SHRIMP LINGUINE
Quick and easy to make, this is a hit for a dinner party or just a quick family dinner. Already cooked salad shrimp works great! I also occasionally substitute chicken for the shrimp for another great flavored dish!

Steps:
- Cook pasta until al dente according to package directions.
- While linguine is cooking, melt butter or margarine in a large skillet. Add garlic, and saute briefly to release flavor. Add cream; heat just to boiling, stirring frequently. Lower heat, and stir in shrimp, parsley, basil, and thyme. Continue cooking until shrimp are just heated through. Do not overcook shrimp! Remove sauce from heat.
- Drain the pasta, and toss lightly with the sauce. Toss again with cheese, and salt and pepper to taste. Serve immediately.

GARLIC SHRIMP LINGUINE

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a medium saucepan, melt butter over medium low heat; add wine, cheese, garlic, parsley and salt and pepper to taste. Simmer over low heat for 3 to 5 minutes, stirring frequently.
- Increase heat to medium high and add shrimp to saucepan; cook for about 3 to 4 minutes or until shrimp begins to turn pink. Do not overcook.
- Divide pasta into portions and spoon sauce on top; garnish with Parmesan cheese and fresh parsley, if desired.

SHRIMP AND BRIE LINGUINE
I found this recipe on another cooking blog and I had both shrimp and Brie to use up so I thought I would splurge a little. It is so delicious, something I would definitely serve to company or as a special occasion meal for two.

Steps:
- Cube the Brie and combine with the next 7 ingredients in a bowl.
- Cover and let stand 1 hour.
- Cook the pasta in boiling salted water according to package directions.
- Two minutes before the pasta is done, add the shrimp.
- Cook 2 minutes or until the shrimp are done.
- Drain the pasta and shrimp, and immediately toss with the Brie mixture.
- Serve immediately with fresh Parmesan.

- Spray a baking dish [mine was 8×8] with non-stick spray and add in shrimp, then scatter tomatoes, butter chunks, garlic and some parsley and basil (reserving some for garnish). Pour in a 1/3 cup of dry white wine. Heat the broiler on your oven (mine does not require pre-heating, if yours does, do the step first) and place shrimp directly underneath. Broil for 4-5 minutes, or until shrimp appears to be pink in color and tomatoes are popping. Remove dish from oven and sprinkle brie cheese chunks over top. Place back in the oven and broil for an additional 1-2 minutes, or until cheese is bubbly and slightly golden. Remove from oven and let cool, then sprinkle additional basil and fresh parsley on top.
