LINGUINE WITH SHRIMP & CHORIZO



Linguine with Shrimp & Chorizo image

Number Of Ingredients 10

Kosher salt
2 Tbs. extra-virgin olive oil; more as needed
6 oz. chorizo, sliced 1/8 inch thick (1-1/3 cups)
1 lb. large shrimp (31 to 40 count), peeled and deveined
1 small onion, finely diced
4 medium cloves garlic, thinly sliced
1 26-oz. box Pomi brand chopped tomatoes (or 2 14-oz. cans petite-cut diced tomatoes)
1/4 to 1/2 tsp. crushed red pepper flakes
1 lb. dried thin linguine
1/4 cup roughly chopped fresh flat-leaf parsley

Steps:

  • Bring a pot of generously salted water to a boil. Heat the olive oil in a 12-inch skillet over medium-high heat. Cook the chorizo, stirring occasionally, until browned, 2 to 3 minutes. Add the shrimp and cook, stirring occasionally, until it curls up and just begins to turn pink, about 2 minutes; don't cook it through. Off the heat, use a slotted spoon to transfer the chorizo and shrimp to a bowl.
  • Pour off all but 2 Tbs. of the fat from the skillet (or add more oil so you have 2 Tbs. fat in the pan) and set the skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes. Stir in the tomatoes with their juices and the pepper flakes, scraping the bottom of the pan, and simmer briskly for 5 minutes to blend the flavors.
  • Meanwhile, cook the linguine in the boiling water until barely al dente, 4 to 6 minutes. Reserve 1/2 cup of the pasta water and drain the pasta in a colander.
  • Add the shrimp and chorizo to the sauce and simmer until the shrimp is just cooked through, another 1 to 2 minutes. Season the sauce to taste with salt. Toss the pasta, sauce, and parsley in the pasta pot over medium-low heat for 2 minutes. The sauce should just coat the pasta; add some of the pasta water to moisten if necessary. Drizzle each serving with a little oil.

1 pound chorizo, sliced on the diagonal into 1/2-inch slices
1 1/2 cups thinly sliced onion
1 tablespoon minced garlic
1/2 cup dry (fino) sherry
1 tablespoon Spanish paprika
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 1/2 pounds peeled and deveined raw medium shrimp
3 tablespoons lemon juice
2 tablespoons minced parsley leaves
Crusty bread, for serving

Steps:

  • In a large skillet or cazuela, heat 1 tablespoon of the olive oil and saute the sliced chorizo until it begins to brown around the edges, 7 to 8 minutes. Add the onion and cook, stirring occasionally, until they are caramelized around the edges and softened somewhat, 4 to 6 minutes. Add the garlic and cook, stirring, for 1 minute. Add 1/4 cup of the sherry and cook for 1 minute. Add the shrimp, paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper, and cook, stirring occasionally, until pink and cooked through, about 4 to 5 minutes. Add the remaining 1/4 cup of sherry and 1/4 cup olive oil, lemon juice, parsley and remainder of the salt and pepper; stir to combine and remove from the heat. Serve immediately, on small plates with any accumulated cooking juices spooned over the top. Pass the bread at the table.

16 jumbo shrimp or prawns
deveined and butterflied with tail left intact
Olive oil
for liberal drizzling
Salt and pepper
1 tablespoon thyme
finely chopped
Zest of 1 lemon
16 1-inch thick slices cut on a bias Spanish chorizo
preferred brand Gaspar's
1 tablespoon butter
1 large clove garlic
crushed
1/2 cup dry sherry or white wine
Juice of 1 lemon
Scallions
thinly sliced on a bias
Long toothpicks

Steps:

  • Toss shrimp with a little olive oil and dress with salt, pepper, thyme and lemon zest
  • Skewer the shrimp near the tail end then thread a slice of chorizo with cut sides facing out, nesting the chorizo in the natural curve of the shrimp
  • Heat a little oil in a large skillet over medium-high heat and melt butter into it
  • Add garlic and swirl for a minute or 2 then remove
  • Add the shrimp and chorizo bites and cook until the chorizo is crisp and the shrimp are pink and opaque
  • Douse pan with sherry and lemon juice, and sprinkle with green onions to serve

1 1/2 cups extra-virgin olive oil
1 pound spicy Mexican chorizo, casing removed
1/4 cup finely chopped sweet or Vidalia onion
1 teaspoon adobo seasoning
1 teaspoon Hungarian paprika
Freshly ground black pepper
1 head garlic, peeled and finely chopped
Salt
1 1/2 pounds peeled deveined shrimp (16/20 count)
Crusty, chewy bread, for sopping

Steps:

  • In a medium straight-sided pan, heat 2 tablespoons of oil over medium-high heat and saute the chorizo and onions, breaking the chorizo up with a wooden spoon while cooking until it resembles ground beef. Add the adobo, paprika and a few grinds of black pepper. Cook until the fat is rendered and the onions are tender and cooked into the chorizo, 8 to 10 minutes.
  • Add the remaining oil and the garlic and lower the heat to medium-low. Let the flavors infuse over the low heat for 5 to 7 minutes. Add the shrimp to the garlic oil, raise the heat slightly, and stir and turn to cook the shrimp evenly, 6 to 8 minutes. Serve as an appetizer on toothpicks with crusty, chewy bread.

  • Pat shrimp dry and season with salt, pepper and the remaining spices. Toss to make sure shrimp is well coated with the spice mixture. Set aside for now.
  • Heat a large cast iron skillet over medium-high. Add Chorizo and brown on both sides (about 4 minutes or so as Chorizo is already cooked.) Remove Chorizo to a side plate for now.
  • In the same skillet, add a little extra virgin olive oil if needed (there should be a bit of Chorizo fat in skillet already thought). Add summer squash to the heated skillet. Sprinkle with a little salt and pepper and sear undisturbed for about 3 to 4 minutes on one side. Turn over and sear another 2 minutes on the other side until nicely colored. Transfer squash to the plate of Chorizo for now.
  • In the same skillet, now add a little extra virgin olive oil and tilt skillet to make sure the bottom is well coated. Be sure oil is well-heated until shimmering but not smoking. Now, add the shrimp (shrimp should sizzle upon contact.) Cook, stirring frequently, until shrimp flesh starts to turn a little pink, but still not quite fully cooked (about 3 minutes or so depending on size of shrimp.) Return the Chorizo and squash to the skillet. Toss to combine. Cook another 3 minutes or until shrimp turns fully pink and tails turn a bright red.
