I love grilling and I love seafood. When you're ready to spice up your grilling game make sure to try my Grilled Shrimp and Pineapple Skewers with a sweet chili sauce. They'll be the hit of your next get together!

1 pound 16-20 Shrimp ( gulf or pacific shrimp peeled with tail on and deveined without cutting to far into the shrimp.)
Skewers ( If using wood soak them for one hour before use.)
2 cups fresh pineapple (cut into 1 inch cubes)
1 large green bell pepper (seeded and cut into 1 inch x 1 inch piece)
1 large red bell pepper (seeded and cut into 1 inch x 1 inch piece)
1 large red onion (peeled and cut into 1 inch x 1 inch chunks)
12 ounces sweet chili sauce
¼ cup lime juice
1 tablespoon cilantro ( finely chopped)
½ teaspoon sea salt

Steps:

  • If you're using wooden skewers, make sure to pre-soak them in water for at least 1 hour
  • Preheat a grill over medium heat (350º-400ºF)
  • Mix the sweet chili sauce, lime juice, cilantro and sea salt together in a medium bowl.
  • Thread the shrimp, pineapple, red onions and peppers onto the skewers alternating the red and green peppers as you go. Use two shrimp per skewer with veggies in between and on the outside of each shrimp.
  • Brush skewers with half the marinade and let sit for 5 minutes.
  • Place the skewers on the grill, and grill for 4-5 minutes per side, or until the shrimp is pink and cooked through. Brush the skewers with the remaining chili sauce as they cook.

1/4 cup each reduced-sodium soy sauce, balsamic vinegar and honey
1 garlic clove, minced
1 pound uncooked medium shrimp, peeled and deveined
1 large green pepper, cut into 1-inch pieces
1 can (8 ounces) pineapple, chunks, drained

Steps:

  • In a small bowl, combine the soy sauce, vinegar, honey and garlic. Set aside 1/3 cup. On eight metal or soaked wooden skewers, thread the shrimp, green pepper and pineapple. Place kabobs in a large resealable plastic bag; pour remaining marinade over kabobs. Cover and chill for 1 hour. Cover and chill reserved marinade., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, uncovered, over medium heat or broil 4 in. from the heat for 5-8 minutes or until shrimp turn pink; turning and basting frequently with reserved marinade.

1/2 cup thick teriyaki sauce
1 tablespoon minced fresh ginger
1 tablespoon sugar
1/2 teaspoon crushed red pepper flakes
1 dash kosher salt
3 cloves garlic, minced
2 green onions, sliced
Juice of 1/2 lemon
1 fresh pineapple
2 pounds jumbo shrimp, peeled and deveined
1 pound bacon, package sliced in half

Steps:

  • Preheat the oven to 400 degrees F. Set a roasting rack in a large baking pan.
  • To make the marinade, pour the teriyaki sauce in a bowl and then throw in the ginger, sugar, crushed red pepper, salt, garlic, green onions and lemon juice. Stir it around and set it aside.
  • Next, cut the pineapple into chunks by lopping off the top, slicing off the rind, cutting the pineapple into wedges, slicing off the hard inner core and then cutting the slices into chunks. Store half the chunks in the fridge for snacking.
  • Place a chunk of pineapple on top of a shrimp and then wrap the whole thing in one of the half-slices of bacon. Stick a skewer through the whole thing so that it holds the pineapple, shrimp and bacon securely, and lay it on the rack in the pan. Continue with the remaining ingredients. Brush each skewer generously with some of the marinade.
  • Roast the skewers for 10 minutes. Remove them from the oven and brush with a second coat of marinade. Return the pan to the oven and roast until the bacon is sizzling and the shrimp is cooked, about 15 minutes.
  • Serve them hot or at room temperature. Divine!

1/2 fresh pineapple, peeled, cored and cut into 1/2-inch-thick chunks
16 jumbo shrimp, peeled and deveined
8 slices bacon, cut in half crosswise
1/2 c. barbecue sauce

Steps:

  • Soak 16 wooden skewers in water for 30 minutes. Preheat the oven to 400 ̊.
  • Place a chunk of pineapple on top of a shrimp, then wrap the whole thing in one of the half-slices of bacon. Stick a skewer through it to hold the pineapple, shrimp and bacon securely. Repeat to make more skewers, then lay them all on a wire rack set on a rimmed baking sheet. Brush generously with barbecue sauce on both sides.
  • Roast the skewers for 10 minutes. Brush with a second coat of barbecue sauce, turning the skewers as you place them back on the rack. Return to the oven and bake until the bacon is sizzling and the shrimp are cooked through, about 15 more minutes. Serve hot or at room temperature.

2 tablespoons soy sauce
2 tablespoons brown sugar

2 lbs. raw shrimp, peeled
1 lb. bacon, half-cooked, with each slice cut in half
1 fresh pineapple, peeled, cored, and cut into one-inch pieces
2 cups ketchup
2 tbsp. coconut aminos
4 oz. pineapple juice
Small wood skewers

Steps:

  • Preheat your oven or grill to 425 F. In a bowl, mix ketchup, coconut aminos, and pineapple juice. Set aside. To assemble each skewer, place the shrimp with the curve towards you, and place a piece of pineapple in the curve. Then wrap a half-strip of bacon around the outside of the shrimp. Poke the skewer through the bacon, pineapple, and shrimp, and finally through the the opposite end of the bacon. Thread 2 to 3 shrimp onto each skewer. Brush each skewer with the pineapple-ketchup sauce, making sure they are well coated. Place the skewers in a roasting tin or on a grill, and cook for 10 to 12 minutes.

1/2 cup light brown sugar, firmly packed
1/2 cup white wine vinegar

36 extra-large shrimp, peeled and deveined, tails intact (about 2 pounds)
1/4 cup vegetable oil
12 (10 inch) wooden skewers (or metal)

Steps:

  • Combine 2 cups of the pineapple, the sugar, vinegar, soy sauce, and garlic in a blender and blend on high until smooth, about 30 seconds.
  • Pour into a medium saucepan and bring to a boil over medium heat.
  • Skim off any foam and reduce heat to low.
  • Simmer until glaze is thick and syrupy enough to coat the back of a spoon and has reduced to about 3/4 cup, about 30 minutes.
  • Stir in cayenne and set aside to cool slightly, at least 5 minutes. Meanwhile, heat a gas or charcoal grill to high (about 400°F) or a grill pan over high heat until very hot.
  • Skewer 1 shrimp, making sure to pass the skewer through the thick portion and the tail portion, then skewer 1 piece of the remaining pineapple. Repeat, alternating between the two and leaving a space in between, until you have 3 shrimp and 2 pineapple pieces per skewer. Brush skewers on one side with glaze.

8 tablespoons butter, melted
cayenne pepper

Steps:
