Cooking spray, for coating the muffin tin
1 7 1/2-ounce can refrigerator biscuits
1 cup shredded monterey jack cheese
1 scallion, white part and some green, chopped
1/2 cup mayonnaise
1/2 pound baby shrimp, cooked and peeled
1/2 teaspoon chopped fresh dill

Steps:

  • Preheat the oven to 350 degrees F. Coat a miniature-muffin tin with cooking spray.
  • Split each biscuit in half and place each half in a muffin cup, pressing it into the bottom and up the sides.
  • In a medium-size bowl, mix the cheese, scallion, mayonnaise, shrimp and dill. Place 1 tablespoon of the shrimp mixture on top of each biscuit. Bake for 20 minutes, or until the puffs are golden and bubbling.

6 tablespoons butter, cubed
3/4 cup water
1/4 teaspoon garlic salt
3/4 cup all-purpose flour
3 eggs
1 package (5 ounces) frozen cooked salad shrimp, thawed
1/4 cup chopped green onions
5 tablespoons grated Parmesan cheese, divided

Steps:

  • In a saucepan, bring butter, water and garlic salt to a boil. Add flour all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny., Stir in the shrimp, onions and 4 tablespoons Parmesan cheese. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Sprinkle with remaining Parmesan cheese. Bake at 400° for 25-30 minutes or until golden brown. Serve warm.

3/4 cup HEINZ Zesty Cocktail Sauce
3/4 lb. cooked cleaned medium shrimp, coarsely chopped
2 cans (8 oz. each) refrigerated crescent dinner rolls

Steps:

  • Heat oven to 375°F.
  • Mix cream cheese and cocktail sauce in medium bowl until blended. Stir in shrimp.
  • Unroll crescent roll dough; separate dough from each can into 8 triangles. Spoon shrimp mixture onto centers of dough triangles. Fold dough over filling to completely enclose filling; press edges together to seal. Place on baking sheet.
  • Bake 12 to 15 min. or until golden brown.

Shrimp and rice are two foods that are abundant in our area. These shrimp puffs are my family's favorite. In fact, they prefer them to fried shrimp.

2 eggs, separated
3/4 cup milk
1 tablespoon canola oil
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons onion powder
1 teaspoon salt
1/2 teaspoon pepper
3 cups cooked rice
1 pound uncooked shrimp, peeled, deveined and chopped or 2 cans (4-1/2 ounces each) small shrimp, drained
1/4 cup minced fresh parsley
1/2 teaspoon hot pepper sauce
Additional oil for deep-fat frying

Steps:

  • In a large bowl, beat the egg yolks, milk and oil. Combine the flour, baking powder, onion powder, salt and pepper; add to yolk mixture and mix well. Stir in the rice, shrimp, parsley and pepper sauce., In a bowl, beat egg whites until soft peaks form; fold into shrimp mixture. , In an electric skillet or deep-fat fryer, heat oil to 350°. Drop batter by tablespoons into hot oil. Fry puffs, a few at a time, for 1-1/2 minutes on each side or until browned and puffy. Drain on paper towels. Serve warm.

This recipe comes from 30DayGourmet.com, a great resource for OAMC meal planning. This recipe can be made using the big bags of frozen already cooked shrimp, and can be made hot or not depending on whether you add the hot sauce (of course, this changes the recipe from "Buffalo" shrimp to just Shrimp in a Yummy Marinade!). I made these as written using Frank's Hot Sauce, and it was good buffalo flavor, but not nuclear hot, which I loved, but my chili head DH just thought was good. Prep time includes cooking (but not peeling) the shrimp. Recipe will double, triple, or more easily.

2 teaspoons paprika
1 teaspoon dried oregano
1/2 teaspoon celery seed

1 lb shrimp, cooked peeled and deveined

Steps:

  • TO FREEZE: Combine ingredients from oil through hot sauce (if using) to make marinade. Place shrimp in labeled freezer bag or container. Pour marinade over shrimp, seal, and freeze.
  • TO COOK: Thaw in refrigerator. You have several options for cooking: skewer shrimp and broil or grill; or simply panfry for a few minutes. You only need to heat these up, they are already cooked. Discard extra marinade.
  • OPTIONS: Use as an appy with ranch dip, add these to pasta (with blue cheese crumbles, YUM!), serve over rice, turn into tacos, endless really!

