WHITE WINE SAUCE FOR PASTA
This is a sauce that is really good on seafood pasta, but it's great on just plain pasta as a side also. I use it on pasta with roasted shrimp with some grated parmesan and it's a favorite at my house!

- Cook the pasta in salted boiling water according to package (about 9 minutes). Reserve a little bit of the starchy pasta cooking water. Drain the pasta well.
- While the pasta is cooking, cook the shrimp. In a large pan heat 1 tablespoon extra virgin olive oil over medium-high heat until the oil is shimmering but not smoking. Cook the shrimp on each side for 2 to 3 minutes until it turns pink. Transfer the shrimp to a side plate for now.
- In the same pan add a little more extra virgin olive oil, if needed. Reduce the heat to medium-low. Add the onions, garlic, oregano and red pepper flakes (I used Aleppo-style pepper). Cook for 1 to 2 minutes, stirring constantly. Add the wine to the pan and scrape up any pieces of garlic and onions. Cook the wine for 1 minute to reduce then add the lemon juice and lemon zest.
- Add the chopped parsley and tomatoes, toss about for about 30 to 40 seconds. Season with Kosher salt.

- Cook the linguine in a large pot of salted boiling water according to the package directions. Before draining, reserve 1/4 cup of the starchy cooking water and set aside.
- In a large skillet or cast iron pan over medium-low heat, saute the pancetta until crisp and golden brown, about 5 minutes. Using a slotted spoon, remove the cooked pancetta and set it aside on a paper towel-lined plate. Reserve the rendered fat in the pan, increase the heat to medium, add 1 tablespoon of the olive oil, and swirl to coat the pan.
- Season the shrimp with 1 teaspoon of the salt, the black pepper, and 3/4 teaspoon red pepper flakes. Add them to the pan. Cook until they’re opaque and have a golden-brown crust, about 2 minutes per side, depending on their size. Remove the shrimp and set them aside.
- Add the remaining tablespoon of olive oil and swirl to coat the pan. Add the shallot and garlic and season with the remaining salt and red pepper flakes. Saute until the shallots are translucent, about 2 minutes.
