1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
1 1/2 teaspoons curry powder
1/3 cup flaked coconut
1/4 cup apricot preserves
24 shelled deveined cooked medium shrimp
24 sprigs fresh cilantro

Steps:

  • Heat oven to 375°F. Unroll dough into 1 long rectangle; gently press perforations to seal. Place curry powder in small strainer. Shake strainer to sprinkle dough with curry powder; sprinkle evenly with coconut.
  • Starting with one long side, roll up dough, jelly-roll fashion. With serrated knife, cut roll into 24 slices; place, cut side down, on ungreased cookie sheet.
  • Bake at 375°F. for 13 to 15 minutes or until golden brown. Immediately remove from cookie sheet; place on wire rack. Cool 10 minutes or until completely cooled.
  • To serve, top each appetizer with 1/2 teaspoon apricot preserves and 1 shrimp. Garnish each appetizer with cilantro sprig.

6 ounces reduced-fat cream cheese
2 tablespoons fat-free sour cream
2 tablespoons minced fresh parsley
2 teaspoons dried minced onion
1/2 teaspoon Worcestershire sauce
1/4 teaspoon seafood seasoning
1 cup finely chopped cooked peeled shrimp
1/2 cup shredded part-skim mozzarella cheese
2 packages (1.9 ounces each) frozen miniature phyllo tart shells

Steps:

  • In a small bowl, beat cream cheese and sour cream until blended. Add the parsley, onion, Worcestershire sauce and seafood seasoning; mix well. Stir in shrimp and mozzarella cheese., Spoon filling into tart shells. Place on an ungreased baking sheet. Bake at 350° for 8-12 minutes or until shells are lightly browned. Serve warm or cold.

seafood cocktail sauce, to top each crescent

Steps:

  • Preheat oven to 350*.
  • Seperate crescent roll dough into 8 triangles. Cut each triangle in half. Place 1 cooked shrimp in center of each small triangle; top with cocktail sauce. Fold into crescent shape; moisten sides with water; crimp sides in a decorative pattern.
  • Bake for 12 minutes or until golden brown and slightly puffed.

1 cup finely chopped cooked shrimp
1/3 cup grated parmesan cheese
1 tablespoon milk
2 (8 ounce) cans crescent rolls
1 egg, beaten
1 teaspoon water

Steps:

  • Combine shrimp, cream cheese, Parmesan cheese and milk and mix well.
  • Spoon 2 T of mixture onto the middle of separated crescent rolls dough.
  • Roll up as directed on package and place on baking sheet.
  • Brush rolls with mixture of egg and water and bake at 375 deegrees for 12 to 15 minutes or until golden brown.
  • Serve warm.

Garlic, fresh dill, and a touch of lemon combine beautifully to create a tasty light-bodied marinade for shrimp. They're the perfect little party bite.

2 T. butter
1 T. minced garlic
2 T. extra-virgin olive oil
2 T. minced shallots
2 T. fresh lemon juice
3 T. chopped fresh dill weed
dash cayenne pepper
salt and pepper, to taste
2 lbs. peeled & deveined cooked large shrimp

Steps:

  • Melt butter in a small saucepan over medium-low heat. Add garlic and saute until softened (but not browned), about 2 minutes. Remove from heat and transfer butter and garlic to a mixing bowl.
  • Add olive oil, shallots, lemon juice, dill, cayenne, salt, and pepper to butter/garlic mixture. Whisk until well combined.
  • Add cooked shrimp and toss to coat. Refrigerate for 2-3 hours before serving to allow flavors to meld.
  • Serve as-is or with cocktail sauce for dipping.
  • Purchase pre-cooked large shrimp, or cook your own.
  • To cook your own shrimp, bring a large pot of water to a rolling boil over high heat. Add peeled & deveined raw shrimp and cook for 3 minutes. Drain and immediately rinse with cold water to stop the cooking process.