6 slices firm white bread (Pepperidge Farm is good)
1 lb uncooked frozen shrimp, deveined and shelled
2 cloves garlic, minced
1 tablespoon butter
1 tablespoon olive oil
1 1/2 cups gruyere cheese or 1 1/2 cups havarti cheese, shredded
1 teaspoon lemon, zest of
1 teaspoon dried dill weed
1 dash pepper
3/4 cup mayonnaise

Steps:

  • Preheat oven to 300°F Using small cookie cutter, cut out four rounds from each slice of bread.
  • Place on cookie sheet and bake in oven for 10-15 minutes or until bread is crisp and dry, turning bread rounds over once halfway through baking time.
  • Cool on wire rack.
  • Heat butter and olive oil in heavy skillet and cook garlic and shrimp just until shrimp curl and turn pink.
  • Remove from heat and set aside for 10-15 minutes to cool slightly.
  • In large bowl, combine cheese, lemon zest, dill, mayonnaise, and pepper.
  • Finely chop shrimp and add to cheese mixture.
  • Top bread rounds with shrimp mixture, mounding and smoothing the shrimp.
  • Freeze in single layer on baking sheet, then store in freezer container in single layer.
  • When ready to eat, bake puffs, frozen, in preheated 400F oven for 10-13 minutes until golden brown and bubbly.
  • Serve immediately.
  • You can also bake the puffs without freezing them, in a 400F oven for 8-9 minutes.

With it's buttery, garlic shrimp filling inside a flaky homemade pastry makes this savory shrimp puff pastry recipe a must-try appetizer.

1 cup flour, all purpose
1/2 cup butter
6 tbsp cream cheese, light
2 cups shrimp, cubed
2 tbsp butter
3/4 cup onion, finely chopped
3 cloves garlic, chopped
2 tbsp parsley, coarsely chopped
1 cup water
1.5 tbsp flour, all purpose
salt and pepper (to taste)

Steps:

  • In a mixer, combine flour, butter and cream cheese.
  • Mix until dough forms a ball and cleans the sides of the bowl.
  • Wrap dough in plastic wrap and chill for 15 minutes.
  • Add butter, onion and garlic and parsley to the pan on stove top. Saute for 2 to 3 minutes.
  • Add the shrimp, along with some salt and pepper and mix together. Saute for another 1 minute.
  • Combine cool water with flour until you have a smooth milky mixture.
  • Add the flour water mixture to the pan, stir together a few times and put aside to cool before filling cups.
  • Remove dough from the fridge and shape dough into 2 dozen 1-inch balls. Place each in a paper-lined or greased miniature (1 ¾"-inch) muffin cup.
  • Press dough on bottom and sides of each cup.
  • Scoop 1 tbsp of the cool shrimp filling and place inside each cup.
  • Bake in a 365°F preheated oven for 25 minutes or until golden brown and filling is set.
  • Cool in pans on a wire rack.

400 grams (14 ounces) puff pastry
300 grams (10 1/2 ounces) shrimp
1 medium onion
1 small onion to cook the shrimp
Coriander (to taste)
3 cloves of garlic
50 ml (1/4 cup) olive oil
Thyme (to taste)
1 tablespoon corn starch
Pepper (to taste)
1 egg yolk
Salt (to taste)

Steps:

  • Place the shrimps in a saucepan with water seasoned with salt, a branch of coriander and a peeled onion. Bring to a boil over high heat. When starts boiling, reduce to medium-low heat and cook about five minutes. When the shrimps are cooked, drain them with a skimmer and let cool slightly (reserve the cooking water). Peel the shrimps and set aside.
  • In a bowl, dissolve the corn starch in 100 ml (1/2 cup) of the shrimps cooking water and set aside.
  • Put the olive oil, the chopped onion and the chopped garlic in a saucepan and saute over low heat until the onion starts to turn golden. Add the peeled shrimps together with the dissolved corn starch and season with pepper. Stir and simmer about five minutes over low heat until the sauce begins to thicken, stirring occasionally.
  • Turn off the heat and sprinkle with chopped coriander.
  • Preheat the oven to 180ºC (350ºF).
  • Roll out the puff pastry over a table and place on top the previous mixture. Roll the dough over the filling, brush with slightly beaten egg yolk and sprinkle with thyme. Bake until the pastry starts to golden brown, about 15 minutes.
  • Turn off the oven and serve.
