Categories     Breakfast/Brunch     Dinner     Lunch

Time 50m

Number Of Ingredients 17

½ pound tiger prawns or shrimps (, finely chopped)
1 teaspoon cornstarch
¼ teaspoon salt
¼ - ½ teaspoon oil ((Optional))
½ pound ground pork
2 tablespoons unsalted chicken stock
1 tablespoon cornstarch
1 tablespoon Shaoxing wine
2 teaspoons regular soy sauce (Chinese: 生抽酱油)
1 teaspoon fish sauce
1 teaspoon sesame oil
½ teaspoon ground white pepper
½ teaspoon sugar
¾ stalk green onions (, finely chopped)
2 slices ginger (, grated)
1 - 2 dried shiitake mushrooms (, re-hydrated and finely chopped (see tips))
20 - 24 round wonton wrappers

Steps:

  • Season Shrimps: Pat dry the shrimps with paper towels. Place the chopped shrimps in a medium mixing bowl. Add in 1 tsp cornstarch and ¼ tsp salt.
  • Season Ground Pork: Place the ground pork in a large mixing bowl. Pour in 1 tbsp cornstarch, ½ tsp ground white pepper, ½ tsp sugar, 1 tbsp Shaoxing wine, 2 tsp regular soy sauce, 1 tsp fish sauce, 1 tsp sesame oil, and 2 tbsp unsalted chicken stock.
  • Make Pastes: Squeeze and mix the seasoned ground pork with your hands, then throw it against the mixing bowl until it resembles a paste-like consistency. Wash your hands and do the same with the seasoned shrimps. Put the pastes into the fridge and prepare the remaining ingredients.
  • Prepare Ingredients: Finely chop ¾ stalk of green onions and 1 - 2 pieces of re-hydrated shiitake mushrooms. Use a microplane grater to grate the 2 ginger slices.
  • Mix Ingredients: Remove the pork and shrimp pastes from the fridge. Pour all the ingredients into the ground pork paste mixing bowl. Squeeze and mix the ingredients with your hands until blended. Remember to throw the paste against the mixing bowl!!
  • Wrap Shumai: Place a wonton wrapper on one hand. Scoop roughly ¾ - 1 tbsp mixed paste on the wonton wrapper with a butter knife or the dull end of a spoon. Then, wrap it into a cylinder shape with an open top (see video) Place a parchment liner into the bamboo steamer, then place the Shumai on the liner. Close the bamboo steamer lid.
  • Pressure Cook Shumai: Place a steamer rack and pour one cup of water into an electric pressure cooker. Place the bamboo steamer filled with Shumai into the pressure cooker. Close lid and pressure cook at High Pressure for 3 minutes. Wait for another 5 minutes and do a Quick Release. OR Cook Shumai on Stovetop: Steam the Shumai on high heat for 10 - 12 minutes on the stovetop.
  • Serve: Remove the bamboo steamer from the pot and enjoy them immediately.

Lemon Garlic Shrimp Recipe with Peas and Artichokes image

Easy lemon garlic shrimp with peas and artichokes. Perfect on top of orzo pasta or rice.

Provided by The Mediterranean Dish

Time 30m

Number Of Ingredients 17

1 1/2 tsp (between 2.5 and 3 g) ground coriander
1 1/2 tsp (between 2.5 and 3 g) ground cumin
1 tsp (about 2 g) Aleppo-style pepper
1 tsp (about 2 g) sweet Spanish paprika
1 lb (about 454 g) large shrimp or prawns, peeled, deviened, tail-on (if frozen, thaw properly before use)
Salt and pepper
Private Reserve Greek extra virgin olive oil
1 small onion, halved then sliced
6 to 8 garlic cloves, chopped
1 cup (236 ml) dry white wine
2 tbsp (30 ml) fresh lemon juice
2 tsp quality honey
1/2 cup (125 ml) chicken broth
1 1/2 cup (225 g) frozen peas, thawed
1 15-oz can (about 425 g) baby artichokes, drained
Grated Parmesan cheese, to taste
Fresh chopped parsley, for garnish

Steps:

