PAN-SEARED SHRIMP WITH RATATOUILLE
Shrimp sauteed with white wine over angel hair goes great with the colorful veggie medley of eggplant, zucchini, and squash.

- Shrimp: Peel, devein, and butterfly shrimp. Place olive oil in hot saute pan. Add shrimp and saute until they begin to cook. Deglaze pan with wine and cook 30 seconds or 'til wine reduces. Add hot ratatouille and reduce heat to medium high. Cook 2 to 3 minutes or until shrimp are cooked through, stirring occasionally. (Shrimp will cook faster if you put a cover on top.) Serve over pasta garnished with leeks. Ratatouille: Cut eggplant, squash, zucchini, onion, and pepper into 1/2" cubes. Saute all vegetables in olive oil with garlic. When they start to soften, add wine. When wine reduces a little, add V-8. Lower heat and cook 10 to 12 minutes. Add basil, salt, pepper, and crushed pepper (if desired). Cook 5 more minutes, adjust seasoning and serve.

- For the Shrimp: Combine all ingredients together in bowl and marinate 30 minutes.
- Place shrimp in heated sauté pan; cook for about 30 seconds on each side.
- For the Boursin Grits: Bring milk and butter to a boil and add grits. Cook over medium heat for 15-20 minutes, stirring often. Season with salt and pepper. Add cheese and cook for 2-3 minutes.
- For the Ratatouille: Heat large skillet with oil. Add eggplant and cook 5-7 minutes until brown. Drain excess oil. Add onion, garlic, and bell pepper. Cook another minute. Add beer and cook for 3-4 minutes. Add zucchini and squash. Cook 2-3 minutes. Add tomatoes and tomato sauce, salt, pepper and basil. Simmer 10-15 minutes.
- Place grits in individual bowls, top with ratatouille and then shrimp.

- Marinate: Combine shrimp with 1/4 cup olive oil, 6 cloves diced garlic, 2 teaspoons chopped basil, and salt and pepper. Let marinate 30 minutes.
- Make Grits: Bring milk and butter to a boil. Add grits. Cook over medium heat for 15 to 20 minutes, stirring often. Season with salt and pepper. Add Boursin and cook another 2 to 3 minutes. Adjust seasoning.
- Ratatouille: Heat 1/4 cup oil in large skillet. Add eggplant and cook 5 to 7 minutes until brown. Drain excess oil. Add onion, garlic and peppers. Cook another minute. Add beer and cook for 3 to 4 minutes. Add zucchini and squash. Add tomato products, salt, pepper and herbs. Simmer for another 10 to 15 minutes.
- When almost ready to serve, heat a sauté pan and place shrimp mixture in heated pan. Cook shrimp for 30 seconds on each side. Serve in individual ramekins with grits topped with ratatouille, then shrimp and more ratatouille; or on plates, as grits topped with ratatouille, then shrimp.

- Cut eggplant into 1/2-inch thick slices, then into chunks. Sprinkle with 1 tablespoon salt and let stand 30 minutes. Dry thoroughly.
- Peel and slice onions. Core both peppers and cut into 1/2-inch pieces. Peel the tomatoes and cut into coarse cubes.
- Heat oil in a large frying pan and saute onions and garlic for 2 minutes.
- Add peppers and cook for 2 minutes more.
- Add eggplant and brown lightly on both sides, about 3 minutes.
- Add zucchini, tomatoes, thyme, oregano, bay leaf, and salt and pepper to taste. Simmer gently, uncovered, for 40 minutes. Stir often to baste vegetables with liquid while cooking.
- Add shrimp and bring to a boil. Cover and reduce heat, and simmer for 3 minutes.
- Remove from heat and remove bay leaf. Serve over hot cooked rice.

