Baked Artichoke Pasta With Creamy Goat Cheese image

This cheese-filled pasta bake gets its sweet and crunchy topping from a layer of canned fried onions and Parmesan cheese sprinkled on top. Canned artichokes give it a savory depth, while a combination of goat cheese, cream cheese and mozzarella make it wonderfully gooey. Make sure to use plain - not marinated - artichokes, which will be too sharp and acidic here. You're looking for a mellow richness in this comforting casserole.

1 pound fusilli, farfalle or other short pasta
2 tablespoons extra-virgin olive oil, plus more for serving
1 large bunch scallions, thinly sliced, whites and greens separated
4 fat garlic cloves, thinly sliced
1/4 teaspoon red-pepper flakes, plus more for serving
8 ounces cream cheese (1 cup), cubed
6 ounces goat cheese, cubed
2 (14-ounce) cans artichoke hearts (not marinated), drained and cut into 1-inch pieces
2 cups canned fried onions
6 ounces shredded mozzarella cheese (1 1/2 cups)
1 cup chopped parsley
1 cup chopped fresh dill
1 teaspoon ground black pepper
1/2 cup grated Parmesan cheese

Steps:

  • Heat oven to 425 degrees and bring a large pot of heavily salted water to a boil. Cook fusilli according to package directions until 3 minutes shy of al dente. Reserve 3 cups pasta water, then drain.
  • Meanwhile, in a large oven-proof skillet, heat oil in a large skillet over medium heat. Cook scallion whites until softened, about 5 minutes, then add garlic and cook another 1 minute. Stir in red-pepper flakes, and cook another 30 seconds.
  • Whisk in 1 1/2 cups pasta water, cream cheese and goat cheese, and simmer, whisking, until smooth. Stir in artichokes, 1 cup fried onions, the mozzarella, the parsley, the dill and the reserved scallion greens, then stir in cooked pasta and black pepper. Add more pasta water if it seems too dry; you want this to be fairly liquid, because the pasta will soak up the sauce as it bakes. Taste and add some salt if needed.
  • Top pasta with remaining cup of fried onions and the Parmesan. Bake until filling is bubbly and onions are browned, about 10 to 20 minutes. Serve drizzled with olive oil, and with more red-pepper flakes on the side if you like.

1/2 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces

2 garlic cloves, minced
1 cup crumbled goat cheese

Steps:

  • Fill a 6-qt. stockpot three-fourths full with water; add 2 teaspoons salt and bring to a boil. Add asparagus; cook, uncovered, 1-2 minutes or just until crisp-tender. Remove asparagus and immediately drop into ice water. Drain and pat dry., In same pot of water, cook pasta according to package directions for al dente. Drain, reserving 1 cup pasta water. Return pasta to pot., Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat. Add artichoke hearts; cook and stir 3-4 minutes or until lightly browned. Add garlic; cook 1 minute longer. Add to pasta., Add asparagus, goat cheese, parsley, lemon peel, lemon juice and the remaining salt and oil; toss to combine, adding enough reserved pasta water to coat. Heat through. Serve with Parmesan cheese.

1 onion, chopped
1 clove crushed garlic
1 pound large shrimp - peeled and deveined

½ cup white wine

  • Cook pasta in boiling water.

1 lb linguine (reserve 1 cup cooking liquid)
3 Tbsp olive oil
4 Tbsp unsalted butter
3 large or 4 medium garlic cloves (pressed or minced (about 1 1/2 Tbsp))
1 lb large shrimp (21-25 count, peeled and deveined)
1 tsp sea salt for shrimp
1/4 tsp black pepper (freshly ground)
Two 15-oz cans artichoke hearts (not marinated, well drained and quartered)
1/4 cup fresh parsley (finely chopped)
1 tsp grated lemon zest
1/4 cup freshly squeezed lemon juice (from 2 small lemons)
1/2 cup freshly grated parmesan cheese to serve

Steps:

