This sauteed shrimp recipe comes out juicy and seasoned to perfection in less than 10 minutes! Here are the secrets to how to saute shrimp.

1 1/2 pounds medium shrimp, deveined (tail on or peeled)
3/4 teaspoon kosher salt
3/4 teaspoon smoked paprika (or substitute standard paprika)
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
3/4 teaspoon cumin
3 tablespoons butter or olive oil
3 lemon wedges
Fresh cilantro or parsley, for garnish

Steps:

  • Thaw the shrimp, if frozen. Pat the shrimp dry. In a medium bowl, mix the shrimp with the salt, smoked paprika, garlic powder, onion powder, and cumin.
  • In a large skillet, heat the butter on medium high heat. Add the shrimp and cook for 1 to 2 minutes per side until just opaque and cooked through, turning them with tongs.
  • Spritz with juice of the lemon wedges and serve immediately.

1 tablespoon paprika
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon ground cumin
Salt and freshly ground black pepper
2 dozen (16/20 count) shrimp, deveined and butterflied
Extra-virgin olive oil, for brushing shrimp
1 pound tomatillos
1 red onion, quartered
1 jalapeno, halved
5 garlic cloves
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
1 avocado, pitted, flesh diced
1 lime, juiced, plus lime zest, for garnish
1/2 bunch cilantro leaves, plus more chopped, for garnish
1 Roma tomato, diced

Steps:

  • To prepare the shrimp: Mix all the ingredients, except for the shrimp and olive oil, into a bowl. Add the shrimp; coat well with the rub and set aside
  • Preheat oven to 350 degrees F.
  • For the sauce: In a baking dish, toss together tomatillos, onion, jalapeno and garlic. Toss with extra-virgin olive oil and season, to taste, with salt and pepper. Roast until tender and caramelized, about 20 minutes. Remove from pan and cool for about 5 minutes then add to a food processor. Add avocado, lime juice and cilantro and blend until smooth. Season, to taste. Pour into a large bowl and chill.
  • Meanwhile, preheat grill to medium-high.
  • Remove the shrimp from the bowl and brush with oil. Place on the grill. Cook until the meat is opaque. Remove from heat to a platter and serve with the tomatillo salsa.
  • Garnish with lime zest, diced tomato, and chopped cilantro.

2 teaspoons olive oil
1 onion, chopped
6 cloves garlic, crushed
salt and ground black pepper to taste
2 pounds shrimp, peeled and deveined
½ cup chopped fresh cilantro
½ lime, juiced, or more to taste

Steps:

  • Heat oil in a large skillet over medium-high heat. Saute onion, garlic, salt, and pepper in hot oil until onion is soft and golden, about 5 minutes.
  • Stir shrimp into onion mixture; saute until shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 2 minutes per side. Season with salt and pepper. Add cilantro and lime juice; toss to coat.

Follow the instructions to the letter to avoid burning the garlic and spoiling the taste. The flavorful garlic oil that remains should be stored in the refrigerator and used for sauting shrimp or any other meat or fowl.

12 garlic cloves, roughly chopped
1 cup vegetable oil
1/4 cup unsalted butter
1 1/2 lbs fresh shrimp, peeled, de-veined

Steps:

  • In a large skillet, saute the garlic in medium-hot oil (about 300 degrees F) until light brown. Watch carefully so as not to burn. After about 6 to 8 minutes, quickly whisk in the butter and remove immediately from the fire. When all the butter has been added, the bits will become crisp.
  • Remove them with a slotted spoon and reserve the oil and butter for saut?ing the shrimp.
  • In a large skillet, heat about 2 to 3 tablespoons of the reserved oil and then saut? the shrimp for about 5 minutes. Turn over very briefly and then remove. Add more oil as necessary to saute all the shrimp. Salt to taste. Garnish with garlic bits and parsley. Serve with Mexican Rice.
  • Try brushing garlic oil over French bread, then sprinkling it with parsley and toasting it.
  • Serve this with the shrimp and accompany the dish with a lettuce and tomato salad.