RATATOUILLE SEAFOOD CHOWDER

- To form a soupier poaching liquid, gently reheat ratatouille with fennel seeds, and tomato juice or fish stock. Bring mixture to a simmer and gently poach seafood until done. Adjust seasoning and add fresh parsley. Spoon into deep dishes and serve with warm crusty French bread with which to sop up the juices.
- Heat olive oil in a large heavy enamellined casserole. Add peppers and onions and saute for a minute to get them cooking. Reduce heat to low, cover and simmer very gently until vegetables are tender, about 10 minutes. Don't let olive oil get too hot or you will change the flavor. While these are cooking, cut eggplant into 3/4inch chunks. When peppers and onions are tender, add the garlic, eggplant, tomatoes and thyme and simmer over low heat for 30 minutes.
- While this is cooking cut zucchini and yellow squash lengthwise into halves or quarters, depending on how thick they are. Remove seeds with a spoon, then cut into 3/4 inch lengths. After 30 minutes of stewing eggplant, add zucchini and squash to stew, cover and simmer, over very low heat until all the vegetables are tender, about 20 minutes ( you can simmer for another 30 to 40 minutes for more meltingly tender vegetables). Strain the stew through a sieve and return juices back to casserole. Reduce the juices over medium heat until they begin to sizzle in the olive oil. Return this to the stew, season well to taste with salt and pepper. Divide ratatouille into two portions to proceed.
RATATOUILLE WITH SHRIMP AND OKRA
Hailing from southern France, ratatouille is a stewed vegetable dish usually consisting of tomatoes, eggplant and summer squash. It's a dish I love to make, and you know I've gotta add my Low Country spin. So, I saute shrimp and okra and stir it in at the end. You're going to love it.

- Heat 2 tablespoons of the oil in a very large, deep skillet. Add the onion, bell pepper and garlic and cook until the vegetables are tender, about 5 minutes. Add the eggplant, zucchini and yellow squash and season with 1 teaspoon each salt and pepper. Cook until the vegetables begin to soften, about 8 minutes.
- Stir in the thyme, tomatoes and bay leaf. Reduce the heat to low and simmer until the tomatoes begin to burst, about 12 minutes.
- Meanwhile, heat the remaining tablespoon olive oil in a separate large skillet over medium-high heat until hot. Add the shrimp and okra and sprinkle with 1/4 teaspoon each salt and pepper. Cook until the shrimp turns pink and is cooked through, about 6 minutes. Stir in the lemon juice. (This removes the "slime" from the okra.)
- Add the shrimp, okra and basil to the vegetables. Stir to combine. Season with salt and pepper. Remove the bay leaf, then sprinkle with additional basil before serving, if desired.

- In a large deep skillet or sauté pan, warm ratatouille over medium heat, stirring, until the vegetables are at a good simmer. If the stew is thick – and it will be if you’ve made and refrigerated it – pour in 1/4 cup water to thin it a bit and to keep it from sticking. Add raw shrimp and cook until shrimp is just firm and pink—perhaps 3 minutes, stirring regularly to make sure the shrimp is all cooked evenly. (If you use frozen shrimp, it will take an extra minute or so.) Taste and adjust seasonings as needed. Serve hot with fresh basil and cheese, olives or capers, if desired.
- Preheat oven to 350. Place chopped eggplant on a baking tray, sprinkle lightly with salt and let sit while the oven preheats. When the oven is hot, blot the eggplant lightly on both sides with paper towels and drizzle lightly with olive oil. Cover the tray with foil tightly and bake about 40 minutes or until the eggplant is tender. Remove from oven, remove foil, and set aside.
- Meantime, in a large, deep skillet (or heavy soup pot), cook in the remaining oil the onions, peppers, and zucchini until they begin to soften, about 10 minutes. Add garlic, herbs, tomatoes, tomato paste, and sugar. Season with about 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Stir well, heat through and taste. Add crushed red pepper and taste again. Adjust seasoning if necessary.
- Let simmer 15 -20 minutes over low heat. Add eggplant and warm through. Add some of the reserved tomato juice if the mixture becomes too thick and is sticking or if you’d like a looser consistency.
