Steps:
- Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
- Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
- Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

Steps:
- 1. Cook your favorite pasta. The recipe for the scampi portion serves 4 people, so cook enough pasta for 4 people. I personally like egg noodles for scampi, but whatever you like. You want the noodles to be just al dente when you remove them from the water - maybe even a little under al dente. Be sure to reserve about a cup of the water as you drain the pasta in case you need it later.
- 2. Heat up a large skillet and add 2 tablespoons of the butter and the olive oil over medium heat until butter is melted.
- 3. Add garlic, diced shallots, and red pepper flakes to the butter. Saute 2-3 minutes until garlic becomes fragrant.
- 4. Season shrimp to taste with salt and pepper, then add the shrimp to the skillet and saute 2-3 minutes until shrimp become opaque. Once they are cooked through, remove the shrimp from the skillet but leave the shallots and garlic in the skillet. Set the shrimp aside for a couple minutes.
- 5. Add the lemon juice and wine to the skillet and allow to come to a boil. Once it's boiling, add in the last 2 tablespoons of butter and stir until it's melted.
- 6. After the butter melts, return the shrimp back to the skillet. Then add the spinach and the cooked pasta. Stir everything together over medium heat until the spinach has wilted. If you need more moisture or if you think that the noodles and shrimp might be getting too dry during this step, this is what the reserved noodle water is for - just add in a tablespoon or two at a time as needed.

- Heat a large sauté pan on medium-high heat. Reduce the heat to medium-high and add the olive oil and butter. Once the butter melts, foams up, and subsides, add the garlic, a pinch of salt and red pepper flakes. Sauté for a minute, or until you see the edges of some of the garlic just beginning to brown.
- As soon as the garlic begins to brown, add the shrimp to the pan. Add white wine and stir to combine. Increase the heat to high and let the wine boil vigorously for 1-2 minutes. Right before serving, add spinach to the pan and stir until spinach is just wilted. Also delicious served over angel hair pasta. Top with lemon juice and garnish with parsley.

- Heat a large skillet over medium-high heat. Melt the butter and add in the garlic and fry until fragrant (about one minute). Add in the shrimp and fry two minutes on each side, until just cooked through and pink. Transfer to a bowl; set aside.
- Fry the onion in the butter remaining in the skillet. Pour in the white wine (if using), and allow to reduce to half, while scraping any bits off of the bottom of the pan. Add the sun dried tomatoes and fry for 1-2 minutes to release their flavours.
- Reduce heat to low-medium heat, add the half and half and bring to a gentle simmer, while stirring occasionally. Season with salt and pepper to your taste.
- Add in the spinach leaves and allow to wilt in the sauce, and add in the parmesan cheese. Allow sauce to simmer for a further minute until cheese melts through the sauce. (For a thicker sauce, add the milk/cornstarch mixture to the centre of the pan, and continue to simmer while quickly stirring the mixture through until the sauce thickens.)
WHAT VEGETABLES GO WELL WITH SHRIMP SCAMPI: 10 …
From hotlinerecipes.com

- Asparagus. Asparagus is 100% the number choice of vegetable to have with shrimp scampi. It’s a mild-tasting vegetable that you can have with anything. The delicious crunch of the asparagus is enjoyable to eat.
- French Beans. Serving shrimp scampi as a viand rather than a pasta dish? Add French beans to it to add texture and flavor. French beans are subtle in flavor with a delicious crunch to them.
- Spinach. Spinach is a mild and fresh leafy green that easily goes well with any kind of dish. You can add some fresh leaves of spinach right before serving a shrimp scampi pasta dish.
- Arugula Rocket. If you want to order a side salad with your shrimp scampi, we highly suggest ordering a side dish of arugula rocket. It can be mixed with other kinds of leafy greens for a more subtle flavor but we’re out for the nutty bitterness of arugula rocket.
- Tomato. Shrimp scampi tastes rich in general because of the butter or other kind of fat, shrimp, and strong garlic flavor. In order to cut through these rich flavors, it’s always a good idea to add tomato to counter that.
- Broccoli. Thinking of a vegetable side dish to go with pasta isn’t an easy taste. You really have to make sure that it tastes great and compliments the pasta dish.
- Cauliflower. If the pasta doesn’t sound so appealing for you to have with your shrimp scampi, you can opt to have it with cauliflower rice instead. Cauliflower is a great alternative to rice.
- Carrots. If you’re adding vegetables to a shrimp scampi pasta, carrots would be one of the first choices of vegetables to add. The natural sweetness of the earthy flavor of carrots compliments the flavor of shrimp.
- Jicama. You might be wondering why this is on the list. Jicama can be eaten raw or cooked. It is typically eaten raw and it is usually added to Asian flavors.
- Spring Onion. Spring onion is totally out of the flavor profile of a traditional shrimp scampi. However, we feel that the addition of chopped spring onion makes a delicious garnish for a rich crustacean tasting dish.

- Bring a large pot of salted water to a boil. Add linguine and cook until just before al dente. Drain, reserving 1 cup of the pasta water and place pasta back into the large pot.
- Meanwhile, heat 1 tablespoon butter and 1 tablespoon olive oil in a medium saucepan over medium heat. Once hot, add garlic and saute 1-2 minutes. Add wine and bring to a boil, then reduce to a simmer. Simmer until wine has reduced a bit, then add spinach. Stir, then add to pasta.
- In the same saucepan you used for the spinach, add the remaining tablespoon of butter over medium heat. Pat the shrimp dry, then season with salt and pepper on both sides. Add to saucepan and cook about 1 minute on each side, until opaque and cooked through. Don't overcook the shrimp!
- Add shrimp and chopped parsley to the pasta and spinach and toss gently with tongs. Drizzle in a bit of pasta water, toss gently again (this should help smooth the sauce and provide silkiness to the dish). Add salt and pepper to taste.
