shell intact. Rinse and pat dry, then transfer to a large bowl.
  • Whisk 1/4 cup olive oil, the ginger, paprika, 2 teaspoons salt, and pepper to taste in a bowl. Add half of the dressing to the bowl with the shrimp and toss. Add the lemon and zucchini to the remaining dressing and toss, then spread on a large foil-lined baking sheet. Broil until the lemon and zucchini begin to brown, 5 to 7 minutes. Add the shrimp and broil until the shells are pink, about 3 minutes. Turn the shrimp, lemon and zucchini and broil 3 to 4 more minutes.
  • Whisk the remaining 1/4 cup olive oil, the parsley and a pinch of salt in a small bowl. Divide the shrimp, lemon and zucchini among plates and drizzle with the parsley oil. Serve with bread.

12 oz dry angel hair pasta
3 Tbsp olive oil
3 Tbsp unsalted butter
Salt and freshly ground black pepper

3 Tbsp fresh lemon juice
3 Tbsp chopped fresh basil
3 Tbsp chopped fresh parsley
1/2 cup finely shredded parmesan

Steps:

  • Cook pasta in salted water according to directions listed on package (keep in mind it will only take about 4 minutes so I recommend adding the pasta to water when you begin cooking the shrimp), reserve 1/2 cup pasta water before draining.

1/2 lb angel hair pasta
2 tablespoons extra virgin olive oil
1 lb medium shrimp, peeled and deveined (can be cooked or uncooked, see steps for instructions for each)
2 teaspoons garlic, chopped
1 teaspoon salt
1 teaspoon pepper
1 cup chicken broth (can substitute half with white wine to increase flavor)
1/8 teaspoon crushed red pepper flakes
1 tablespoon lemon peel, grated fresh
1/4 cup lemon juice, squeezed fresh
1/2 cup Italian parsley, chopped
1/3 cup parmesan cheese, grated

Steps:

  • Cook pasta according to package instructions and drain.
  • While pasta cooks, heat one tablespoon of the olive oil in a large skillet over medium-high heat. Add the garlic, shrimp (if using uncooked shrimp), and 1/2 tsp each of salt and pepper. Saute two minutes or until shrimp are barely pink and/or garlic is soft.
  • Add broth and crushed red pepper. Increase heat to high.

½ teaspoon kosher salt (plus more as needed)
¼ teaspoon black pepper (freshly grated, plus more if needed)
3 tablespoons olive oil (divided)
2 cups zucchini (⅛-inch thick slices)
1 cup grape tomatoes (cut in half)
2 cloves garlic (minced)
⅛ teaspoon red pepper flakes
zest of one lemon (about 1 teaspoon)
2 tablespoons lemon juice
8 ounces pappardelle pasta (fresh or dried)
1 tablespoon Italian parsley (chopped)

Steps:

  • Bring 3 to 4 quarts of salted water to a boil for the pasta. While the water comes to a boil, prepare the shrimp.
  • Season shrimp with ¼ teaspoon salt and ¼ teaspoon pepper, stir to combine.
  • In a large sauté pan, heat 1 tablespoon of oil over medium heat.
  • Add sliced zucchini and sauté for 4 minutes, or until just tender.

  • Add the cooked zucchini and tomatoes back to the pan, and stir to combine with the shrimp.
  • Add the pasta to the boiling water and cook pasta according to manufacturer's directions, until tender.
  • Drain the pasta and toss with the shrimp and vegetables. Add more salt and pepper as desired. Sprinkle with chopped parsley.
