8 ounces (1 1/4 cups) uncooked orzo pasta
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
1 1/2 teaspoon finely chopped fresh garlic
1 (6-ounce) package (6 cups) fresh spinach, stems removed
3/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups shredded Parmesan cheese
1 cup cherry tomatoes, cut in half
1 teaspoon freshly grated lemon zest

Steps:

  • Cook pasta according to package directions; drain. Return to pan; keep warm.
  • Melt 2 tablespoons Butter with Olive Oil & Sea Salt in 10-inch skillet until sizzling. Add garlic; cook, stirring occasionally, 2 minutes. Add spinach, salt and pepper; continue cooking, stirring occasionally, 2-3 minutes or until spinach is wilted. Remove from heat.
  • Add remaining 2 tablespoons Butter with Olive Oil & Sea Salt and 1 cup Parmesan to cooked pasta in pan; stir until combined. Add cooked spinach, tomatoes and lemon zest; mix well. Spoon mixture into serving dish; top with remaining 1/4 cup Parmesan. Serve immediately.

Garlic-Tomato Shrimp Recipe with Orzo image

How about an easy garlic-tomato shrimp recipe?! Just my kind of "unfussy" Mediterranean dinner!

1 1/2 cup orzo pasta
Water
Salt
Private Reserve Greek extra virgin olive oil
1 tbsp butter
2 shallots, thinly sliced
8 garlic cloves, chopped
1/2 cup dry white wine
1 Meyer lemon, juice of
1 14-oz canned diced tomatoes
1 tsp dried thyme
Cayenne pepper
1 1/2 lb prawns or large shrimp (18-20 shrimp), peeled, deveined and well-cleaned
4-6 oz baby spinach
lemon slices (optional)

Steps:

  • Cook the orzo pasta in boiling water according to package instructions; add a dash of salt and olive oil to the cooking water. When the pasta cooks to al dante, remove from the heat then drain and transfer to a serving dish.
  • While the pasta cooks, heat the butter with 2 tbsp of olive oil in a large heavy skillet. Saute the shallots on medium-high heat for 3 minutes or so then add the garlic and toss together briefly. Now add the white wine and cook for 1 minute then add the lemon juice, 1/2 cup water, and diced tomatoes. Bring to a boil then reduce the heat to medium. Cook for 15 more minutes on medium heat, stirring occasionally.
  • Stir in 1 tsp of dried thyme, a pinch of salt and a little cayenne pepper to your taste.
  • Add the shrimp and cook for 5 minutes or until the shrimp turns pink. Stir occasionally so that the shrimp is nicely coated in the sauce. Do not over cook the shrimp.
  • Finally, stir in the spinach and remove from the heat.
  • Top the the cooked orzo pasta with the garlic tomato shrimp. Garnish with your favorite herb (optional) and serve immediately with lemon slices. Enjoy!

2 tbsp extra-virgin olive oil (divided)
6 cloves garlic (minced)
3/4 cup chopped onion
3 cups halved grape tomatoes
1 tsp Italian seasoning
freshly ground salt and pepper
3/4 pound uncooked orzo pasta
3 cups chicken broth
1/4 cup white wine
1/2 cup freshly grated Parmesan
1 pound jumbo shrimp or prawns (peeled and deveined)
1 cup fresh basil leaves (torn)
red pepper flakes (optional)

Steps:

  • Place oven rack in top position and preheat to 400°F.
  • In a large oven-proof skillet, heat 5 teaspoons of the olive oil over medium heat. Add garlic and onion, and cook until fragrant and soft, 3-5 minutes.
  • Add wine and scrape up any brown bits from the pan. Increase heat to high and add tomatoes, Italian seasoning and salt and pepper to taste. Cook, stirring occasionally until softened, about 6 minutes.
  • Add orzo and chicken broth and bring to a simmer. Cover, transfer to oven, and bake until liquid is mostly absorbed, 10 to 12 minutes. Remove from oven and stir in Parmesan.
  • Toss shrimp with remaining 1 teaspoon of olive oil and season with salt and pepper. Place shrimp on top of orzo.
  • Heat broiler to high. Place skillet back in the oven and broil until shrimp are opaque throughout (about 4 minutes for jumbo size). Sprinkle with fresh basil and red pepper flakes and serve.

8 ounces dry orzo pasta, substitute with any pasta variety
3 tablespoons olive oil
1 tablespoon minced garlic (3 to 4 cloves)
1/4 to 1/2 teaspoon crushed red pepper flakes, depending on how spicy you like the pasta
12 ounces tomatoes, chopped (2 medium or 12 to 15 cherry tomatoes)
1/2 cup shredded parmesan cheese, plus more for serving
1 cup basil leaves, torn into pieces
Salt and fresh ground black pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil, add the orzo and cook according to the package directions - usually 8 to 10 minutes. Before draining the cooked orzo, reserve 1/3 cup of the pasta water (we use this to make the sauce).
  • Add olive oil, garlic, and red pepper flakes to a large, deep skillet. Turn to medium heat. When the oil bubbles around the garlic, add the cooked orzo pasta, tomatoes, basil, and parmesan cheese.
  • Pour in two tablespoons of the reserved pasta water and cook, stirring often, for one minute. Over the minute, the sauce should begin to coat the pasta. If it seems dry, add a splash more of the reserved pasta water and cook a few more seconds. Taste for seasoning and adjust with a bit of salt if needed.
  • Serve with extra basil, parmesan, and fresh ground black pepper on top.

  • In a large Dutch oven or heavy skillet with a tight-fitting lid, heat the remaining 2 tablespoons oil over medium. Add the marinated shrimp on top, cover and cook until they are cooked through and the orzo is al dente, 4 to 6 minutes more.
  • Remove from the heat, divide among plates and finish with black pepper, feta and parsley. Serve with more red-pepper flakes, if desired.
