CITRUS SHRIMP SALAD

2 large navel oranges
1 tablespoon heavy cream
1 tablespoon rice vinegar or white wine vinegar
2 teaspoons Dijon mustard
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 1/4 pounds extra-large shrimp, peeled and deveined, tails removed
1/2 teaspoon Old Bay seasoning
Kosher salt
2 tablespoons extra-virgin olive oil
1 large ripe avocado, pitted and diced
1 Persian cucumber, thinly sliced into half moons
1 medium bulb fennel, trimmed, quartered, cored and very thinly sliced (on a mandoline or by hand), fronds reserved for garnish
2 heads butter lettuce, trimmed and torn into bite-size pieces

Steps:

  • For the dressing: Cut the top and bottom from an orange so it sits flat. Working from the top down, cut away the peel and pith to expose the flesh. Cut out the orange segments, leaving the membrane behind. Squeeze any juice from the membrane into a large bowl. Repeat with the remaining orange. You should have about 1/4 cup juice. Reserve the segments.
  • Whisk the cream, vinegar, mustard, 1/2 teaspoon salt and several grinds of black pepper into the orange juice. While whisking, pour in the olive oil in a slow, steady stream to make a creamy, slightly thick dressing. Chill while you make the salad.
  • For the salad: Sprinkle the shrimp with the Old Bay and 1/2 teaspoon salt. Heat the olive oil in a large skillet over medium-high heat. Sear the shrimp in two batches until just cooked through, about 3 minutes per batch. Remove to a plate to cool slightly, about 5 minutes.
  • Combine the shrimp, reserved orange segments, avocado, cucumber and fennel in the bowl with the dressing and toss gently. Mound the lettuce on a platter or individual plates and top with the salad. Garnish with fennel fronds.

2 tablespoons Spanish-style smoked paprika
1 tablespoon finely grated orange zest
1 tablespoon coarsely cracked black pepper
1/4 teaspoon ground cayenne
3 cloves garlic, minced
12 extra-large shrimp (U-12), peeled and deveined
2 tablespoons lime juice
1 teaspoon Dijon mustard
1/4 teaspoon finely grated lime zest
1/4 cup grape seed oil
1/4 cup olive oil
Coarse salt
1 tablespoon extra-virgin olive oil
4 loosely packed cups torn, soft lettuces, such as red oak and lolla rossa
1/4 cup finely diced red onion
1 mango, peeled, seeded, and diced
1 Haas avocado, peeled, seeded, and diced

Steps:

  • Make the marinade: Whisk together all the ingredients in a large bowl. Reserve 2 teaspoons of the marinade. Add the shrimp to the marinade and refrigerate for at least 3 hours and up to 6.
  • Make the vinaigrette: In a large bowl, whisk together the lime juice, mustard, zest, and reserved marinade. While whisking, drizzle in the oils to form a smooth vinaigrette. Set aside.
  • Make the salad: Remove the shrimp from the marinade; scrape off any excess marinade from the shrimp.
  • Season the shrimp, to taste, with salt. Heat the oil in a large skillet over a medium-high heat. Add the shrimp and cook, turning once, until just cooked through, about 1 1/2 minutes per side. Remove the skillet from the heat.
  • In a bowl, toss together the onion, mango and avocado. Dress lightly with some of the vinaigrette. Season with salt and pepper, to taste.
  • In a another bowl, lightly toss the lettuce with some of the vinaigrette and season with salt and pepper.
  • Mound the salad in the center of a platter and surround with the shrimp. Spoon some of the dressing over the shrimp and serve. (Reserve remaining vinaigrette for another use.)

