Creamy Cavatappi Pasta Recipe image

This creamy and cheesy Cavatappi Pasta is a grown-up version of mac and cheese. Also called corkscrew pasta, cavatappi is delicious on its own or served as a side at your next family dinner. I used a homemade cheese sauce to take this recipe over the top!

1/2 lb uncooked cavatappi pasta
2 teaspoons olive oil
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 ¼ cup milk (any kind)
3/4 cup heavy cream
1/4 teaspoon salt ((plus more for adding to the water and cook the pasta))
1/8 teaspoon black pepper
2 ½ cups shredded cheddar cheese ((divided))
optional chopped parsley for serving

Steps:

  • Preheat oven to 325 °F. Grease a square baking dish and set aside.

3 cups uncooked dried cavatappi or fusilli pasta
2 squares Lemon Pepper Saute Express® Saute Starter
1 pound uncooked medium shrimp, peeled, deveined
1 (6 ounce) package fresh baby spinach leaves
1 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Drain.
  • Melt Saute Express® squares in 12-inch nonstick skillet over medium-low heat just until bubbles begin to form.
  • Add shrimp.
  • Saute 5-7 minutes or until shrimp turn pink. Add spinach and heat until wilted. Toss in pasta and cheese until coated.

8 ounces heavy cream
2 cups feta
1/2 cup roasted red pepper strips
2 tablespoons extra-virgin olive oil
24 jumbo shrimp, peeled and deveined
10 cloves garlic, minced
2 shallots, minced
24 cherry tomatoes, halved
2 cups sliced fresh mushrooms
8 cups destemmed baby spinach
Salt and pepper

Steps:

  • Cook the pasta and set aside.
  • In a pot, combine the heavy cream, feta and roasted red peppers and heat until everything melts together.
  • Meanwhile, in a large skillet, heat the olive oil over medium-high heat. Add the shrimp, garlic, shallots, cherry tomatoes, mushrooms, spinach and salt and pepper to taste. Cook, stirring occasionally, until the shrimp turn pink and the spinach wilts. Reduce the heat to medium, add the cooked pasta and sauce and stir to combine.
