SPICY SHRIMP AND SAUSAGE STEW
Andouille sausage and shrimp are simmered in a tomato-based broth with a kick of cayenne.

Steps:
- Heat the oil in a large Dutch oven over medium-high heat. Add the sausage and cook, stirring occasionally, until browned, about 5 minutes. Sprinkle the flour over the sausage and cook, stirring, until lightly toasted and the meat is well coated, about 2 minutes. Add the cayenne, garlic, bell peppers and onion and continue to cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the tomatoes with their juices, clam juice and 4 cups water, scraping up any browned bits from the bottom of the pot.
- Bring the stew to a simmer and continue to cook, adjusting the heat as needed to maintain a simmer, until the stew is thickened, about 30 minutes. Stir in the shrimp and cook until opaque, about 5 minutes. Remove from the heat and stir in the parsley. Season with salt.

SHRIMP AND TURKEY SAUSAGE STIR-FRY
It was originally a "random stir-fry" because I simply used what I had in my refrigerator. I also experimented with Worcestershire sauce this time. It's not a traditional ingredient that we would use for stir-fry. I did love the outcome. The combination of onions, bell peppers, turkey sausage and shrimps makes this dish look colorful and go very well with rice. Plus, it is healthy!

Steps:
- In a wok, heat grape seed oil over medium high.
- Stir-fry onion and ground black pepper until onion becomes transparent. Add turkey sausage and stir-fry for about 3 minutes.
- Stir in all bell peppers, Worcestershire sauce, shrimps and sea salt. Stir-fry until peppers turn soft and shrimps are cooked and turn red.
- Serve hot with rice.

- In a small bowl, combine salt and peppers; sprinkle over turkey. In a Dutch oven, brown turkey in 2 tablespoons oil; remove with a slotted spoon. Add remaining oil and flour, scraping pan bottom to loosen browned bits. Cook over medium-low heat for 25-30 minutes until dark brown in color, stirring occasionally. , Add the onion, celery, red pepper and garlic. Cook over medium heat until vegetables are crisp-tender, 4-5 minutes. Gradually stir in broth. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Return turkey to pan; cover and simmer for 30-45 minutes or until turkey is tender. Add okra and green onions; simmer 10 minutes. Add shrimp; simmer until shrimp turn pink, 4-5 minutes. Serve over rice.

I remember craving chicken cacciatore one day, but, had no chicken! So, what else could I do but improvise, right? Best decision ever!

Steps:
- Set pasta to cook in boiling water and then leave it alone!
- Spray at bottom of pot with non-stick cooking spray and added garlic cloves.
- When garlic starts to cook, add a bit of water.
- Add onion, peppers, and mushroom, then stir. Add some more water and then cover, leaving it on low heat.
- In a separate pan cook sausage with cooking spray. Once cooked, add to vegetables. Do the same with shrimp.
- Check on your pasta. Once done, drain 2/3 of the way and add pasta and water to main dish.
- Season with Adobo and Sazon to taste.
- Let simmer for about 5-10 minutes and serve hot.
