Spanish Garlic Shrimp (Gambas al Ajillo) image

Every Spanish restaurant serves this dish of shrimp cloaked in garlic-infused olive oil with smoky hints of paprika and a touch of sweetness from sherry. Make sure you have all your ingredients together before you head to the stove since, start to finish, this cooks in mere minutes. It's great for a tapas party, since you can prep everything ahead of time. Just spoon the shrimp and sauce over toasted bread and sprinkle more cayenne and parsley on top to enjoy.

4 cloves garlic
1 pound frozen large shrimp (21-25 count) - thawed, peeled, and deveined
kosher salt to taste
1 teaspoon hot smoked paprika
¼ cup extra-virgin olive oil
2 tablespoons dry sherry
1 tablespoon chopped Italian flat-leaf parsley

Steps:

  • Slice garlic thinly. Season shrimp with kosher salt and paprika. Mix to coat.
  • Heat garlic and oil in a skillet over medium heat. Cook until garlic starts to turn golden, about 2 minutes. Add shrimp and increase heat to high. Toss and turn shrimp with tongs until starting to curl but still undercooked, about 2 minutes. Pour in sherry. Cook, stirring continuously, until sauce comes up to a boil and shrimp is cooked through, about 1 minute more. Remove from heat. Stir in parsley with a spoon.

1 lb small shrimp, shelled and deveined
3 tablespoons extra virgin olive oil
8 -10 large garlic cloves, peeled and finely minced
2 dried red chili peppers, each broken into 3 pieces
1/2 teaspoon sweet paprika (if you can get pimenton, the smoky Spanish paprika, all the better)
3 tablespoons finely minced parsley

Steps:

  • About ½ hour before cooking, season shrimp well with salt.
  • Place shrimp on paper towels; let rest.
  • When ready to cook, add olive oil to a large sauté pan over med-high heat.
  • Add in garlic and dried chili pepper pieces; sauté 2 minutes and make sure the garlic doesn't brown.
  • Dry the shrimp well; add them to the hot oil and turn them quickly to coat with the oil.
  • Cook, tossing, until the shrimp are just done-no more than 2 minutes.
  • As the shrimp finish cooking, sprinkle with the paprika and parsley; stir to blend well.
  • Remove from heat; add salt to taste.
  • Divide among 4 appetizer plates and serve immediately with good bread for sopping up the oil.

This recipe from Gourmet Magazine is an example of what one can expect to be served at a Spanish tapas bar. They are very quick to prepare and can be made up to one day in advance, keeping in mind that they should be brought to room temperature before serving. I only use 1/2 teaspoon of red pepper flakes but you can use a whole teaspoon if you like your food spicy.

1/3 cup olive oil
4 garlic cloves, chopped
1/2 teaspoon red pepper flakes
1 lb shrimp, unshelled
2 teaspoons sweet paprika
1/4 cup medium-dry sherry
1/4 cup fresh parsley, minced
fresh lemon juice, to taste
salt
black pepper

Steps:

  • In a large, heavy skillet set over moderately high heat, heat the oil until it is hot.
  • Add the garlic and cook, stirring, until it is pale golden.
  • Add the red pepper flakes and the shrimp and cook the mixture, stirring, for 1 minute, or until the shrimp are pink and just firm to the touch.
  • Sprinkle the shrimp with paprika and cook the mixture, stirring, for 30 seconds.
  • Add the sherry, boil the mixture for 30 seconds, and sprinkle with parsley.
  • Season the mixture with lemon juice, salt and pepper to taste, and transfer it to a serving bowl.
  • Serve at room temperature.

  • Peel and thinly slice 8 cloves of garlic, pat down 15 raw jumbo shrimp (peeled & deveined) with paper towels, season the shrimp with sea salt & black pepper, reserve 4 small dried cayenne peppers and measure out 1/3 cup white wine
  • Heat a large fry pan with a medium heat and add in 1/3 cup extra virgin olive oil, after 2 minutes season the olive oil with sea salt and add in the sliced garlic & cayenne peppers, mix with the olive oil, after 2 minutes and the garlics are developing a light golden fried color, add the shrimp into the pan, making sure they´re all in a single layer
  • After 1 1/2 to 2 minutes flip the shrimp to cook the other side, then add in the 1/3 cup of white wine and raise the heat to a medium-high heat
  • After a total cooking time of about 4 minutes on the shrimp (2 minutes per side), they should be perfectly cooked, remove the pan from the heat, transfer everything into a serving dish and sprinkle with freshly chopped parsley, serve next to a crusty baguette to mop up all the sauce, enjoy!

  • Start by heating your pan or cast iron over medium-high heat and char the cut lemons, this will give it great smoky flavor.
  • Thinly slice a few garlic cloves and set aside. Pour a good amount of olive oil in your skillet and bring to a medium heat. Add garlic cloves to the oil and cook for 1-2 minutes, not allowing the garlic to turn brown, just let it soften. Stir in the paprika.
  • Then add your shrimp and season with salt and pepper and toss everything together. Cook until shrimp just turns pink on both sides, about 5-6 minutes total, depending how large your shrimp are.
  • Once done, turn off heat, squeeze lemon over everything and garnish with chopped herbs. And get your bread ready for the most amazing dunking experience.