1/4 c. extra virgin olive oil
1 lemon, juiced
1 tsp. Dijon mustard
2 tsp. honey
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1 lb. jumbo shrimp (16/20), peeled & deveined ((keep the tails on))
4+ c. mixed greens (baby greens, kale, arugula, lettuce)
2-3 fresh pineapple rings OR planks of freshly cut pineapple, cored
Handful sliced cucumbers, blanched asparagus or other veggie ((optional))
Handful toasted, slivered almonds ((optional))
1 Tb. granulated sugar
1 Tb. vegetable oil
1 orange, zested & juiced
1 lemon, zested & juiced
1 clove garlic, peeled & minced
1 Tb. honey
1 tsp. Dijon mustard
1 Tb. fresh thyme leaves, minced
1 Tb fresh parsley, minced
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/2 c. extra virgin olive oil

Steps:

  • Add marinade ingredients to a large ziplock bag and mix together by scrunching the bag. Reserve 2 Tb. for brushing on shrimp while cooking. Add shrimp to bag, seal and refrigerate 20 minutes.
  • Combine Dressing ingredients in a blender (for best emulsion) OR add ingredients to a small bowl and whisk until combined; set aside until ready to use. (Note: when ready to use, taste & adjust for seasoning).
  • When ready to prepare salad, heat grill to high.
  • Remove shrimp from marinade, place on skewers (about 3-4 each) and discard marinade.
  • Lightly brush pineapple with vegetable oil and sprinkle with sugar. Then place shrimp skewers and pineapple onto hot grill.
  • For shrimp, cook 1.5 - 2 minutes then flip and brush with reserved marinade and cook another 1.5 - 2 minutes then remove from heat. Allow the pineapple to lightly brown/caramelize for about the same time on the first side, then flip and cook 2-3 minutes so the pieces get warmed through and juicy (this takes a bit longer than the shrimp). Remove from heat.
  • Place mixed greens (and any other veggies) in serving bowl. Cut pineapple into chunks and add to bowl. Remove shrimp from skewers and add to bowl. Add as much dressing as desired then toss to combine. Serve with crusty bread, or top with a little salty parmesan or feta.

Zest and juice of 1 lime
Juice of 1 orange
¼ teaspoon red pepper flakes
Kosher salt and freshly ground pepper (to taste)
1 pound large shrimp (, peeled and deveined)
2 avocados
1 pint cherry tomatoes (, halved)
½ red onion (, thinly sliced)
½ cup fresh cilantro leaves (, divided)
4 cups arugula ((optional))

Steps:

  • If you are using wooden skewers, place them in a container with water to cover for 30 minutes. Preheat the grill to medium high.
  • For the dressing, in a small bowl or container combine 2 tablespoons olive oil, the lime zest and juice, orange juice, red pepper flakes, and salt and pepper. Set aside.
  • In a medium bowl, toss shrimp with the remaining tablespoon of oil and season with salt and pepper. Thread the shrimp onto skewers.
  • Carefully oil the grill rack. Grill the shrimp over medium heat until they turn pink and are just cooked through, about 4 minutes in all, turning the shrimp halfway during cooking. Let cool to room temperature and remove the shrimp from the skewers.
  • In a large shallow serving bowl, combine the tomatoes, onions, and half the cilantro. Add the half of the dressing and toss. Peel and half the avocados, remove the pit, and dice. Add the avocados and cooked shrimp to the bowl and toss gently to combine. Drizzle with the remaining dressing, and sprinkle with the remaining fresh cilantro.
  • Serve in the bowl, or serve over the arugula on individual plates.

  • SHRIMP: In a bowl, toss the shrimp with the garlic powder, red pepper flakes, a big pinch of kosher salt and pepper. Add the olive oil to a large skillet and place it over medium-high heat. Add the shrimp to the pan and spread it out so they cook evenly. Cook for 1 minute, tossing as needed. Add the lemon juice, then the parsley and the cubed butter and swirl the pan so the butter starts to melt slowly. The butter will form a thick type of sauce as it melts in. Remove from heat and set aside.
  • DRESSING: Combine all the ingredients for the dressing in a food processor starting with 2 tablespoons of honey. Blend until the dressing is smooth. Taste and adjust with additional honey. I prefer this with around 3 tablespoons of honey.
  • ASSEMBLE: Divide the arugula (or spinach) amongst bowls if you're making individual servings or in a large bowl if it's family style, top with red onions, avocado slices, mandarin oranges, and prepared shrimp. Drizzle with dressing as desired and top with sliced almonds and toasted sesame seeds. If you’re meal prepping this salad, keep the salad portion and the dressing separate; just toss and enjoy when it’s lunchtime!
