Pea pods were made for stir-fry dishes. This subtly flavored recipe calls for snow peas, but you could easily substitute snap peas. Serve with brown rice for a balanced and nutritious meal.

1 pound fresh or frozen medium shrimp in shells
½ cup reduced-sodium chicken broth
1 tablespoon reduced-sodium soy sauce
2 teaspoons cornstarch
2 teaspoons grated fresh ginger
2 teaspoons sesame oil
3 cloves garlic, minced
¼ teaspoon salt
¼ teaspoon crushed red pepper
2 tablespoons vegetable oil
1 cup sliced onion
1 cup packaged fresh julienned carrots
12 ounces snow pea pods, trimmed
1 ⅓ cups hot cooked brown rice

Steps:

  • Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp; pat dry. For sauce, in a small bowl combine chicken broth, soy sauce, cornstarch, ginger, oil, garlic, salt and crushed red pepper.
  • In a 12-inch skillet or a wok heat vegetable oil over medium-high. Add onion and carrots; cook and stir 3 to 4 minutes or just until beginning to soften. Add pea pods; cook and stir 3 minutes. Add shrimp; cook and stir 3 minutes more or just until shrimp are opaque. Add sauce; cook and stir until thick and bubbly.
  • Serve shrimp mixture over rice.

1 lb shrimp (uncooked)
1/4 cup dry sherry
2 tablespoons soy sauce
2 tablespoons vegetable oil
1 tablespoon fresh ginger, peeled and minced
1 cup fresh mushrooms, sliced
1/2 lb snow peas, rinsed, stems and strings removed
1/2 cup sliced scallion
1/2 cup sliced water chestnuts
1 teaspoon cornstarch, dissolved in
3 tablespoons water
hot cooked rice

Steps:

  • Peel and devein shrimp. Combine the sherry and soy sauce in a medium bowl and add shrimp. Marinate in the refrigerator for 30 minutes.
  • Meanwhile, heat a wok or large skillet over high heat and add the oil. Add ginger and stir-fry for 1 minute. Add the shrimp (reserving the marinade) and cook until light pink, 2 to 3 minutes.
  • Add mushrooms and snow peas and cook for 1 to 2 minutes, until the snow peas are bright green and crisp-tender. Add scallions and water chestnuts and stir-fry until just heated through.
  • Add the reserved marinade and cornstarch mixture. Bring to a boil and cook until the sauce thickens. Serve.

1 lb cooked deveined peeled large shrimp (about 35)
1 cup (8 oz) Asian ginger dressing
6 oz fresh snow pea pods (about 35)
Toothpicks or appetizer picks

Steps:

  • In medium bowl, place shrimp. Pour dressing evenly over shrimp; stir to coat. Cover; refrigerate 1 hour. Meanwhile, remove stem and strings from pea pods. To partially cook pea pods, place in boiling water about 1 minute or until pea pods turn bright green. Drain; rinse with cold water and dry with paper towels.
  • Drain dressing from shrimp. Wrap 1 pea pod around each shrimp; secure with toothpick. Cover; refrigerate until serving time.

20 uncooked large shrimp, peeled, deveined
1 tablespoon minced fresh ginger
2 teaspoons vegetable oil
1 large garlic clove, pressed
1/2 teaspoon Chinese five-spice powder
20 large snow peas, stringed
1 teaspoon oriental sesame oil
1/2 teaspoon sesame seeds, toasted
2 tablespoons reduced-sodium soy sauce
20 small wooden skewers or toothpicks

Steps:

  • Combine shrimp, ginger, vegetable oil, garlic and five-spice powder in medium bowl; toss to blend. Cover and refrigerate at least 1 hour and up to 4 hours.Bring medium pot of salted water to boil. Add snow peas; cook just until crisp-tender, about 45 seconds. Drain. Rinse with cold water. Drain; pat dry. Transfer to bowl. Drizzle sesame oil and sesame seeds over; toss to coat. Set aside.
  • Heat large nonstick skillet over medium-high heat. Add shrimp mixture and sauté 3 minutes. Add soy sauce; stir until shrimp are just opaque in center and liquid evaporates, about 1 minute. Transfer to plate and cool completely.
  • Wrap 1 snow pea lengthwise around each shrimp from head to tail. Secure with skewers. (Can be prepared 6 hours ahead. Cover and refrigerate.) Serve slightly chilled or at room temperature.

1 tablespoon cornstarch
1 tablespoon dry white wine
1 pound uncooked medium shrimp, peeled, deveined, butterflied
1 tablespoon catsup
1 tablespoon soy sauce

1 onion, chopped
3 large garlic cloves, minced

  • Combine egg white, 1 tablespoon cornstarch and wine in medium bowl. Add shrimp and stir to coat. Let stand 30 minutes. Combine catsup, soy sauce and sugar in small bowl. Set aside.
  • Heat oil in wok or heavy large skillet over high heat. Add onion, garlic and ginger and stir-fry until onion and garlic begin to brown, about 3 minutes. Stir shrimp; add and stir-fry until shrimp are just opaque, about 2 minutes. Add dissolved cornstarch and stir until sauce thickens.

2 tablespoons olive oil, divided
2 cups fresh snow peas

1/4 teaspoon plus 1/8 teaspoon pepper, divided
1 cup grape tomatoes, halved
DRESSING:
1/4 cup lemon juice
2 tablespoons chopped fresh parsley
2 tablespoons olive oil
2 garlic cloves, minced

Additional grated lemon zest and chopped fresh parsley, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, heat 1 tablespoon oil over medium heat. Add peas; cook and stir until crisp-tender, 2-3 minutes. Remove and keep warm., In same pan, heat remaining oil over medium-high heat. Add shrimp; cook and stir until shrimp turn pink, 2-3 minutes. 36 large shrimp - cooked, devined, thawed if frozen
36 - pea pods; washed, drained, & trimmed
8 ounce(s) red current jelly
1/4 scant cup(s) dijon mustard
- boiling salt water for blanching
- ice water
- toothpicks or appetizer picks

Steps:

  • Wash shrimp and drain well.
  • Trim pea pods; blanch 1 minute in boiling salted water. Drain and transfer to ice bath
  • Combine dijon mustard and current jelly with wire whisk, blend well. Do not refrigerate to keep dip thin.
  • Wrap each shrimp with 1 pea pod, overlapping pod ends and securing with toothpick or appetizer pick.
  • Arrange on serving platter with dip in center