  • Prep: Grate lemon zest from the first lemon then squeeze juice from both lemons. Drain artichoke hearts, cut into quarters and pat dry with papertowels.
  • Cook linguine in a large pot of water with 1 Tbsp salt (8-10 minutes) or according to package instructions. Reserve 1 cup pasta cooking liquid then drain pasta (no need to rinse).
  • Meanwhile, In a large (12-14 inch) heavy-bottomed pan over medium heat, add 4 Tbsp butter and 3 Tbsp olive oil. Once butter is sizzling, add 4 pressed garlic cloves an stir 1 minute. Add shrimp in a single layer and sprinkle with 1 tsp salt and 1/4 tsp black pepper. Saute shrimp 1-2 minutes per side, just until pink and not translucent.
  • Add artichokes and toss to combine for another 2 minutes, or just until warmed through. Remove from heat and stir in 1/4 cup chopped parsley, 1 tsp lemon zest, and 1/4 cup lemon juice.
  • Pour shrimp and artichokes over drained pasta and toss to combine. If juicier pasta is desired, drizzle with reserved cooking liquid from pasta (I added 1/2 cup pasta liquid).

2 tablespoon butter (unsalted)
2 cloves garlic (minced)
6 ounce goat cheese (soft)
1 cup half and half cream
¼ cup fresh basil (sliced chiffonade*)
¼ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoon lemon juice (from 1 lemon)
lemon zest (from 1 lemon)
1 cup Parmesan cheese (grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • Cook pasta: Cook the pasta al dente according to package instructions. Reserve 1 cup of the pasta cooking water.
  • Make sauce: Heat the butter in a skillet over medium-high heat. Add the garlic and sauté for 30 seconds to 1 minute, just until the garlic becomes aromatic. Add the goat cheese, half and half and stir. Whisk until smooth.
  • Add pasta: Reduce the heat to medium. Add the cooked penne and 1/2 cup of the reserved pasta water to the skillet. Stir well to coat the pasta and let it bubble in the sauce for 1-2 minutes.
  • Finish: If you'd like a thinner sauce, add more of the pasta water as needed. Mix in the basil, then season with salt and pepper to taste. Add the lemon juice and zest and more pasta water if needed. Turn off the heat and stir in the Parmesan cheese.
  • Garnish and serve: Garnish with parsley and serve.

1 leek
4 to 5 teaspoons olive oil
1 teaspoon minced garlic
1 pound medium-large shrimp, peeled and deveined, tail-on

1 1/2 tablespoons unsalted butter
3/4 cup dry unoaked white wine
1 bay leaf
1 sprig thyme
1 1/2 cups chicken broth or vegetable broth
1/4 cup heavy cream
4 ounces fresh goat cheese, or to taste
8 ounces linguine
1/2 cup chopped pitted mild green olives
2 tablespoons rinsed capers or chopped caperberries
1 tablespoon chopped parsley
2 tablespoons julienned sun-dried tomatoes in oil

Steps:

  • Cut each artichoke heart in half, then cut each half into 1/4-inch slices. Set aside. Cut the white and light green part of the leek in half lengthwise, clean well and slice thinly cross-wise. Set aside. In a large skillet, heat 1 tablespoon of the oil over medium-high heat. Add the garlic and saute until it starts to become aromatic, but do not let it brown. Season the shrimp with salt and pepper then add to the pan. Cook until pink, opaque and moderately firm (just cooked through), about 45-60 seconds per side. Remove shrimp to a warm plate and loosely cover with foil. In the same skillet, add another 1-2 teaspoons of oil and the butter, then add the leek and saute over medium heat until soft and almost cooked through. Add the wine and continue to cook until the pan is almost dry. Add the bay leaf, thyme and broth and simmer until reduced by about half. Add the cream and stir in the cheese. Mix until smooth. Meanwhile, cook the pasta according to instructions. When draining the pasta, reserve about 1/2 cup of the salted pasta-cooking water. Set aside. Just before serving, fold the olives, capers and parsley into the warm sauce. Add the pasta to the sauce, stirring to coat. Season to taste with salt and pepper. If needed, use the reserved pasta water to loosen the pasta to the desired consistency. Divide the pasta into warmed shallow bowls or plates, then garnish with the sun-dried tomatoes, artichokes and shrimp. PER SERVING: 560 calories, 31 g protein, 57 g carbohydrate, 25 g fat (11 g saturated), 180 mg cholesterol, 1,004 mg sodium, 6 g fiber.