  • In a small bowl, mix spices.
  • Place shrimp in a bowl. Season with salt and pepper and about 2 1/2 tsps of the spice mixture (keep rest of spice mixture for later.) Set shrimp aside for now.
  • In a large cast iron skillet like this one, heat 2 tbsp Private Reserve extra virgin olive oil over medium heat until shimmering but not smoking. Add onions. Cook 5 minutes, stirring occasionally. Add garlic. Cook 1 to 2 minutes more, stirring regularly, until fragrant and golden (do not brown garlic.)
  • Add white wine. Cook to reduce by half, then add lemon juice, honey and broth. Raise heat and bring the liquid to a boil.
  • Add peas and artichokes. Season with salt and pepper and the remainder of the spice mixture. Cook for 10 minutes or so until peas are cooked through.
  • Add shrimp and cook until just pink (this will be very quick, so watch for shrimp to turn color, toss as needed.)
  • Remove from heat. Sprinkle grated Parmesan cheese to your liking and garnish with fresh parsley.
  • Serve hot with a side of simple orzo or this Lebanese rice.

SHAO MAI (PORK DUMPLINGS)

Shao Mai (Pork Dumplings) image

Provided by Food Network

Categories     appetizer

Time 1h30m

Yield 30 dumplings

Number Of Ingredients 16

1 pound ground pork
1 cup finely chopped water chestnuts
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 tablespoon sesame oil
2 teaspoons sugar
2 teaspoons freshly grated ginger
2 tablespoons cornstarch
1 teaspoon coarse salt
1/2 teaspoon finely ground black pepper
30 shao mai or dumpling wrappers
1/2 cup soy sauce
2 tablespoons black vinegar, or Chinkiang vinegar
1 teaspoon chile paste
1/2 teaspoon sugar
1 tablespoon minced garlic

Steps:

  • Combine the pork, water chestnuts, soy sauce, vinegar, oil, sugar, ginger, cornstarch, salt and pepper in a bowl and mix well to combine (hands work well for this). Place a dumpling wrapper in the palm of one hand and cup it loosely. Place a generous tablespoon of filling in the center of the wrapper. With your free hand, gather the sides of the wrapper around the filling, letting the wrapper pleat naturally. Squeeze the middle gently and tap the dumpling to flatten the bottom so that it can stand upright. The meat filling will show a little at the top. Make the remaining dumplings in the same manner.
  • Arrange filled dumplings about 1/4 inch apart in two steamer trays that have been lined with wet cheesecloth. (At this point, you can refrigerate dumplings, covered, for 24 hours.)
  • When ready to steam, fill a wok or lower part of a steamer with water so that it comes within an inch of the steamer tray, and bring to a rolling boil. Stack the steamer trays in the wok or steamer, cover tightly, and steam dumplings for 20-25 minutes over high heat, reversing the trays after 10 minutes. Use a slotted spoon to transfer dumplings to a platter and serve with Spicy Dipping Sauce.
  • Combine ingredients in a small bowl and serve with Pork Dumplings.

Keep stirring for several minutes until the pork starts to turn into a paste-like consistency. This step helps to tenderize the ground pork. You should hear squishing sounds as you stir the meat. Add the peanut oil and sesame oil to the bowl and stir to incorporate. Set the bowl aside.

  • Egg Noodles: the authentic Chinese recipe calls for Chinese egg noodles or long noodles (as they are popularly called), but, you can use any long noodles (boxed or even spaghetti goes well too).
  • Fresh Shrimp: I’d recommend using fresh (cleaned, head-off and deveined) shrimp, but you can even use frozen uncooked shrimps or even cooked frozen shrimps too.
  • Dark Soy Sauce: This is my favorite kind of soy sauce to use as it’s richer in flavor and gives a nice dark coating to the recipes. It’s slightly sweet and much thicker than the regular/light soy sauce that’s available.
  • Oyster Sauce: Used for instant flavoring in Chinese / Asian dishes and gives you that nice glaze on recipes. You can use ‘Mirin / Light Soy Sauce with sugar’ or simply skip this ingredient.
  • Sesame Oil: This is used in most Chinese cooking and especially ‘Stir-Fry’s recipes’ as the oil has a high smoking point. Hence it heats up quick and doesn’t burn easily.
  • Chinese Wok: It’s best used in stir-fry dishes, chow mein/lo mein especially as it’s thin metal utensil that quickly heats up and evenly distributes the heat.
  • Bonus Tip: Vegetables: Have you ever noticed that most of the Chinese/Asian recipes veggies are cut in a similar style? They are either all thickly cut or thinly cut but you’d never find a recipe where you see a mix of both …hm, right!
