Bobby Flay takes Southern-style Shrimp and Grits to the next level by adding sharp cheddar, bacon and lime juice in this easy recipe from Food Network.

- Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter and cheese.
- Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In grease, add shrimp. Cook until shrimp turn pink. Add lemon juice, chopped bacon, parsley, scallions and garlic. Saute for 3 minutes.
- Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.

- For grits: Begin preparing grits according to package instructions (sometimes I split liquid called for w/half water/half milk). Whisk in salt, pepper, garlic powder, and parsley. Whisk occasionally; as grits begin to thicken, stir in butter to incorporate. Let sit for another minute. Whisk/stir in shredded cheese and beer until smooth.
- Adjust seasonings, butter and cheese to taste. Keep covered and warm until ready for shrimp.
- For shrimp: Preheat the oven broiler.
- Stovetop, warm a 12-inch oven safe skillet over medium heat, add olive oil. When oil begins to ripple/shimmer, whisk in paprika, cumin, garlic powder, salt and pepper. Whisk together and let simmer for about one minute.
- Add the shrimp, shake the skillet to distribute shrimp evenly in 1 layer over bottom of skillet. Wait 30 seconds, turn shrimp over once. Place skillet in oven under preheated broiler for 2 minutes. Carefully remove skillet from oven. Spoon shrimp and olive oil mixture over prepared grits.

- Bring water and chicken broth to boil in a medium pot and season with some salt. Add grits and lower heat to medium/medium-low heat. Cover and let it simmer for about 20 minutes. Stirring occasionally.
- Once grits is cooked, take it off the heat. Stir in butter and cheeses until melted.
- Peel and devein shrimp if needed.
- Prepare ingredients by dicing bacon into small pieces, slicing shallots, green onion, and sun-dried tomatoes, and peeling garlic.
- In a medium cooking pan, over medium heat, cook diced bacon until brown and crispy. Take out bacon bits only and set them aside.
- Add shallots and sun-dried tomatoes to the pan with bacon grease. Saute until golden.
- Smash and mince garlic and add it to the pan. Saute until fragrant.
- Add chicken broth and lemon juice to the pan. Stir and bring to simmer.
- Add shrimp and cook until shrimp turn pink and opaque on one side. Flip shrimp to the other side and let it cook until that side turns pink and opaque.
- Take the pan off heat.
- Divide prepared grits among large bowls or deep plates.
- Divide bacon bits, shrimp with broth, and some green onions among the plates, over the grits.

Steps:
- Bring water, grits, and salt to a boil in a heavy saucepan with a lid. Stir in half-and-half and simmer until grits are thickened and tender, 15 to 20 minutes. Set aside and keep warm.
- Sprinkle shrimp with salt and cayenne pepper. Set aside in a bowl.
- Place andouille sausage slices in a large skillet over medium heat. Fry sausage until browned, 5 to 8 minutes. Remove skillet from heat.
- Cook bacon or Tasso in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Retain drippings in skillet. Transfer slices to paper towels.
- Cook and stir red, and yellow bell peppers, onion, and garlic in the bacon drippings until the onion is translucent, about 8 minutes. Remove to a plate.
- In the same skillet deglaze with white wine and cook shrimp 2-3 minutes. until the shrimp becomes pink. Remove to another plate.
- Melt butter in the same skillet over medium heat; to make a roux stirring for five minutes to incorporate.. Turn heat to low and cook, stirring constantly, until the mixture is light brown in color. Watch carefully, mixture burns easily.
- Pour in chicken broth, Louisiana Hot Sauce, Worcestershire Sauce, cooking and stirring until the sauce thickens, a couple minutes. If you feel like it's too thick you can add a little cream or milk.
- Just before serving, mix sharp Cheddar cheese into grits until melted and grits are creamy and light yellow. Plate grits on the bottom, andouille sausage and veggies over that with gravy and shrimp topping it all off and garnish with green onions.

- Directions 1. Fry bacon in large skillet until browned at edges but not too crisp. Drain on paper towels and set aside. Leave fat in skillet. 2. Return skillet to medium-high heat. When it is hot, add shrimp and cook until they begin to color. Add mushrooms and cook until they begin to soften, about 4 minutes. Sprinkle with green onions, bacon and garlic. Season with lemon juice, red pepper sauce, parsley, salt and pepper. 3. Stir cayenne pepper to taste into the grits. Preparation time 25 minutes Cooking time 20 minutes Yield 4 servings
